    Over the last several years, Madrid‘s river redevelopment has really come together. What used to be sludgy is now sparkling, with walkways and bridges intertwined along the river, with kids playing, people jogging and chatting. A great place to get away from the crowds, even in the winter. Tourists don’t really know about it, which makes it even better. Go at sunset so you can watch the lights of the city come on and the moon rise. Start on the south side, by the new Matedero arts center and move your way up north to the Royal Palace. Delightful way to spend an early evening.

    Cal Anderson Park (named after Washington’s first openly gay legislator) is located at the Pike/Pine nexus of gay-friendly, hipster-filled Capitol Hill. With plenty of grassy lawns for picnics, reading, or playing bocce ball, it’s no surprise that crowds flock here whenever there’s a sunny day anytime of year. It’s also conveniently located near some great shops and restaurants: Molly Moon Ice Cream, Rock Box karaoke, Cure, Cupcake Royale, Unicorn, Elliott Bay Book Company, Everyday Music, and all the cheap eats on Broadway. Grab some takeout or a coffee to go and head to the park to admire the fountain or enjoy some people-watching. On Sundays, the Broadway Farmers Market is just a block away on Broadway.

    Cafe Sevilla is located in the downtown Gaslamp district in San Diego. It’s a great place to hear live music while sharing tapas and drinks with friends. The interior is huge with flags hanging from a 20ft ceiling, a bull on the wall behind the bar, and other Spanish-inspired decor. The owners are from Spain, and this restaurant has been here in San Diego for over 20 years. On weekends, it’s a good idea to make reservations for dinner since it does fill up quickly. There’s a little stage that is always occupied by flamenco, rumba and/or Spanish guitarists. If you want a little more quiet, ask for a table on the second floor—you can still hear the live flamenco, but it feels a little more private. Or, you can sit outside on the patio for people watching. 5th Ave in San Diego is a hopping little place, and Cafe Sevilla is a great start to your evening.

    When visiting Kuala Lumpur, it is impossible to not see the Petronas Towers. Any architect knows that when you build the world’s tallest skyscraper, it will only hold that title for a while, and then it will be surpassed. So what better way to maintain rarefied status than to build, not one, but two mighty towers and then put a bridge between them. The best part about the towers though, is that they turn the lights off precisely at midnight every night. We stood at the base of these majestic structures, and at the stroke of midnight watched as the lights clicked off down the height of the buildings. Even with the lights off, the Petronas Towers still look absolutely amazing. Much like a truly beautiful woman, the make-up (lights) merely accentuate the true brilliance that resides just below the surface.

    If you’re in San Pedro on a Tuesday or Thursday night, head over to Wahoo’s Lounge on Front Street for the weekly Chicken Drop. It’s definitely one of the most unique experiences you’ll have on your Belize vacation. Place your bets, watch the lucky person who gently blows on the chicken’s butt and sets him loose on the bingo like board. As you can probably gather by now, expect the chicken to wander around until he finds some lucky person’s number to poop on. Join in the festivities by yelling for your number, as the pot can easily get up to several hundred dollars (Belize). However, before you are quick to run up and claim your winnings – guess who has to clean up the chicken poop?

    The Review:
    Off the Pacific coast of Panama, near the border with Costa Rica, floats a lush island that indigenous people dubbed Palenque, or “sanctuary.” Once home to an ancient, pre-Columbian community, the island stood empty for hundreds of years—save for the all the wildlife, birds, and flora—until Ben Loomis arrived. For five years, the architect and designer lived on site, sleeping in a hammock by night and getting to know the land by day. Eventually, he put both his background and love for nature to use by creating this private island resort, dedicated to the principles of sustainable luxury.

    There are just eight beachfront casitas and one Villa Estate on the 400-acre island, so privacy is a given. Each of the 650-square-foot casitas has direct beach access, an outdoor tub, organic bath products, daybeds and hammocks, artisan-made furnishings, and a mini-bar stocked with local juices, snacks, and beers. Standout amenities include binoculars, a yoga mat, and a meditation cushion, plus a water bottle to use around the resort; Wi-Fi is free, but “island speed.” In addition to the main beach that fronts the casitas, guests have access to six other sandy stretches, along with nature walking and hiking trails, a main infinity pool, a spa, and complimentary use of kayaks, snorkels, and paddleboards. Meals are full of fresh, sustainably sourced ingredients and vibrant Panamanian flavors; rates include three meals a day, along with snacks and non-alcoholic drinks. An Island Foraging experience brings you closer to the culinary process as you learn to fish using ancient techniques, pick goodies from the island’s orchards, and hunt for wild ingredients along rainforest trails. Off-island excursions like whale watching, island hopping, and more can also be arranged, but with the run of a place like this, it’ll be hard to leave.

