    You’ll want to block off at least three hours of your day for a meal at n/naka, Los Angeles’s temple to the elaborate, multi-course traditional Japanese feast known as kaiseki. Chef-owner Niki Nakayama—one of the world’s few female kaiseki masters and a James Beard semifinalist—has created an intimate, authentically Japanese space for up to 26 guests to savor one of two 13-course tasting menus. In a serene setting of minimalist, hand-built furniture, the Japanese American chef serves up a parade of vibrantly colored, elaborately plated dishes, each made with hyper-local ingredients. A typical menu begins with a modern take on sashimi and then proceeds through a series of innovative vegetarian, fish, meat, and dessert courses. One stop-you-in-your-tracks favorite: the Shiizakana (which translates to “not bound by tradition, chef’s choice”), in which spaghettini is twirled with abalone, pickled cod roe, and Burgundy truffles. At the end of the meal, chef Nakayama and sous chef Carole Iida-Nakayama emerge from the kitchen to greet each diner. Pro tip: Plan ahead. A two- to three-month waiting list means you need to be flexible with early or late dinner times.

    Markets offer great insights into a country’s culture, and in Taiwan the night markets are a mandatory stop for observing local life. Sometimes spanning entire city blocks, the markets are an amusement park of sorts—complete with a midway of mahjong and basketball games—where friends and families gather at colorful communal tables to feast on gastronomic discoveries from a clutter of stalls. Whether you’re at one of the nine markets in Taipei (such as the famous Shilin market or the more intimate Ningxia market) or visiting the big Da Dong market in Tainan, you won’t go hungry! From savory pork on a stick and crispy chicken chop (chicken that is fried and then grilled) to sweet, custard-filled wheel cake and sugar cane lemonade, market fare surprises and delights. Distinctively Taiwanese grab-and-go snacks include stinky tofu (which tastes exactly as it sounds) and the surprisingly appealing pig’s blood cake—a hearty dessert-on-a-stick consisting of rice and pig’s blood dipped in a pork soy broth and coated with peanut flour. A cultural immersion at its finest, the markets and the surrounding scooter-filled chaos will create a memory of Taiwan that will stay with you forever. For the thrill seekers, near the Grottos there is a series of waterfalls that flow into a crystal clear pool of mountain river water called the Devil’s Punch Bowl. People jump from 20 foot cliffs into borderline hypothermic cold water that takes your breath away when you hit it.     The Indochine Hotel is a great haven in the heart of Ho Chi Minh City, making your initial landing in Vietnam pillow soft. It’s a small, family run inn that caters to casual and business travelers. The location makes walking to a lot of the sites in Old Saigon an easy exercise. They are happy to arrange a pickup at the airport upon your arrival, eliminating the negotiating and direction exchanges at the terminal curb. The rooms are spacious and pleasant. Security is reassuring and there is a lift. The ATM and convenience store next door makes establishing a stash of cash and treats just steps away. Pricing varies depending on the room and season, but it is a great value no matter when you stay. The included breakfast has Asian and Western offerings, all fresh and individually prepared to order. Staff are skilled in a variety of languages and generous with directions and recommendations. The website is sparse but inquiries get a quick response. Coming from the US, you’ll be so spaced-out from jet lag when you arrive, you won’t appreciate how good Indochine really is until you’ve left. If you want a welcoming introduction to Vietnam, make Indochine your first stop.

