While famous for its namesake and black diamond ski runs, Lake Louise Resort has plenty to keep visitors happy even when the snow has melted. The main lodge – a log cabin built entirely from local trees - greets visitors who come for the 14-minute gondola ride up Whitehorn Mountain. Riders have a choice between an enclosed gondola and an open chair lift. A good way to experience both is to ride the gondola on the way up and the chair lift on the way down, since the views as you face the valley are more panoramic. Keep an eye out on your ride for one of the resident grizzly bears. At the top of the lift, there are a number of well marked hiking trails, as well as the Lake Louise Interpretative Nature Center. Center staff lead a 45-minute interpretative walk which is a great way to get acquainted with the environment and learn about the area’s bears before setting off on your own. Also at the summit, the Whitehorn Lodge offers visitors a surprisingly delicious experience with five-star views. Both the building and the menu have been recently revamped and the results are well worth the price of the gondola ride. The seafood chowder, a meal in itself, is a highlight as is the beef tenderloin burger: a mound of beef tenderloin cooked to order and served open-faced on a giant piece of focaccia with a pile of yam fries. Savage Wilderness, a company in the Sagana region, offers exhilarating and well-guided white-water excursions (as well as rock climbing, archery, and more) and is an easy day trip from Nairobi. At some points of the year, the rivers around Sagana can be too low to raft on, but a range of other activities, from swimming to attempting to kayak through a 50-foot waterfall, are available.

The White Elephant also provides regular transfers on the 21-passenger boat, Lady Wauwinet, to the Wauwinet Inn’s restaurant TOPPER’S, which cultivates its own oysters.

Our guide warned us about the freezing water before we left the warm surround of our tour bus. That was of course after he had also told us that the ‘Fountain of Youth’ so sought after my humanity since time immemorial, was just outside our window in the form of the River Sligachan on the Isle of Skye, in Scotland. Scandinavian blood may run in my bones but freezing cold water is not my “cup of tea”, so I merely exited to take photographs whilst others in my group did in fact dip their hands and faces in the rushing river. How did Sligachan come to be known as the ‘Fountain of Youth’? The story goes that a poor Highland maiden was horribly disfigured by a clan rival to her own but then was saved by a faerie queen. The queen immersed the girl in the Sligachan River and when she emerged, she was beautiful and scarless once more. Whether you believe the stories or not, and the Scottish have many, the area around the river is stunning in its wildness and subtle colour. It’s an incredible place to stop and take photographs but do leave yourself at least 35 - 45 minutes. Hike up and down the river, away from the bridge that is so well known [and where visitors are normally dropped off], and make sure to get a few landscape photographs that don’t have hordes of tourists in them!

Fakarava’s lagoon is majestic, with translucent blue waters filled with vibrant coral and tropical fish. In fact, Fakara is touted as the “mecca of diving” thanks to its waters rich with flora and big fauna. Enjoy a walk along its perimeter white-sand beach littered with lush vegetation and billowing palm trees.

In Oporto, Portugal, you can take a river cruz if you want. There are several choices from 50 minute boat tours to several hours or even several days. I chose to go on the 50 minute “Six Bridges” river cruise. I started at the Cais da Ribeira where you purchase your ticket and board the boat. We passed under the six bridges of Oporto on a relaxing tour and took in the glorious view of the World Heritage site of Oporto up on the hills. The wine cellars of Vila Nova de Gaia were spread out on the opposite side of the river. The views were magnificent of many old historic buildings and old cathedrals and churches. At the mouth of the Douro, we viewed the waters beyond known as the “land of the fishermen”. The Douro River is a beautiful river that sparkles under the azure sky as the sun shines down on its pristine waters. I was rewarded with a serene and happy feeling as I disembarked from my short cruise. I definitely recommend cruising the Douro while in Oporto. The difficult part is choosing which boat cruise to enjoy. Of course, it depends on how long you are staying in Oporto. Plan ahead, of course, and work this adventure into your trip. Tucked on the corner of Hopkins Avenue and Monarch Street, White House Tavern occupies one of Aspen’s oldest buildings, a small Carpenter Gothic–style white house that was built in 1883. The offerings here don’t change from when the restaurant opens for lunch at 11 a.m. to when the sky darkens and the cocktails start flowing into the night. The menu is made up mostly of hearty salads (Thai steak and noodle, kale with rotisserie chicken) and tasty sandwiches, including an incredibly crispy chicken sandwich and a flavorful, perfectly cooked prime rib au jus piled high on a homemade roll. The cocktail list is short and tends toward the classics—negroni, margarita, martini—but the wine list is surprisingly ambitious.
