    With its world-renowned chef and ultrachic decor, Blue—tucked discreetly into the Ritz-Carlton Grand Cayman—seems the sort of place you’d find in New York or Paris. But the main draw is decidedly local: spectacularly fresh ingredients sourced largely from the sea right outside and served up in such specialties as lightly seared wahoo with bok choy and kimchi broth; or poached halibut with sunchokes, salsify, and truffle jus; or bread-crusted red snapper with squid and sofrito sauce. If you’re feeling ambitious, go for the gusto with a six- or seven-course tasting menu—and tack on the wine pairings.

    Cacao beans’ scientific name is theobrama cacao, which translates into “drink of the gods.” Casa Cortés in Old San Juan will truly please any god with its Cortés chocolate concoctions. This welcoming café fuses modern style of its seats and dishes with the antique charm of walls covered in Cortés chocolate molds and a short history of chocolate on a collage of artwork that exudes nostalgia. The menu features mouth-watering items such as a baguette filled with Brie, chocolate, and a hazelnut spread; a blood orange and passion fruit cheesecake topped with a chocolate mousse; and an Argentinian ice wine. I opted for the mallorca (a sweet bread dusted with powdered sugar) stuffed with Ibérico ham, Manchego, chocolate, and a guava spread, accompanied by a European hot chocolate that was to die for. My meal was perfect, but I’m sure everything I didn’t get to taste was just as amazing. That’s what you get when your chocolate comes straight from a nearby farm. While I waited for my food, I watched a video on chocolate production. There’s also a museum (unfortunately, I was unable to see it, but you can bet I’ll be back there next time I come home to my beautiful island) and some products for sale. Make sure to take a little piece of Casa Cortés with you for future indulgences—they advertise one chocolate tablet as being enough for two beverages.

    La Boca’s Don Carlos is heaven for the indecisive. Since there is no menu, the restaurant’s namesake owner sizes you up and intuits what you need. The idea is to feel like you’re at home, where the whims of whoever’s cooking determine what comes out of the kitchen. Everything is made from scratch, in-house, and reflects what you’d get in a typical Argentine household: pastas, Spanish tortillas, vegetable croquettes, juicy grilled meats. Plates come out in quick succession until you say uncle. Wash them down with a bottle from their impressive wine list; you’ll leave with a full belly and a smile. Closed Sundays and Boca soccer match days.

    These two castles, both elements of the fortifications encircling the city, stand on either side of La Caleta beach. The fortress of Santa Catalina, entered directly from the promenade, was constructed in the 17th century. Its small chapel and a central patio planted with palms give it the sun-baked look of a Mexican mission. The castillo is now a cultural center where open-air concerts are held in summer. San Sebastián, meanwhile, is an imposing fort built (in 1706) on a small island connected to the mainland by a long stone causeway. This malecón is popular among locals and visitors as a pleasant place to walk for a cool breeze.

    Wing Lei was the first Chinese restaurant in the United States to receive a Michelin star, and this upscale eatery still is going strong. Chef Ming Yu’s menu mixes Cantonese, Shanghainese, and Sichuan flavors. Perhaps the most famous dish of all is the tableside-carved Imperial Peking Duck, which is both tender and crispy. Other entrées celebrate tradition but offer a new focus, like the wok-fried Maine lobster. Even the tea selection is exquisite—Jasmine Pearl and Tung Ting Oolong are among the varieties typically found only in China. The dining room is a sight to behold: The gold-and-red space draws inspiration from elements of classical Chinese architecture. The restaurant also has a view of a private garden with pomegranate trees and a golden dragon.

    This Michelin-starred imaginative seafood restaurant, inspired by a small Venetian theater of yesteryear, is an intimate dining spot with just nine tables. The brainchild of Gianni Bonaccorsi, who had a vision to create a fine-dining place in this spot more than a decade ago, it serves a seasonal menu that’s at once creative and well researched. Expect modern interpretations on classic Venetian favorites, with a focus on locally sourced fish that can change daily. The decor is as inviting as the food, with white cloth–covered tables set in a wood-beam-and-brick dining space. Reservations are essential. Il Ridotto is open for lunch and dinner and offers both prix-fixe and à la carte menus.
  • A visit to Sulphur Springs, which is dubbed the world’s only drive-in volcano, is one of the most unusual excursions you can make in the Caribbean. You’ll smell the rotten-egg stench of sulfur and see steam rising around the dormant volcano’s crater upon arrival. (Don’t worry: The last time the volcano erupted was two centuries ago.) Locals claim that soaking in the mud baths then rinsing off with a dip in the hot springs will rejuvenate your skin and relieve mosquito bites and minor skin problems. Be sure to take a before-and-after selfie to determine whether you look younger after the experience.

    Located just off Main Street, the Washington School House Hotel eschews Park City’s typical rustic style for a pared-down, flea-market–chic aesthetic. Before being reimagined as a design-oriented inn in 2011, the 1889 building served as a schoolhouse for miners’ children and a dancehall for the local outpost of Veterans of Foreign Wars. Today, the interior is anything but traditional, from the whitewashed living room with 16-foot ceilings to the antique mirror and the white, lacquered antler chandelier. Outside, a heated pool sits on the hillside surrounded by aspens and boulders. There’s also a fire pit, fashioned from a steel Olympic torch from the 2002 Winter Games.

    Each of the guestrooms and suites is unique, though all feature reclaimed wood floors, crystal chandeliers, and tall windows. An artful collection of European antiques and vintage paintings adds a bohemian vibe, while white marble bathrooms offer heated floors, walk-in showers, clawfoot tubs, and period fixtures. Guests can also look forward to plush hooded robes and top-notch toiletries from Molton Brown.

But in 2010, the sleek Burj Khalifa stole their thunder. Now the world’s tallest structure, the tower soars 830 meters (2,722 feet) into the sky. Visitors can zoom by elevator up to the 124th floor to experience incredible views and explore interactive displays on Dubai’s history and the tale behind the building of this futuristic marvel. Another observation deck is even higher, on the 148th floor.

    One of New York’s most iconic landmarks is also one of America’s: the Statue of Liberty, standing in the middle of New York Harbor as it has since 1885. The statue was famously a gift from France, built to a design by sculptor Frédéric Auguste Bartholdi and with structural engineering overseen by Gustave Eiffel. The statue was one of the first large-scale curtain wall structures—that is, one where weight is supported by an internal frame and not by the exterior walls. As one of New York’s most visited sights, some tickets sell out far in advance. There are two different levels of tickets: pedestal and crown. Tickets to the pedestal and especially those to the crown are often gone months in advance, so plan accordingly.

Not to mention Scratch Kitchen & Meatery, which shares some classic recipes with its Chinatown counterpart, like milk-and-cereal pancakes and the cider-braised pork belly and apple pasta. But it also forges its own lunch-brunch path with indulgences such as a pillowy French toast stuffed with strawberries, mascarpone, and cream cheese.

    Reykjadalur means “Steam Valley"—a perfectly apt description of this pleasant geothermal area close to the town of Hveragerði, a 40-minute drive south from Reykjavík. Formed from a now extinct volcano (Mount Hengill), the valley is best experienced via a two-mile walk along a gravel road, which leads into the hot springs. The hour-long stroll—fairly easy but quite narrow in places—is highly photogenic thanks to the presence of boreholes, waterfalls, and springs, so bring your camera as well as your swimming gear. Be sure also to use only the official bathing pools, since although the light-blue water may look innocent, some pools are hot enough to cause severe burns. If you don’t have a car to get to the site, you can visit the springs via an official tour, which can be done in combination with some horse riding. There is also a restaurant close to the parking lots and bathrooms.