    Canals are an integral part of the Dutch landscape so it’s only fitting you see them up close and personal, from a boat. Viewing Amsterdam by watercraft puts you level with Golden Age mansions, world-class monuments like the Anne Frank House and Westerkerk, and historic landmarks like the city’s narrowest house. Numerous companies offer canal tours of Amsterdam, including Holland International, which has day, evening and holiday cruises.     As the old truck lumbered down the highway we talked about the type of photography I normally like to do and he was able to narrow down some key stops for our morning where I’d be able to get some great shots that fit my style. It really is rare to get this kind of personalized treatment; this is where small town hospitality comes in. There’s no better way to photograph a region than going with a local who actually knows the region. Derek picked me up at the DesBarres Manor Inn after breakfast. He was not just a local who had grown up in the area, but he also was a photography enthusiast and was privy to some of the best views of the area. That morning he drove me all over the region – to the high points, the abandoned buildings and bridges, and some gorgeous wetlands that I never would have known existed. During the whole time he and I chatted about the progress of state of Guysborough, and the region in general. It was not only a great way to get photos that most visitors would never find, but it provided a super local insight into the region. Whatever the reason, head to Craftsman and Wolves for a changing menu of classic and innovative breakfast pastries, cakes, confections, confitures, desserts, lunch, and savory fare, with coffee, tea, hot chocolate, beer, and wine to wash it down.     Being in Santorini was like a dream come true. The breathtaking views were like none other I had ever seen. The white buildings against the beautiful blue sea. I spotted these two dogs and thought to myself, “Wow! What a life. What I wouldn’t give to be able to live here and enjoy this view on a daily basis.” They looked so relaxed sitting in the warm sunlight. Every time I look at this picture it takes me back to that moment. I was literally speechless. Just soaking in my beautiful surroundings. We were on a tour, headed to a wine tasting, and we stopped for pictures. I had never seen anything so beautiful in my life. This was an unforgettable trip, better than I could have ever imagined.

    The Review:
    Some upscale hotels feel impersonal, but not the 110-room Inn at 500 Capitol, which approaches interior design with refreshing whimsy. Its 57 themed rooms highlight various hobbies and interests, from the “Flicks Room” with movie star portraits and velvet ropes, to the “Best Friend Room” with dog sculptures and wildlife art. Even the “Standard” rooms are anything but, thanks to gas fireplaces, private balconies, and daybeds built beneath picture windows overlooking the Boise skyline. Hotel staff restock each room’s complimentary snack bar as it’s depleted, and more goodies await in the lobby, including complimentary beer and wine.

    Making the inn even more desirable is Richard’s, the on-site restaurant run by Boise icon and James Beard–nominated chef Richard Langston that serves masterful renditions of classic Italian pastas and meats paired with Idaho-grown produce. The hotel also doubles as an art gallery (owner Brian Obie is an avid collector and painter in his own right), with a rotating array of works on loan from the Boise Art Museum, plus permanent pieces by Boise artist JanyRae Seda in the lobby. The kaleidoscopic chandelier that hangs above the entryway and the colorful sconces that fill the hotel are the work of another local artist, Filip Vogelpohl, while the stand of sculpted trees outside—a collaboration between Boise artists Ken McCall, Mark Baltes, and Leslie Dixon—turns the hotel’s doorstep into a city landmark.

    The Review:
    Esperanza has become something of a hospitality legend in Los Cabos, so it makes sense that Auberge Resorts’ sister property, Chileno Bay, has style and substance right out of the gate. Located on one of the area’s only swimmable beaches, the resort makes use of its prime location with a water sports center that offers glass-bottomed kayaks, snorkel gear outfitted with GoPro cameras, and more. If you’d rather stay on dry land, the property also provides access to hiking on UNESCO-protected mountain, camel-back rides through the Baja Outback, and dune buggy excursions on the shoreline.

    Of course, no one would fault you for laying low by the triple-tiered pool, which winds down like a river to the beach; relaxing at the holistic spa with a salt inhalation room and reflexology pool; or even simply staying in your room. Here, the 60 earth-and-sea-hued guest rooms provide comfort in the way of spacious bathrooms with soaking tubs and private terraces with outdoor showers; some suites have infinity-edge plunge pools and outdoor hot rubs, while 32 multi-bedroom villas include fully equipped kitchens and expansive rooftop terraces with fireplaces. When it comes time to eat, there’s French Laundry alum Yvan Mucharraz’s modern Mexican restaurant Comal, plus a beachside taco bar and a courtyard coffee shop.

    Opened in 2010 by a Dutch couple, Baoase Luxury Resort is an intimate spot with fewer than two-dozen rooms. Despite its size, however, it has all the amenities of a larger property, including a spa, health center, boutique, and more. A 10-minute drive from the center of Willemstad, the Balinese-style spot feels secluded and tranquil, especially when swimming off the lagoon-like beach or sitting next to the banyan tree in the lantern-lit garden.

