    Built as an aristocratic country manor in 1746, Kokkedal Castle was a private residence for much of its existence, hosting salons and parties for Copenhagen’s elite.     Perched on Peblinge Sø, one of Copenhagen’s man-made lakes, Hotel Kong Arthur is hidden away within the walls of an 1882 apprentices’ residence, on the edge of the hip Nørrebro neighborhood. From the outside, it looks like any other historic building in Copenhagen, hidden down a cobblestoned alley, but walk through the doors and you’ll discover a whole world inside. In honor of the hotel’s medieval-inspired name, a full suit of armor greets guests upon arrival, but the historic comparisons stop there. Each room is individually designed in modern Danish style—minimalist, light, welcoming, with all the modern gadgets and a look worthy of a design magazine. With its highly acclaimed spa, three restaurants, private courtyard, conference rooms, and even an afternoon happy hour for guests, Hotel Kong Arthur is an oasis in and of itself—if only it weren’t so well situated to tempt guests out to explore the city.

Originally the vacation cottages of designer David Scott, the Boatshed now offers six sun-drenched accommodations that complement the laid-back island vibe—a magnet for a free-spirited set of artists, vintners, chefs, and water lovers. Many furnishings were custom-designed by the Scott family and exude the feeling of a boat cabin, especially when placed among the built-in shelves and cabinetry of the bachs—the local word for an authentic New Zealand beach shack. Accommodations range from old boat sheds to a three-story tower that feels like a lighthouse, and outdoor decks provide many opportunities to enjoy the sea breeze.     The French chef Daniel Boulud made his name in New York, where he oversees seven restaurants and has since expanded his culinary empire to six other outposts around the globe. His venture in Montréal makes perfect sense, with Québecois cuisine combining French traditions and techniques with New World ingredients—not unlike Boulud himself. The space—by Super Potato, one of the hottest design firms today—is elegantly restrained, with smoked glass details, wooden floors, and a contemporary enclosed fireplace warming and lighting the room. Boulud uses the best of Québec’s produce in dishes centered on local foie gras, duck, and salmon. The result is refined yet soulful contemporary French dishes, prepared by Maison Boulud executive chef Riccardo Bertolino.     Even during Antigua Sailing Week, when English Harbour is chock-a-block with yachts from all over the world, the 28-room Inn at English Harbour remains serenely detached from the chaos. The inn is five minutes by water taxi from the center of things at historic Nelson’s Dockyard, but its tucked-away location on a white-sand beach backed by 19 leafy acres (and a no-kids-under-10 policy) ensures tranquility. Four snug rooms, with marble floors and queen beds, occupy two beachside cabanas, while 25 more generously proportioned suites, all with dark mahogany floors, four-poster king-size canopy beds, and verandas or balconies, are in three wooden buildings sitting farther back among the tropical greenery. Although the Terrace Restaurant and Stone Bar are in the property’s original stone house, the rooms, despite their colonial look, are relatively modern, which means there is a flat-screen TV, an iPod docking station, and Internet access.

    This oval-shaped atoll in the Tuamotu island group strung across the South Pacific Ocean some 300 kilometers from Tahiti is covered in pink and China white sand and surrounded by a jaw-droppingly beautiful turquoise, jade, and cerulean hued lagoon and is considered to have the best beaches in all of French Polynesia. Most are empty – it has a Robinson Crusoe vibe and still remains mostly undeveloped.

    Beyond the sand you’ll find excellent snorkeling and even surfing in spots where the reef breaks. For scuba you’ll want to head to the magnificent Tuheiva Pass, where you’ll likely encounter sharks and manta rays. Lagoon excursions are also popular, and allow you to snorkel in the out-of-this world hued waters.

    The Tikehau Pearl Beach Resort is the most exclusive place to sleep on the island, but there are also a number of excellent small family-run guesthouses right on the beach for those wanting to experience its “paradise lost” ambiance at more affordable rates.

    Though not really a tropical island, the indoor resort called “Tropical Islands” outside of Berlin makes for a great (albeit unusual) day trip. Located inside a former Soviet air hanger, the building has been converted into a biosphere with a tropical climate. Inside the resort there is an artificial beach, swimming pools, saunas & a spa, water slides, a small rainforest and even a hot air balloon! To get there with public transporation, you can take a Regional Express train from central Berlin. Trains leave every hour toward Cottbus (depart at Brand-Niederlausitz). It takes about 50 minutes. From the train station, Tropical Islands offers a free shuttle bus for the 5-minute journey to the resort. If you buy tickets at the door, admission to the Tropical World or the Tropical Sauna & Spa complex is 34.50€ for adults and 27€ for children age 6-14. A Kombi-Ticket is valid for both areas and costs 39.50€ for adults and 27€ for children.

