For dessert, order the foie gras macarons with sea salt, with a sip of champagne. If you overdo it, don’t worry: You can ask for forgiveness in the restaurant’s authentic confessional booth, shipped in from Italy.

Take a hike into the cool confines of an underground cave system on Middle Caicos Island. Conch Bar Caves is the largest nonsubmerged system in the region, featuring a type of cave that is created by the karst process in which rain water slowly erodes subterranean channels through limestone. Exploring the interior will reveal chambers with tidal pools, rock formations, and four species of bats. Some instances of graffiti within the caves are over a century old, left by guano miners during the late 1800s and early 1900s. Visitors must hire a local guide to enter the caves.

Back in the days when there was no road to White Bay, on the island of Jost Van Dyke, boaters would anchor in the bay and swim ashore to belly up to the bar on the beach. They’d pay for their drinks with the cash they’d carried in their pockets—hence the name, the Soggy Dollar Bar. Some patrons still arrive the traditional way, settling in to enjoy the Soggy Dollar’s signature cocktail, the Painkiller, a potent mix of Pusser’s Rum (a BVI brand), pineapple juice, orange juice, coconut cream and a generous grating of fresh nutmeg.

At Per Se, you can only make a reservation one month in advance (maximum), and, if you procrastinate a day or two (say 28 or days or less before your desired date) you’ve likely missed your chance. This is an experience that will last up to four hours, where you are served from five to nine courses (depending on the menu you select), with many surprises in between, including personalized menus with your name and event (if you’re celebrating anything) on each. Now, if you’re still interested and not frightened away by the potential cost, then you’re in for an amazing afternoon or evening of small plates with the most amazing tastes you’ll ever come across. Do not be deterred by the portion sizes as you will most certainly leave full. It might even be best if you arrive on the borderline of famished, as it is a crime to leave anything behind.
