    D.H. Lawrence detested it. Langston Hughes loved it. It’s probably safe to say that no one who has seen bullfighting comes away ambivalent about it. If you can stomach the blood and the inevitable death of the bull (and, perhaps, the injury of the matador), then a Sunday afternoon at Plaza México, the largest bullring in the world, is one place to experience a centuries-old tradition. The Spanish brought bullfighting to Mexico when they arrived in the New World, and though the sport has become increasingly controversial in recent years (it’s even been banned entirely in the Mexican states of Coahuila, Guerrero, and Sonora, and its prohibition has been discussed–but not yet passed– in Mexico City), it’s one of the few places where such formality, pageantry, skill, and–yes, some would say– savagery can be witnessed for the price of a few pesos.

    Renowned Costa Rican architect Ronald Zürcher looked to his country’s colonial past when designing this hacienda-style property—witness its central courtyard, arched doorways, and terra-cotta roofs. Set amid a 30-acre coffee plantation just outside the capital city of San Jose, the hotel’s 308 traditional accommodations follow suit with dark wood furnishings, but a modern aesthetic pervades renovated guest rooms with streamlined furniture, intricately patterned bathroom tiles, and expansive views that extend from green lawns to forested mountains and urban skyline; some include small balconies that overlook the hotel’s two pools.     In 2011, hotelier Ian Schrager reopened the iconic but faded Ambassador East Hotel as the Public, instantly infusing Chicago‘s Gold Coast with some flash. Its Pump Room restaurant was the city’s first posh, post-Prohibition, celebrity hangout (everyone from Fred Astaire to John Belushi has come). Keeping its name but little of the old decor, the revitalized Pump Room has a 24-foot bar with a 12-karat white gold–leaf ceiling and a changing menu by Jean-Georges Vongerichten. The high-ceilinged, columned lobby feels both grand and intimate, and it’s now divided into a lounge with a computer-equipped workstation and an elegant library/coffee bar with deep couches and original art, including photos by Hendrik Kersten. Residential high-rises along Lake Shore Drive obscure views of Lake Michigan from the hotel, but drop-dead gorgeous rooms elegantly infuse the pre-WWII architecture with white stuffed couches, bronze textiles, and white sheepskin throws for an effect of lush minimalism befitting one of the city’s oldest and toniest neighborhoods.

    This steep hike is about eight miles out and back, but many are willing to make the trek because of the photo opportunity that waits near the summit. Potato Chip Rock is a sliver of granite that protrudes from a boulder. Since it’s sturdy enough to stand on, hikers often head to the edge and strike creative poses to post on Instagram. Located in Poway, the trailhead is 27 miles from downtown San Diego, but well worth the drive—the panoramic vista from the top offers a great perspective of San Diego County’s canyons and hilly topography. In addition to Potato Chip Rock, be sure to check out the other large boulders and rock formations that litter Mount Woodson.

    An hour’s drive from Tórshavn, in one of the Faroe’s northernmost settlements, sits the family-run Gjáargardur Guesthouse of Gjógv, bordered by steep slopes and a natural harbor. With its wooden exterior and traditional, turf-topped roof, it practically blends into the surrounding nature, putting the focus on its sweeping ocean views. Rooms here are modern and spacious, with large windows that look out across the valley, and service is friendly and accommodating. An on-site restaurant serves breakfast, lunch, and dinner during high season, while a gift shop stocks postcards, ice cream, and Faroese woolen jumpers that make for perfect souvenirs. There’s even a small playroom in the basement for children, though most guests are here to hike Slaettaratindur—the highest mountain in the Faroe Islands, which looms over the guesthouse and its namesake village.

    Manhattan can, famously, feel like endless rows of apartment blocks and office towers for most of its length. At least above 14th Street, a regular grid of streets and avenues, bisected only by Broadway, has transformed the city into a dream for real estate developers. The green spaces interrupting the pattern—Union Square, Gramercy Park, Madison Square Park—are few and far between, with one enormous exception: Central Park. Running from 59th Street to 110th Street, and between Central Park West (Eighth Avenue) and Fifth Avenue, it is one of the world’s largest urban parks, measuring some 843 acres. It is the masterpiece of the 19th-century landscape architect Frederick Law Olmsted working in collaboration with Calvert Vaux. Inside its borders are stately allées and naturalistic scenes, ice-skating rinks (in the winter), an enormous reservoir, and a faux castle. The park is hugely popular, and so to call it an escape from the bustle of the city is often not accurate, especially on mild summer days and the first warm ones in the spring when thousands of residents head to its playing fields, bike and run along the road that loops the park, and enjoy picnics on the Sheep Meadow or one of its other lawns.

    You will likely see Bronzino’s famous portrait of Eleonora (or Eleanor) de Toledo, in the Uffizi, during your visit to Florence. The Spanish noblewoman who became the duchess of Florence in 1539 when she married Cosimo I de’ Medici was unusual for her time, playing an active role in politics and as a patron of the arts. Her patronage extended to garden design, in its infancy (at least in Europe) in the 16th century. Eleonora commissioned the Boboli Gardens behind the Pitti Palace as a green escape from the city; they continue to provide a retreat for travelers today.

    Among the earliest examples of the formal compositions that would dominate garden design through the 20th century, the grounds are dotted with classical statues and fountains while straight axes run up and down the hillside with an apparent disregard for topography. A moment in design history can be experienced first hand here. There’s a feeling that the man who planned the gardens (Niccolò Tribolo) conceived a formal plan and then simply laid it atop the site. Principles of garden design were later to shape city planning. The allées of the Boboli Gardens were early models for grand boulevards leading the eye to distant monuments. One of the pleasures of gardens, however, is that you don’t need to know their histories to enjoy the flowers in bloom or the sounds of birdsong and splashing fountains.

    Tucked away on a quiet San Miguel Chapultepec street, but just next door to lively Colonia Condesa, this odd restaurant’s yellow façade leads to a culinary experience that goes way beyond the food served. Under the direction of Norma Listman and Saqib Keval, Masala y Maíz is a space of culinary encounter between Mexico and India; entrees often mix pickled fruits and vegetables in Latin American styles. The makai pakka combines Mexican esquites with a similar dish from Kenya. The partner-chefs connect food and current events as well; they commit to a socially responsible work environment and the restaurant serves as a progressive events forum. Open for breakfast and lunch, plus Saturday-only brunch.

    Isla Blanca is in fact a narrow peninsula some 30 minutes north of Cancún, with the lagoon to the west and the Caribbean to the east. Seemingly no one except the locals come to this untouched, isolated beach, dotted with tiny seafood restaurants, the occasional vacation cabin, intermittent lounge-chair rentals, and a growing camp of kite surfers. You’ll need to arrive by car via coastal highway that quickly turns to rough dirt path, but the experience transcends the rusticity once you hit the Caribbean’s pristine white sands and cool turquoise surf; the lagoon’s shallow, brackish waters, just steps from the ocean, provide ideal fly-fishing and kite-surfing conditions.

The restaurant, on the grounds of the Sofitel la Ora Beach Resort, is set under a cathedral ceiling made from wood from the Tuamotus, from which crystal chandeliers dangle. The tables are draped in white linen and decorated with shells and driftwood. Candles create a romantic glow and the floor is sand. Dinner is a 3-, 5-, or 7-course tasting menu by renowned Chef Guillaume Burlion, and the house has a superb vintage wine list that sommelier Fabrice Jarry is happy to help pair. For an even more romantic option, have dinner set up at a private table on the beach.