    Privacy and a high level of service are very important here. Only during low season are non-guests welcome at the resort, and even then, they must have a reservation for a beach-day pass. All rooms come with outdoor space overlooking the gardens or pools, and half feature private plunge pools. For something even more discreet, book the exclusive island in the Spanish Water Bay, which features its own four-bedroom retreat. When not relaxing in your room, you can ask the hotel to arrange a motorboat and permit to use during your stay, or visit the on-site restaurant, which is known for beachfront fine dining and a weekly Asian cuisine night. If all the privacy leaves you feeling extra romantic, you can even have the restaurant set up a picnic dinner to enjoy on the beach or under a gazebo.

    Fortunes and friendships change quickly in D.C., but the Dupont Circle Hotel has yet to go out of style. Set right on the roundabout itself, the eponymous hotel assumes a place of pride. Within, the site’s Martin Brudnizki–designed restaurant, The Pembroke—with its coral velvet banquettes, marble tables, and expansive outdoor terrace—has birthed a scene. Thanks to its location around the corner from Embassy Row, everyone from tony locals to visiting diplomats gather here to enjoy its mid-Atlantic-inspired menu, while the walnut-and-brass-clad Doyle is a whiskey bar fit for Ireland (home base of the Doyle Collection).

    The 327 sleek guest rooms take similar advantage of their surroundings, most with large windows overlooking the circle. Upstairs, Irish designer Clodagh refreshed the penthouse suites, where spaces for relaxing include deep soaking tubs and private terraces with sun loungers. Clodagh also redesigned the lobby, which has the look and feel of a high-end apartment, thanks to details like a cozy fireplace and a look-through bookcase with brass accents. Best of all, though, is the feeling of walking out the front door in the morning and knowing that the capital is at your doorstep.

    You can swim to your overwater bungalow through a magical turquoise lagoon filled with colorful tropical fish when staying at the Sofitel Kia Ora Moorea Beach Resort. The lagoon here is clearer and more turquoise than anywhere else on the island, and free of jet skis and other watercraft, allowing underwater life to flourish untouched.


    This is also one of the Islands of Tahiti‘s most affordable overwater bungalow options, made even more accessible by the fact that Moorea is easily reached via high-speed catamaran from Papeete in Tahiti, where international flights land. Moorea’s natural beauty is emphasized at this understated resort where the traditional thatched-roof bungalows have a Polynesia style with modern decor, like extremely comfortable beds and stone tile rain showers in the bathrooms.


    Although a decently large resort, with more than 100 bungalows, the best are the overwater digs, which have glass panels for viewing fish and direct access into the lagoon from a ladder into the crystal-clear water off the private terrace (if you’ve seen the Real Housewives of Orange County, this is the resort the women stayed at on their trip to Tahiti and Moorea). The resort has three distinct restaurants and bars that convey the spice of Tahitian life.


    Taking center stage is internationally themed “Pure”, which focuses on fresh seasonable produce. Tailor-made for romance, “K” is an intimate gourmet restaurant option, showcasing the freshest local produce in elegant and refined settings. While the “Vue” cocktail bar offers an idyllic venue to relax and enjoy a leisurely drink with a ‘view’ of the lagoon. There’s also a branded Bollinger champagne bar on the pier, and an infinity swimming pool and spa with wonderfully blissful treatment options.

    A landmark since the 1920s, this glamorous resort at Monaco’s easternmost border with France still evokes the glory days of Monte Carlo, when high-society scenesters were frequent guests. The rooms, airy and bright after a makeover by designer India Mahdavi, have an elevated Deco-meets-nautical vibe with porthole windows, Mediterranean stripes—in turquoise, white, brick red, and beige—tailored furnishings, and artsy line drawings on the walls that recall Matisse and Cocteau. The superb, all-organic restaurant Elsa (named after Elsa Maxwell, the American columnist and hostess who was instrumental in attracting the beau monde to the hotel) is another throwback, while the Olympic-size heated seawater pool—open to guests and Beach Club members who swan around on weekends with their children in tow—remains a draw now as it was then.
