    Every evening on the North Shore of Kauai, diners pack Bar Acuda for Mediterranean-inspired tapas that highlight local products. “The key is taking the finest ingredients and not doing much with them,” says chef Jim Moffat. He frequently changes his seasonal menu and sources such produce as citrus, avocados, fennel, and herbs from his home garden and the Hanalei Elementary School Garden, a program for local students that he helps run. Moffat often shops at farmers’ markets, but locals know they can also sell their fruits and vegetables at Bar Acuda’s back door. One firefighter even drives his 30-foot ladder truck to drop off cases of tangelos. “If you have a vacation rental and there’s something ripe, bring it to me,” says Moffat, who promises a gift certificate in exchange.     Chez Baptiste has been open since 1922 and although it recently underwent a rejuvenating identiity change, it still holds that old-world mystique that only places this old can have. Times have changed. Fashion has changed. Residents have changed. And the people to go into Baptiste too. Especially those who are hockey fans -- hockey players are now paid millions, and they even wear a mask. To think of how different things were when Baptiste open is mind-boggling. But one thing I’m certain is that the staff still serve the finest brews with the same sincere smile at their predecessor. Often described as a “best friends hangout”, the watering hole is mostly frequented by regulars, groups of friends that simply want to grab a few pints and make new world domination plans together (that’s what friends do, right?) At Baptiste, the stress is left out of the door and that’s when the fun starts. Good times ahead, folks.

In London’s Covent Garden, all the eating is done at a long marbled bar, lined with red leather stools, and there are no bookings: you get here first, you get served, all the while watching the chefs at work. The idea is that it’s just like being in Spain (the inspiration for Barrafina was Barcelona’s Cal Pep), and it really is: the atmosphere is chaotic and the food comes from all corners.
