    Le Bernardin, on 51st Street between Sixth and Seventh avenues, is one of the handful of New York restaurants that is regularly awarded four stars by the New York Times (it is also one of five restaurants in the city with three Michelin stars). Chef Eric Ripert’s specialty is fish, and the menu is divided into three categories: “almost raw,” “barely touched,” and “lightly cooked.” If you like your tuna cooked medium, this isn’t the right place for you. Ripert often finds his inspiration in Japanese cooking, with his sashimi and light broths, and adds some Latin American influences, in his ceviches and some other dishes. The fish is always allowed to take center stage, and typically any sauce is merely intended to accent its flavors. The dining room has an understated, contemporary style with light-wood walls and high ceilings. Unlike some celebrated chefs, Ripert has chosen not to build a restaurant empire, increasing the odds that on any visit he will be at Le Bernardin, presiding over its kitchen and dining room.

    Schwa is kind of a difficult place to describe; it’s such an eclectic bundle of everything, you just have to experience it for yourself. The exterior of the building makes it look like it should be condemned, but it’s actually structurally sound. Upon entering you’ll be greeted by the always hustling, yet always friendly staff, who will get you to one of the only 26 seats in the small but comfortable dining room. Music—usually heavy metal or rap—is played at a pretty high decibel level, and actually gets inside your brain at times, but for some odd reason it totally works in this place. Overhead the light fixtures are mini works of art that seem literally cobbled together, and to get to the bathroom you actually walk through the kitchen. But once you indulge in all that is unique and wonderful about the place, then you can settle in and indulge in the Michelin-starred food. Anything is fair game here, from Fruit Loop–inspired courses to a curried paste that came in a real-deal petri dish, to the crab that was perched on top of a glass of smoke (you removed the top to inhale the flavored scents—and then ate the crab). And we were told not to play with our food as children! Schwa’s chef Michael Carlson surely did not heed that advice growing up, and as a result we get to reap the benefit of his creative food fantasies coming to life.

    Few restaurants more than 150 years old can be called trendy, but in innovation-crazy San Francisco, there is novelty in the classics, and Tadich Grill is the classic. The late Chronicle columnist and unabashed San Francisco-lover Herb Caen was also a frequent visitor. There’s a martini named after him, made with vodka, or as he called it, Vitamin V. The serious nature of the restaurant’s wood paneling, brass fixtures, and waiters in starched white aprons is matched by the food. No need to tinker with classic recipes for fried sand dabs or crab Louie, and the oysters and Hangtown fry are fine the way they have always been. The cioppino is by far the most popular dish on the menu, with about 27,000 bowls dished out a year. People come to Tadich Grill because they know what they’re getting: friendly service, great seafood, and a taste of San Francisco itself.

    The latest spot from Elena Reygadas, chef and owner of the lauded restaurant Rosetta, Café Nin has taken over the second location of her acclaimed bakery, Panadería Rosetta. Named for author Anaís Nin, the menu is eclectic and changes often. Reygadas’ signature pastas share space with dishes like Thai-inspired curry and crab and mango tostadas, and somehow it all works. Grab a seat on the breezy patio, the space feels like a funky Parisian bistro with all the crumbling charm of a Mexican hacienda. Oh, and the pastry counter is open all day.

    Sandwiched between the White House, the U.S. Treasury Department, and the Willard Hotel, this legendary spot since 1906 has catered to visitors, power brokers, celebrities, sports icons, and literary figures with its stellar food and service. Inside, frames upon frames of such individuals surround the restaurant. The outdoor dining area feels cozy amidst the hustle and bustle of Pennsylvania Avenue. Brunches are relaxed and feature a wonderful blend of starters, entreés and sides such as fluffy crab omelette, salmon tartar, shrimp n’ grits, and poached eggs in sausage.