    Turneffe Atoll’s sprawling central lagoon is a beautiful natural playground marked by thick mangrove islands and littoral forest, and hosts dozens of remarkable marine species – including crocodiles. Yes, the central lagoon is pretty to look at and one of the best places in Belize to watch the sun rise, but I wouldn’t recommend you go for a dip. Crocodiles spend their days escaping the heat in the thick mangroves, then swim out into the open ocean at dusk to feed. I saw two crocs during my time on the island; a very young juvenile whose curiosity had brought him right up to the sandy patch of beach behind the Blackbird Caye Resort, and a suspicious adult who kept his distance (thankfully). Still, the lagoon is a great place to spy on the aforementioned crocodiles, photograph marine birds, and more.     This little private church is probably the most photographed stop in Oia. Our rented house was right next to it but lower on the steps so we could see lots of people getting lots of photos. Married couples would take their photos next to it, photographers were offering workshops that included this spot. I woke up at 5.30AM to wonder when nobody else was around. Best time of day to walk around this very busy tourist destination.

    While the waters of the massive Great Salt Lake are too salty to sustain anything more than algae, brine shrimp, and brine flies, the wetlands on its north and east shores are critical habitats for millions of migratory birds, making it a top-notch bird-watching destination. There are three state parks adjacent to the lake, including the Great Salt Lake Marina, where you can launch sailboats and kayaks. And if the water level is low enough, you’ll be able to see the famous Spiral Jetty, a 1,500-foot-long art installation made of salt-encrusted basalt slabs.

    This lovely state park stretches along the rugged volcanic shoreline of western Maui, three miles from Hana. It’s best explored on the 2.2-mile hike that starts at the black-sand beach and follows the dramatic coast, passing lava tubes, rock arches, blowholes, and Polynesia’s largest heiau (an ancient Hawaiian temple) along the way. Avoid standing too close to the geysers as well as the lava benches near the ocean, which can crumble easily, and watch out for high surf. If you’re looking to cool down after your trek, take the loop trail to the park’s freshwater caves, where you can explore two separate chambers (the first tends to be clearer and more inviting).

    In the heart of Toruń’s Gothic, brown-brick Old Town—which itself looks like it was built out of gingerbread—lies the Living Museum of Gingerbread, an interactive museum that opened in 2006. Toruń’s gingerbread tradition goes back much further, however, with the first mention of the sweet dating to 1380. At the museum, you’ll learn the story of Toruń’s famous gingerbread while working under the watchful eye of the Gingerbread Master to prepare the dough, bake the bread in traditional wooden molds, and, finally, decorate each loaf. After going through the fun process, you might agree with Frédéric Chopin, who wrote of a visit to Toruń, “Gingerbread impressed me most. Although I have seen the fortifications, and the famous town hall . . . all these cannot surpass the gingerbread, ah, the gingerbread!”

    In Carnac, row upon row of some 3,000 upright stones cover three fields (Ménex, Kermario, and Kerlescan), creating a magical atmosphere. Though the exact meaning and purpose of the prehistoric stones—some dating as far back as 4000 B.C.E.—remains largely a mystery, a number of them were revealed to be tomb markers, concealing remains and funerary objects.

    Start your visit at the Maison des Mégaliths, where you can watch a film about the site in English. The stones are now fenced off to the public, so it’s best to book a guided tour if you want to fully experience the site. When you’re done exploring, take the 10-minute walk to the Museum of Prehistory, which houses one of Europe’s finest collections of prehistoric objects.

    Barba offers a fresh take on fast food, serving tasty items like octopus and shrimp burgers, anchovy sandwiches, and fried calamari, all made with today’s catch. Located on a small side street off Stradun, the shop is tiny and friendly—the perfect pit stop during a day of Dubrovnik sightseeing. Snag the prime table by the front window and watch the rivers of people entering town through the Buža Gate as you eat. Then, be sure to contribute to the restaurant’s growing collection of wooden forks, on which customers from all over the world write messages commemorating their travels.

    The queue is long and you’ll have to eat standing up, but this spotless hole-in-the-wall does some of the best souvlaki in town. If you get antsy while you wait, be mindful of the multiple signs behind the counter saying: OXI AGXOS (NO STRESS). You won’t find frozen fries or garlicky tzatziki here. Just perfectly grilled pork skewers wrapped in a grease-free pita and garnished with sliced tomatoes, onions, parsley, a dollop of yogurt, and plenty of paprika. Don’t worry if you confuse it with the other Kostas souvlaki joint just off Agia Irini Square on Vassiliki Street, where the thing to order is pita bread stuffed with meatballs and spicy tomato sauce. Pull up a plastic chair and watch hipsters drink craft beer while you dribble tzatziki down your chin.

    Few dishes exude more Swiss tradition than raclette. For more than 700 years, locals have been gorging on this smoky, often nutty cheese in mountain chalets across the country. For a deep dive into the dish’s history, head to tiny fromagerie La Tzoumaz, where Yohann Magnin works for four months every summer making the drool-inducing cheese. Visitors can watch the entire process, from swirling and heating the milk to packing the cheese into a mold, then venture into the back room to get a sense for the aging process (don’t forget to grab a sample). Magnin is the only cheesemaker in town and his factory sits opposite Maison de la Forêt (House of the Forest) as you enter the village from the valley.