    Some friends had been hiking in Austria in May and had to cut the trip short because of an unexpected blizzard. After all day hiking in the snow and not prepared for it, we came to a hut that was open to guests run by a woman named Helga. Helga didn’t speak a word of English, but she served us some delicious Mittenwald beer, that tasted like the best in the world. So a few days later, we decided we had to go to the source of this magical elixir, the town of Mittenwald in Bavaria. We went to the brewery and met the proprietors of the restaurant associated with the brewery, Postkeller, where we thought we would have a couple of tastes. Instead, it turned into an all-day affair. We tested the many different varieties of Mittenwald, and our hosts cooked up a roast for us, and we had a great evening of laughs with them.

    On the still-bucolic site of a former coconut plantation just west of Montego Bay, Round Hill is another of the legendary hotels created in the early 1950s to accommodate wealthy Brits and Americans who were discovering the pleasures of a Jamaican winter. Since then, it has evolved into a thoroughly modern resort that manages to retain its original, exclusive, clublike spirit. In the beginning, Round Hill consisted of a group of shareholders (British playwright Noel Coward was one) who rented out their private villas when they were absent. That’s how it still works, although the celebrity shareholder most mentioned these days is designer Ralph Lauren, who rents neither of his two villas. Along with 27 other villas, which can be divided into 86 suites, there’s the Pineapple House, a seafront block of 36 rooms, all decorated, predominantly white on white, by Lauren. The ambience is quiet luxury, the service is relatively formal (the doorman wears white), and the children among the guests are treated as the heirs and future holiday decision makers that they are. Almost every villa has a story, whether it has to do with Coward, the Kennedys, or How Stella Got Her Groove Back. And Montego Bay, whose city lights can be seen only from the highest villa (#28), is still another world away.

    One of the most rewarding ways is to explore Bordeaux’ countryside is by bicycle.

    While our ship, the AmaDolce, was sailing the short distace from Blaye to Bourg, we ‘raced’ her by bicycle. Without taking detours, it’s about an hours ride, but of course we took our time, exploring the sights, villages and vineyards on the way. We began at Blaye’s Citadel, one of the impressive ancient fortifications built to protect Bordeaux from foreign naval attacks, and since 2008, a designated UNESCO World Heritage site. We pedaled through vineyards, and finally along the waterfront, to take in the views of the Gironde estuary. It was there, that the AmaDolce finally took the lead ; )

    A minor disclaimer is that we had to navigate three hills between Blaye and Bourg, nothing dramatic, and there were definitely enough stops along the way to catch our breath.

    Our bike adventure was part of our river cruise itinerary, but you can contact Bordeaux by Bike directly for tours. I can highly recommend it, it’s a perfect way to get a real sense of place, and of course to work up an appetite.
  • Taha'a, French Polynesia
    Set against a backdrop of lush jungle, this secluded luxury resort offers a mix of accommodations, from gorgeous villas with their own private plunge pools located right on the resort’s powdery white sands to overwater bungalows with traditional thatched roofs, large lagoon-facing decks, and deep soaking tubs. The resort sits on the mountainous, verdant island of Taha’a, off the coast of Raiatea, and is accessible only by speedboat or helicopter. Taha’a is also known as the vanilla island, renowned for producing some of the finest Tahitian vanilla in the world, and the hotel offers excursions out to local vanilla plantations as well as to pearl farms, where guests can learn how famous black Tahitian pearls are harvested. Marine conservation tours are also available, and the hotel can even arrange yacht rentals for guests on request. Cultural activities include weekly Polynesian-themed evenings, complete with a Tahitian buffet and local performers, such as traditional fire dancers.

    This esteemed, five-star hotel, set in its own park overlooking Lake Zurich and the Alps, has a remarkable history. Opened in 1844 by Johannes Baur, the property hosted the world premiere of Wagner’s Die Walküre (Wagner himself performed), and Alfred Nobel’s former secretary, Bertha von Suttner, came up with the idea for the Nobel Peace Prize in one of the hotel’s salons.

    The 119 rooms are individually decorated with styles ranging from Art Deco to French Louis XVI and English regency, but all feature exclusive fabrics and furnishings from Europe, plus marble bathrooms with heated floors. The amenities are many, from valet parking and on-demand, chauffeured limousines to a round-the-clock concierge and even car-repair and flower-purchasing services.

    There are two renowned restaurants on-site, along with an inviting bar and an idyllic garden.

    This unassuming adobe house in Santa Fe is home to one of the world’s ‘top ten places’ to drink chocolate. (Seriously. It ranks up there with anything in Europe or South America.) Walk the few blocks from the city’s central Plaza, open the door and inhale the pre-columbian fragrance of the eight or nine ‘drinking elixirs’ that will be swirling and ready to serve. Free samples will tempt and educate you... My wife lingered over the “Spanish” blend, sipping on a blend of chocolate, floral essence, coconut sugar and spices, while I had their version of “atole,” a traditional hearty breakfast drink made with blue corn masa, chocolate, honey, Mexican vanilla, and local chimayó chile pepper. But there’s more to cacao here than just drinking; the handmade truffles, caramels and mendiants are arrestingly good! The house-made agave caramels dusted with chile powder (again, from the beloved chimayó peppers from their namesake valley just north of the city) or topped with nuts from the pinyon pines so common in the foothills of the Sangre de Cristo mountains--these are treats with a definite taste-of-place.
