  • Described as an inland Ha Long Bay, this sublime area west of the town of Ninh Binh, about 60 miles south of Hanoi, was granted UNESCO World Heritage status in 2014 on account of its “spectacular landscape of limestone karst peaks permeated with valleys, some of which are submerged, and surrounded by steep, almost vertical cliffs.” While the description is accurate, it doesn’t adequately capture the experience of a visit. Boats tackle the waters of the Red River Delta, passing hulking karst mountains and stopping at grottoes along the way. Also popular are the boat trips that depart from Tam Coc, south of Ninh Binh, and wind up a twisting river flanked by limestone peaks and verdant fields.

The real draw of the place, though, is its fabulous dinner menu, which offers American-inspired dishes like California sea bass, Day Boat Scallops, and a thyme-heavy chicken potpie. The wine list is extensive when it comes to both bottles and sips by the glass, so follow your server’s lead when it comes to picking the perfect one for your meal.

    Built on the ruins of an ancient seaside villa, La Posta Vecchia has a long history of noble ownership. The estate-turned-hotel was originally laid out in the 17th century. Then, in the 1960s, American billionaire J. Paul Getty purchased the property and turned it into his seaside home. During Getty’s residence, the palace was outfitted with ancient works of art, as well as original works and furnishings from the 15th through 17th centuries. The estate now belongs to the Sciò family, who have transformed it into one of the Leading Hotels of the World. The 19 rooms, including 8 suites, are spacious, and many offer views of the Tyrrhenian Sea. Each is outfitted with antique furnishings, while bathrooms are clad in precious marbles.

    Although La Posta Vecchia is only 30 miles northwest of Rome (about a one-hour drive, traffic permitting), it should be treated as a destination hotel rather than a home base for day trips to the Italian capital. To make the most of the luxurious accommodations, tack a dedicated stay onto the beginning or end of a visit to Rome.

The wood-fired oven is put to good use, sometimes in surprising ways, like for charring cauliflower or lightly roasting rock oysters to warm, gooey perfection. There are also beautifully baked meats and breads, and a baby blood sausage “sanga” for those craving comfort food. For dessert, order the burnt pavlova, a classic meringue that takes a trip through the flames before being dusted in elderflowers.
  • Kiyomizu-dera on Mount Otowa is one of the most famous temples in Japan, a place that appears in every sequence of Japanese travel photos. The landscape is all cherry trees and forest; it is among Kyoto‘s loveliest spots. The current structure dates to 1633 and is one of 33 temples on a pilgrimage circuit in the Kansai region dedicated to Kannon, the Buddhist goddess of mercy. The circuit runs from the south of Wakayama north to the Sea of Japan. You’ll see pilgrims carrying nokyo-cho—books stamped to record the visit—and monks busily inscribing in calligraphy. The temple, set against a steep hill and constructed on huge pilings, is a UNESCO World Heritage site.

    One&Only Palmilla is a member of EarthCheck, a scientific benchmarking certification program, for its sustainability efforts, which include a state-of-the-art water purification system that produces and bottles filtered water on site. The resort works with the Red Committee for the Protection of the Sea Turtle by helping with daily patrols of nearby nests, an activity guests can join.
