    Restaurateur Brooks Reitz built his name with this chicken-and-oyster joint that feels old-school despite its carefully crafted ambiance. On a first visit, it’s sinful not to order the perfectly salted, crispy/juicy fried chicken amalgam shellacked with a glaze of Old Bay and cayenne suspended in melted lard. That necessitates a second visit to gorge on the poached char-grilled lobster and sausage, or the Leon’s Fish Fry, a platter of shrimp, oysters and catfish. Leon’s was the first to open way-Upper King, now the restaurant hotbed, and it’s held onto its cool status thanks to its thoughtful buildout in a restored auto body shop, retaining the exposed rafters and a rollup garage door that opens to a patio out front.

    The trendy Amsterdam-Noord district is home to the city’s newest outpost of the famed burger joint called the Butcher. Set inside the hip designer hotel Sir Adam, the sprawling, dual-level space is pure fun, with table tennis, pinball, billiards, and live DJs five nights a week. Open 24 hours on Fridays and Saturdays, and until 1 a.m. Sundays through Thursdays, this is where you’ll find chic young locals devouring gourmet burgers and fries and sipping fancy cocktails. The waterfront terrace offers excellent views of the IJ River. It’s a free five-minute ferry ride to the restaurant from Amsterdam’s main train station.

This is not a small, traditional onsen but a “super onsen,” with a variety of tubs for soaking, both indoors and out. Plan on spending at least half a day here. Rent a colorful cotton yukata and, between soaks in the hot water, peruse the food stalls offering yakitori, sushi, ramen, and udon. Massages, reflexology, and spa treatments are available.     Poke (pronounced POH-kay) is not only a staple of Hawaiian cuisine, it’s also a favorite of diners needing a meal on the run. These bite-sized chunks of raw fish are seasoned with everything from soy sauce to seaweed, and you won’t find a luau or community potluck that doesn’t have at least one type on the table. For those craving poke on the West Side of Maui, Foodland Farms supermarket is consistently voted as the best place for poke in the islands. At a small deli counter in the back of the store, you can choose from a selection of more than a dozen different varieties which boast seasonings from spicy to savory. The fish of choice is yellowfin tuna (ahi), and one variety—the “Flyin’ Hawaiian"—is part of a charity set up by Shane Victorino, a professional baseball player who was raised on the island. While the poke itself can fluctuate somewhere between $12-$15 a pound, budget diners can enjoy a “poke bowl” in which a third pound of fish is served over rice for a wallet-friendly $7. Can’t decide? Try the ahi avocado poke bowl served over a bed of brown rice. Want to blend in? Eat it with chopsticks.

    Every evening on the North Shore of Kauai, diners pack Bar Acuda for Mediterranean-inspired tapas that highlight local products. “The key is taking the finest ingredients and not doing much with them,” says chef Jim Moffat. He frequently changes his seasonal menu and sources such produce as citrus, avocados, fennel, and herbs from his home garden and the Hanalei Elementary School Garden, a program for local students that he helps run. Moffat often shops at farmers’ markets, but locals know they can also sell their fruits and vegetables at Bar Acuda’s back door. One firefighter even drives his 30-foot ladder truck to drop off cases of tangelos. “If you have a vacation rental and there’s something ripe, bring it to me,” says Moffat, who promises a gift certificate in exchange. His food philosophy creates a dining experience that’s greater than the sum of its dishes. “It’s about the lifestyle more than anything.” This appeared in the May 2015 issue.

    Washington is famous for its apples, and fall is the best time of year to try our crisp, juicy fruit. The most coveted breed is Honeycrisp, prized for its extremely crunchy and crisp texture and lightly sweet flavor. Cameo is a pretty, tiger-striped fruit with a good crunch, discovered as a chance seedling in a Washington orchard. Other varieties you’ll find in local stores include Pink Lady (a sweet-tart, pink and green apple), SweeTango (a hybrid offshoot of Honeycrisp), Ambrosia (a crunchy, very sweet apple with champagne-like flavors and white flesh), and Jazz (a sweet red-and-gold apple). If you venture out to rural areas or fruit-orchard regions like Wenatchee, you’ll find fruit stands with these apples and many more, plus jugs of cloudy, freshly made cider that’s nothing like the store-bought version. And if our apples aren’t sweet enough for you on their own, there’s always the local Aplets and Cotlets fruit jelly candy, locally produced in Cashmere.

    The owners of FnB—James Beard Award semifinalist chef Charleen Badman and front-of-house manager Pavle Milic—were early champions of Arizona wine and produce, curating a wine list that includes lots of Grand Canyon State vintages to accompany their locally sourced dishes. They still highlight the state’s great bounty, and Milic even produces his own wine label, Los Milics, which is available in small batches at the restaurant. Badman’s seasonal menu showcases Arizona’s flavor with an imaginative, very veggie-forward lineup. (Don’t worry, meat and seafood are on the menu, too.) The cozy eight-seat bar is the perfect spot to sample FnB’s wine offerings, showcasing a different region every four weeks.

    Since 1862, fresh flowers and plants have arrived by barge from the Dutch countryside to Amsterdam. While this assemblage of flora still shows up daily, it comes by van, not boat, to the Bloemenmarkt, the world’s only floating flower market. Here, you can browse 15 fragrant stalls on houseboats permanently moored on the Singel. Now the best-known flower market in Holland, this colorful attraction is packed with tourists on sunny weekends. Still, it’s a great place to pick up Dutch tulip bulbs in a plethora of shades and varieties, as well as many other types of bulbs, seeds, cut blooms, and houseplants. Ship a bag of bulbs home, or grab a souvenir at one of several shops hawking T-shirts, mugs, clogs, Dutch cheese, and other fun and inexpensive gifts.

    Few restaurants have been immortalized in both a popular book and a movie. Nam Kee, operated since 1981 by the Chan family in Amsterdam’s Zeedijk is one. A Chinatown favorite long before Dutch novelist Kees van Beijnum alerted foodies to oysters’ sensual pleasures in De Oesters van Nam Kee (The Oysters of Nam Kee) in 2000, the Cantonese eatery was named Best Chinese Restaurant in the Netherlands by Lonely Planet. In 2009, Time Out Amsterdam recognized it as Best Chinese Restaurant in Amsterdam. A 2010 renovation has replaced the former cold, white tiles with warm woodwork, stone accents and the obligatory Chinese calligraphy scrolls. The revamp has failed to make Nam Kee upscale or fancy, so don’t expect anything romantic or gezellig (cozy). A brightly lit dining room is simply furnished but filled with the flavors of salty soy and sweet ginger wafting from sizzling dishes of classic Cantonese favorites. The fabled Oysters of Nam Kee arrive steamy in their craggy shells, swimming in pools of silky black bean sauce, garnished with crunchy green scallions. My hot and sour soup with seafood was spicy, laden with chunks of shellfish. Friends shared a velvety corn soup with shrimp and minced pork. For light eaters, dim-sum-size appetizers include renditions of classics like Chinese Spring Rolls, Fried Won Tons and Sesame Prawn Toast. Main dishes are more substantial and include such Cantonese specialties as Salt and Pepper Squid redolent of peppercorns and crisp Peking Duck.
