    Myrtle Allen is Ireland’s answer to Alice Waters: The centenarian chef has lobbied the Irish parliament for better food policies, earned some Michelin stars, and, 50 years ago, opened a restaurant called the Yeats Room in the town of Shanagarry, an hour east of Cork City. She eventually added bedrooms upstairs and called it Ballymaloe House, and her sous-chef-turned-daughter-in-law, Darina Allen—who has written canonical Irish cookbooks and helped lead Ireland’s Slow Food movement—tacked on the Ballymaloe Cookery School and farm two miles from the main house.

    This is thus the seat of Ireland’s food royalty, and it shows. The restaurant spins flavorful dinners out of whatever comes in from the farm or East Cork’s fishing boats, and the cookery school has become known the world over for teaching expert and novice chefs to make pizzas, ferment pickles, cook baby food, and grow fruits, vegetables, and herbs. Even without all that, the ivy-fronted house—and cabins and cottages on the farm’s grounds—make for a simple, pleasant country retreat.

    Uluru, or Ayer’s Rock as many know it, is one of the most recognized landmarks anywhere in the world. This strange giant rock in the middle of the Australian Outback has long kindled imaginations, going back millennia. It may be an important tourist site today, but it also holds immense cultural value for the original inhabitants of the area, something I learned all about on the very unique Anangu Tour of Uluru.
    In the Pitjantjatjara language, anangu means person or human being, and the tours are designed to teach newcomers about the native peoples. The tours are given in the Pitjantjatjara language, with interpreters translating for the guides. It’s not that the guide didn’t know English, he certainly did, it’s that they want visitors to hear the nuances of a language most of us have never before encountered.
    The walk around the rock was an enlightening experience, learning all about traditional culture and the extreme importance Uluru holds in the Tjukurpa or Dream Time. Tjukurpa is Aboriginal law, culture, history, and their worldview all bundled into one. It is expansive, impossibly ancient and much of it is shrouded in mystery, transmitted only to certain people at particular times in their lives. To be a part of that was a humbling experience.

    A short drive north of the South Island town of Oamaru, Riverstone Kitchen is often lauded as one of New Zealand’s best regional restaurants. The stylish dining room is anchored by a robust fireplace crafted from local river stones, and much of the seasonal menu is crafted from the restaurant’s own organic orchards and gardens. A more relaxed café ambience for daily breakfast and lunches segues to a more formal mood at dinner from Thursdays to Saturdays, and the savvy drink list includes wines from the nearby Waitaki Valley as well as small-batch beers from around New Zealand. Ask if any of the excellent Belgian-style farmhouse ales from Oamaru’s Craftwork Brewery are available.

    We were lost. My driver had picked me up from Hotel Alvear in Buenos Aires two hours ago, maybe more. It was hot in the car; the A/C had only two settings “off or ice blast.” I opted for a rolled-down window. We were on a jutted, dusty road that went on for several miles with no signage. He pulled the car over and made a call to Buenos Aires for clarification. After a rudimentary exchange with me in Spanish we continued slowly. Teens in a car behind us, not happy with our progress, tooted and gave us the universal sign of displeasure as they passed. My driver found the estancia La Bamba de Areco gates and after announcing ourselves at the intercom, were told to wait. In a few minutes, what a sight coming at us through the allée of plane trees; a gaucho galloping full speed on a beautiful mount. Still astride, she dispatched the gate and motioned for us to follow by car as she loped ahead. It was to be an amazing day. I was told that the owners, a French couple (a Parisian designer and an owner of an English Polo Team) purchased the crumbling estate five years ago carefully restoring and re-imagining the estancia. A series of superbly decorated rooms and suites offers entre to this privileged Argentine lifestyle to visitors. Love for polo or riding is optimal, not required. But a love for peaceful luxury, inspiring location, attentive staff, appreciation of the opportunity to be a part of a disappearing culture, and love of fabulous wines and food is a must here.

    After Vltava River floods brought great devastation to this gritty neighborhood and old port, a great change and rebirth began, and new businesses, stores and restaurants began moving in to old factory spaces and art nouveau buildings near the main square and church. Now Karlin is a foodie hotspot and a gentrifying neighborhood. Located across the river from Holešovice, to the east of the historic Old Town, Karlin is home to Veltlin wine bar, which focuses on natural wines from the former Austro-Hungarian Empire; Tea Mountain, a gorgeous tea room; Můj Šálek Coffee; and Eska, a restaurant-bakery serving neo-Nordic-inspired Czech cuisine in a modern industrial setting.

If you go with a guide -- I recommend Marama Tours -- you’ll be able to learn about the history of the area as well as learn to forage like they did in the past. The above photo is of a local fruit called noni, whose juice gets rid of mosquito bite itch. A few other natural remedies the group learned include lime can be a deodorant, coconut juice aids digestion and taro is good for strong bones and teeth.