    I’ve eaten at Yellowtail more times than I can count. It is my absolute favorite food (and it’s extremely close to Bellagio’s north valet, so I can wear my very highest heels). Before you even look at a menu, order the tuna pizza—trust me. Then dig into the tastiest carpaccio starters, delicious crab hand rolls, and a variety of sushi, including one made with Pop Rocks. Akira Back recently opened a second restaurant, Kumi, at Mandalay Bay, so now there are two hot spots to pay homage to my favorite chef in Vegas.
  • At Paradise Beach Hotel Restaurant on Villa Beach, about 15 minutes south of Kingstown, you can get a meal of local specialties like crab back, Creole chicken, grilled fish, and lobster straight from the holding tank, along with a picture-perfect view of Young Island. There’s live music and dancing several evenings a week, and the Friday night barbecue (called “Grillin’ with the Captain”) is an island tradition.

    Chef Chuck Hughes’ first flagship restaurant remains one of the best good-time spots in Old Montreal, featuring a blackboard menu full of seasonal dishes and insane cocktails. The Caesar is a must-try and comes with a salad’s worth of vegetables and a whole snow-crab leg sticking out of a monster mug. After feasting on lobster salad, short ribs with cauliflower mash, or pan-fried sea scallops with carrot butter, hang out in this dimly lit joint and watch the night turn into a party, with the drinks flowing and the music thumping louder and louder as the cooks and waiters from nearby restaurants file in after their shifts.

Start with the signature Monkeypod Mai Tai: A potent blend of Old Lahaina rums and orange curaçao, graced by honey foam. Then try the Thai-inspired coconut crab cakes, followed by the oven-roasted Jidori chicken with goat-cheese polenta or the wasabi-crusted fish with passion-fruit beurre blanc. Vegetarians won’t go hungry either, thanks to dishes like coconut corn chowder sweetened with local lemongrass and slow-roasted beets with tomato-cilantro salad and tempura asparagus. Often voted the island’s top restaurant by Honolulu Magazine, Beach House has also won a steady streak of awards from Wine Spectator.

    Ralph Brennan’s Red Fish Grill pairs eclectic, of-the-sea décor with some of the best seafood in town. Don’t miss the BBQ oysters with Crystal Hot Sauce and blue cheese dressing. Next door, Bourbon House is known for its towering plateaux de fruits de mer, which comes with oysters with caviar, boiled Gulf shrimp, mussels, crab fingers, and seafood salad, and its impressive bourbon selection. Donald Link’s latest endeavor, Peche, is to seafood what Cochon is to pork. On Magazine Street, Casamento’s is an institution for its oyster loaf and fried seafood platters, plus it’s fun to watch the hulking shuckers tackle piles of just-off-the-boat bivalves.

    Some of the best snorkeling we did on Oahu didn’t cost a cent—including Sans Souci Beach, a walkable distance from the Waikiki hotels and close to the aquarium. But why pay to get into the aquarium when you can wade right into the water and see all kinds of colorful needlefish, triggerfish, butterflyfish, and more? This smallish, family-friendly beach is low-key and fairly quiet, considering its touristy location. Swim over by the rock wall for the greatest variety of fish and tiny black crabs. And don’t forget your underwater camera! (This is not a great picture, but at least you can see the aquatic diversity on display.)

    Opened in 2016, The Dapper Goose stands out in meat-loving Buffalo with a menu that highlights locally sourced produce. Divided into small and large plates, dishes range from beetroot tartine with horseradish cream cheese and crispy chickpeas, to fettuccine with mushroom Bolognese and bread crumbs. The menu isn’t entirely vegetarian, however, and options like the pork shoulder and confit duck are exceedingly popular. On Sundays, there’s a limited brunch menu with such creative fare as pork terrine, crab toast, and chicken wings with fish sauce caramel.

    This two-level Cantonese palace—connected by an escalator—is lined with tanks of live fish, crustaceans, and bivalves, which the staff will stir-fry, steam, salt-and-pepper, and douse in XO sauce to your heart’s delight. There are many reasons the Chinatown establishment is beloved among in-the-know locals and hospitality veterans, and they extend from the warm, welcoming service all the way through the exquisite live abalone sashimi, mud crab hot pot, and private reserve range of wines. For a Chinese food adventure, arrive late (this place is open until 4 a.m.) and order straight from the live tanks. At least, that’s what the rock stars, politicians, and CBD chefs just getting off work do.
