    The peak called Monserrate towers over central Bogotá and lends its name to the church that tops it. Perched more than 10,000 feet above sea level, the sanctuary—dedicated to the Passion of Christ—has beautiful gardens showcasing marvelous highland vegetation, and the city views from here are spectacular (sunsets are especially recommended). Ascend Monserrate by cable car, via railway, or on foot (this last is only for the fittest and those already acclimated to the altitude). That beautiful white house on the mountainside is Casa Santa Clara restaurant, a better-than-expected, special-occasion-suitable venue at which to try traditional Bogotá favorites like ajiaco, a thick potato-and-chicken soup.

    Bright and early, just before the sun comes up over Mount Bromo, Mount Semeru and Mount Batok, with ample rolling fog and an epic eruption for good measure. We climbed Mount Penanjakan in our Toyota 4x4 pre-dawn in the headlights of some 1,200 other vehicles. Once at the viewpoint my travel partner and I decided against the same shooting vantage as everyone else - all 3,000 tourists, gah - and climbed down the hill for a better look (and a few square feet to dig in our tripods). As soon as the sun started to shine and illuminate the volcanoes in the distance, all the nuisance and discomfort of the day, all the pain and suffering associated with actually making the trip to Bromo, it vanished. We spent the next hour shooting one of the most incredible sunrises I have ever witnessed. Getting here is a bit of a package-tour nightmare, but so very much worth it in the end.

Located in the Santa Barbara Fish Market Building, in the heart of the city’s Funk Zone, the innovative restaurant combines a farm-to-table ethos with a family-style approach. During most months, the outdoor courtyard seating is as convivial as the tables in the dining room. The menu of small plates is organized by their ingredients’ places of origin (farm, ranch, or ocean): crispy brussels sprouts include sweet medjool dates as well as spicy serrano chilies; pickled fennel and compressed Granny Smith apples accompany the grilled Kurobata pork belly; and passion-fruit vinaigrette and fried avocado enhance the flavor of Japanese hamachi collar. Larger platters are meant to be shared, and restaurant regulars often choose one or two (the Baharat spiced cauliflower and Israeli couscous is a favorite) along with several smaller plates. Pro tip: While it’s tempting to fill up on the herbed popcorn that’s delivered to your table the instant you’re seated, slow down, order a craft cocktail, and make sure you save room for the main event.

    The Review:
    A member of Historic Hotels of America, the Vinoy Park Hotel opened in 1923—a Mediterranean Revival property overlooking Tampa Bay, designed for America’s elite. It served as a training facility for the Army Air Corps for a brief time in the early 1940s, but reopened as a hotel in 1945 and continued operations until 1974, when it closed in disrepair. Following a $93 million restoration and expansion in 1992, the hotel reopened once again as the Vinoy Renaissance, complete with a new guest tower and an 18-hole golf course designed by Ron Garl.

    Today, the Vinoy also features 360 guest rooms and suites, complete with well-lit workspaces, pillowtop mattresses, and Aveda bath products, as well as two swimming pools (one heated), a spacious tennis complex, a 5,000-square-foot fitness center with complimentary workout classes, and an elegant spa offering massages in poolside cabanas. Thanks to the hotel’s waterfront location and private marina, guests can even charter a boat for the day and explore the bay. Dining options range from sushi on the Veranda Patio to farm-to-table fare at Marchand’s Bar & Grill. The culinary standout, however, is Paul’s Landing, named for a Navy carpenter who once fished, farmed orchards, and cured meats and seafood along the St. Pete waterfront. At the top of the hill, near a memorial to the British infantry regiment that captured Morne Fortune in 1796, you’ll find a great spot for a panoramic view over Castries and its harbor.

Alternatively, explore the Simatai Great Wall, which retains a more authentic feel—save, of course, for the fake water town at the bottom. Even more remote is the Jiankou section, which is largely unrestored, so book with an experienced group like Beijing Hikers or Wild Great Wall.