    Café Du Monde is always open; it’s the clientele that changes—from visiting families and local pensioners early in the morning, to couples in the evening, to Bourbon Street refugees looking for coffee and ballast in the night’s thinnest hours. This huge coffee stop is a rarity—a tourist trap that locals actually love (although they will rarely wait when lines are long). It’s been around for more than a century, and basically serves two items: beignets and café au lait. The beignets are similar to Spanish buñuelos, fried fritters of dough, and are one of those French traditions that’s survived here more durably than in France. While probably not on anyone’s diet list—they come piled with powdered sugar—they’re surprisingly light, and an order (which equals three beignets) disappears with unusual haste.

    Making a new luxury lodge in Africa stand out is challenging, but Xigera Safari Lodge, on the Moremi Game Reserve in Botswana, hits all the high notes as the shiniest new offering in a rising African destination. Run by the Travel Corporation’s Tollman family, the sustainably built lodge has design inspired by the Okavango Delta spearheaded by Toni Tollman, director of design, and the first Tata Harper spa (known for nontoxic and organic products) in Africa. Each of the 12 suites—including one two-bedroom family suite—and public areas will feature artwork by leading African artists. The entire property will sit on two small islands, floating slightly above lily-filled lagoons. And the Tollmans really do take sustainability seriously—they built the Xigera Energy Centre to meet more than 95 percent of their energy needs. The Travel Corporation, today with 42 travel brands, including Red Carnation and Contiki, started in Africa, and it has been the Tollmans’ lifelong dream to open this lodge—a full-circle coming home story for the family and brand. International air travel will open to Botswana as of December 1, and travelers must present a negative COVID test taken within three days of arrival.

    A Greek Revival family mansion built at the turn of the 20th century, Hotel Ella owes both its name and its grandeur to its very first lady of the house, Ella Wooten. Known for her impeccable style and grand tastes, Ella was a fixture of Austin high society who hired the stone carver responsible for the Biltmore Estate to craft her house’s columns and verandas and worked with Neiman Marcus’ Stanly Marcus to redecorate the interiors in 1925.

    Nowadays, Hotel Ella pays homage to her good taste with fashionably understated decor, a locally sourced restaurant, and an art collection that the original proprietress would have coveted. Works include original Ansel Adams photographs and Wooten family portraits and jewelry. The owners pride themselves on making guests feel just as pampered as Ella might have, with perks like a free town car service—even though the hotel is within walking distance of downtown—and a concierge team for whom no request is too much.

    The Review:
    Romantic and luxurious, this tented camp transports guests to the Kenyan safaris of the 1920s and 30s. On the edge of the gorgeous Masai Mara, the secluded property was completely renovated in 2018 and now comprises two camps, each with nine tented suites featuring polished wooden floors, en-suite bathrooms with indoor and outdoor showers, and copper bathtubs with views of the night sky. Classically elegant, the tents also come with private wooden verandas overlooking the vast, game-filled plains; personal butlers who attend to every whim; and thoughtful details like handcrafted artifacts, map-inspired wallpaper, yoga mats, and a butler hatch for delivering morning coffee or tea.

    Elsewhere on site are two swimming pools; a common sitting area outfitted with leather Chesterfield sofas and fine antiques; a state-of-the-art gym with views of the Mara; a massage room; a gift shop stocked with local handicrafts; and a stylish bar for Kenyan coffee and top-shelf gin. Of course, guests are really here to see the Mara’s magnificent wildlife, and while they can spot several animals on site, they also enjoy twice-daily game drives, as well as night excursions and bush walks (permitted because the lodge is on a private concession).     From the team behind the recently refurbished Hotel Clermont in Atlanta and the design-forward Fairlane Hotel in Nashville, The Oliver shares the same dedication to historical preservation and cool, minimalist design as its sister properties. It’s also extremely convenient, with a location near Knoxville’s popular Market Square and some of the most beloved restaurants in the city. The circa 1876 building was home to a bakery, a drug store, and a dancing hall before becoming a hotel in time for the 1982 World’s Fair. When two young developers took control of the property in 2011, they set out to create a hotel that honored that history but also offered the modern amenities guests crave.     They had me at the yellow building. I love wandering the Dogpatch neighborhood of San Francisco and both Piccino restaurant and separate coffee bar, are lovely places to gather. The coffee bar on 22nd Street serves carefully crafted Sightglass organic coffee drinks. Their baking team aims to impress and I can’t get enough of the mushroom turnovers. Bonus: If you’re looking to make a to-go order from the Piccino restaurant around the corner, the coffee bar is where you’d place and pick up that order (hours have recently been extended until 10pm).
