Even when traveling with a Bogota native, it was hard to find Mini-mal, a Colombian fusion restaurant tucked away in a nondescript Chapinero apartment building. While this makes entering feel exclusive and hip, the ambiance is quite the opposite. The vibe is cozy and casual, so much so that you may even be dining in a room that has been converted into a small craft shop. The colorful menu focuses on the flavorful cuisine from the oft-overlooked (and exploited) Pacific region, central to which is fish, especially tiger shrimp, and coconut milk. There seems to be a bubbling consciousness for this region which I hope takes off for the benefit of its people, as well as for our tastebuds. Make sure to order juice from a fruit whose name you don’t recognize (there are many) as well as one of their delicious desserts.
