    In October 2014, Chef Enrique Olvera opened his much-anticipated New York restaurant Cosme, which offers an inventive dining experience in the Flatiron District. The spacious restaurant is a short walk from Langham Place, Fifth Avenue, and features modern Mexican dishes with locally sourced ingredients and housemade tortillas. But guests should not come expecting standard chips and guacamole, Chef Olvera is known for utilizing creative and sometimes surprising ingredients in his dishes. Menu items include burrata, salsa verde and weeds, and occidental purple corn pozole, pork jowl, lettuce, radish, Mexican oregano. The eclectic menu items are meant to be shared, and certain Mexican specialties, like dried chiles, beans and heirloom corn are imported from Mexico. At Sitka & Spruce, chef Matthew Dillon features a rotating menu of hyper-local Northwest cuisine in shareable small plates and mains. The artfully arranged charcuterie platter is a must-try, and don’t skip the bread — the Columbia City sourdough loaf with whipped butter is a local favorite. Just want a snack? Try Bar Ferd’nand next door, also co-owned by Dillon, for a glass of wine and simple bar snacks, or take home a bottle.

    I could have spent days at Camden Market! There’s loads to see and something for everyone. My favourite find from Camden is an awesome nautical style rockabilly dress (which I saved £10 on :). I also ate the most epic burrito of my life in Camden. It was heavenly.

    While much attention is paid to the Japanese and Italian influences on Los Cabos cuisine, one of the very best spots in town is an Argentine entry. The low-key, low-lit courtyard restaurant Chamuyo features a dozen or so tables, a long bar, and a traditional Argentine grill. The steak-house menu sends you on a culinary adventure through Buenos Aires dance halls and the verdant pampas. Meat-stuffed Argentine empanadas (markedly different from the Mexican variety) are served oven-baked or fried, and make excellent starters. For your main course, try chef Marcelo Romby’s 22-ounce beef ribs, which he slow-cooks for more than four hours. Pair it with a bottle of Baja red and, if you can, save room for some first-rate alfajor cookies.

    For more than two decades, Chef Volker Romeike’s standout restaurant has charmed patrons at the Sheraton Grand Los Cabos Hacienda del Mar with its Pacific Rim concept, ocean views, and dramatic design. Pitahayas—both space and the menu—got an updated look in 2015. A newer focus on blending Mexican and Asian flavors has allowed Romeike to show off his culinary creativity. Duck lumpia (like a spring roll) is served with a papaya salsa; a taro tostada comes topped with carnitas (braised pork); and tuna poke comes with watermelon and chili powder. For special occasions, consider the Cava de Santiago wine cellar, which houses some 400 vintages. The restaurant’s bar also offers Social Fridays, when limitless drinks can be had for a not unreasonable tariff.

    With its historic pueblo-inspired architecture and Spanish Revival style, this landmark Santa Fe hotel looks like it dates back much earlier than 1922, when it was designed by two of the area’s top architects: Mary Elizabeth Jane Coulter and John Gaw Meem. And, in fact, despite the imposing building’s relative youth, the legacy of La Fonda dates back to the 1600s. An inn or hotel has stood on this site since the city’s founding at the end of the Santa Fe Trail.

    Now, as one of the city’s most iconic luxury hotels, it presides over the historic Plaza and boasts some of the best views of the city and surrounding mountains and desert. Thanks to a complete (and completely faithful) renovation in 2013, rooms are now bright and airy, outfitted with handcrafted furnishings, local artwork and textiles, energy-efficient casement windows, and all the luxuries expected of a modern grande dame. The fine-dining courtyard restaurant is one of the most romantic dining destinations in town—trumped only by the rooftop Bell Tower Bar, whose sunset views and margarita menu draw locals and in-the-know visitors alike. Throw in a heated outdoor pool (open year-round, a rarity in Santa Fe) and a decadent spa, and it’s no wonder that La Fonda has maintained its reputation for superlative hospitality for so long.

    The massive ruins of Caracol were once a major Maya metropolis in prehispanic Belize, during the Classic Period. The majority of the site is yet to be reclaimed from the forest, but the structures that have been uncovered are truly impressive. The main structure is still the tallest building in all of Belize and places you “on top of the world.” The jungle surrounding the site is teaming with wildlife, and a pair of binoculars come in handy. The ruins are located south of San Ignacio along the rough Mountain Pine Ridge Road. There are several worthwhile stops on the way, such as Rio Frio Cave and Rio On Falls, but the best stop is a cool libation at the Blancaneaux Lodge Bar.

    Just to the southwest of Tucson, on the San Xavier Reservation, sits the late XVIII-century Mission San Xavier del Bac, one of the finest examples of Spanish colonial architecture in the U.S. The combination of late Baroque and Moorish-inspired design is a beacon any time of the year, but on this winter day, the flooded fields worked some magic—panoramas of reflected landscapes are almost nonexistent in southern Arizona! The ‘white dove of the desert’ is the oldest intact European structure in Arizona, and it still serves as a parish church for the Tohono O’odham people.

    The Willcox has been an institution for more than a hundred years—so much so that it dropped the “hotel” designation from its name. Located just steps from the sprawling urban forest of Hitchcock Woods, The Willcox caters to the horsey set, with an equestrian theme throughout the rooms and even a horse concierge. Old-fashioned keys open the doors to the 22 rooms, each with with four-poster beds warmed by cashmere-covered hot water bottles, and pets are welcomed with their own “Guest of Willcox” tag. It’s not uncommon to see horses prancing down the streets of Aiken, once the headquarters for the wealthy Winter Colony riders of the 19th century, and the hotel is happy to indulge your passion to gallop, trot, or just enjoy a carriage ride. A saltwater pool and a range of spa services soothe tired muscles after a day in the saddle or tooling around the small-town center. The lobby bar and restaurant are favorites with locals, serving an American menu with a few Kiwi touches from the New Zealand–born chef.

    Many Central American countries have coasts dotted with mangroves, a brackish ecosystem that is a sheltering habitat to numerous flora and fauna. Visitors can kayak through many of the mangrove systems, getting an eye-level view of the mangroves’ spreading root systems and being on the look-out for everything from crabs to crocodiles. Barra de Jiquilisco and Barra de Santiago are two of the navigable mangroves, and visitors who want to explore them can hire an outfitter or guide for a day trip.

    Most people travel to Canada in the winter to ski the famous big resorts like Whistler and Lake Louise. But 20 minutes from downtown Banff is a little “hill"—as the Canadians like to call their mountains—called Sunshine Village. The resort, located on the continental divide of the Canadian Rockies, spans more than 3,300 acres and has three mountains to explore. I visited in mid-March (locals say March conditions are often best) and we had perfect powder. The resort stays open through late May for those looking to extend their ski season. The ski-in, ski-out Sunshine Mountain Lodge is a perfect base for those who want to get first chair in the morning. Rooms have great views of the surrounding mountains and loft-style rooms with Murphy beds are perfect for couples or families. I liked the lodge’s unique offerings such as hot tub bingo night and new yoga and ski retreats. The mountain has terrain for all levels. Serious skiers and riders will want to go off-piste and experience Delirium Dive. A check-in gate ensures skiers and riders are equipped with a beacon and safety gear before they tackle the Dive. On Lookout Mountain, you’re likely to find powder stashes on some of the steep tree runs such as Little Angel, and Horot’s Revenge. And don’t miss the frozen waterfall on the way down the Waterfall run off the Wawa chair.
