The single sweeping deal (reputed to cost $300 million) included the exquisite Four Seasons Resort, overlooking a marine reserve. The resort’s dining experience par excellence is Nobu, where celebrity chef Nobuyuki Matsuhisa presides over the perfect marriage of Japanese dishes and Peruvian ingredients. Kick things off with crispy Brussels sprouts or scallops with jalapeño salsa, then move on to sushi, hand rolls, or Wagyu beef. Or go old-school, if it’s on the menu, and order the mochi pound cake backed by yuzu-cherry jelly and peanut butter ice cream.

    In 1964, a 9.2-magnitude earthquake—the second most powerful ever recorded—ripped through the south coast of Alaska, devastating much of downtown Anchorage. After surveying the damage, real-estate developer Walter J. Hickel, who would later go on to serve two terms as the state’s governor, vowed to build Alaska’s biggest and best hotel. The result, a massive 546-room complex spread out over three towers, is still the city’s most luxurious, known for its attentive concierge, excellent athletic club, and wealth of dining options. The elegant Crow’s Nest restaurant offers dishes that incorporate French technique with regional ingredients, like king crab–studded bouillabaisse, along with a 10,000-bottle wine collection; on a clear day, 360-degree views include the iconic peaks of Denali. One more reason to visit: The property was inducted as a member of the Historic Hotels of America in 2016.

    Right in the center of town, Capri Tiberio Palace mixes la dolce vita glamour with a globe-trotting sensibility that’s equal parts quirky and elegant. Wanderlust-inducing knickknacks such as globes, vintage trunks, and an eclectic collection of art stud the public spaces, and bookshelves are stocked with coffee-table tomes from the publisher Taschen. A white baby grand provides the soundtrack for aperitivo hour at the Jacky Bar, where wicker poufs, striped blue-and-white banquettes, and Panama hats repurposed as wall decor signal vacation vibes; things are slightly more reserved at the terrace restaurant, a formal space whose brightly colored dishes (think seared scallops with almond sauce and beef tartare with chestnut cream as well as kosher fare) are rivaled only by the panoramic views of the island’s craggy peaks coast and azure sea. And the indoor-outdoor swimming pool, though small, is a savior in the summer heat.

But at this all-inclusive resort surrounded by 140 acres of undeveloped land on the island’s west coast, guests feel “their” beach belongs almost exclusively to them. The hotel is a 35-minute drive from the airport, and it’s accessed by an unpaved road. Seclusion is a big part of the appeal at this adults-only (except in July and August) hideaway. Its 27 minimalist but spacious cottage suites begin on the beach and are scattered up a hillside that overlooks a picture-perfect bay. All the cottages have outdoor showers, king-size beds with mosquito netting, and at least a partial view of the sea. Expect to see a lot of honeymooners and other romantically inclined couples here, but don’t expect to see much of them, except at meal times, when the foodie-approved mix of European, American, and Caribbean dishes draws out even the most recently married.

    For guests at the Ritz-Carlton, Dove Mountain, there’s no mistaking that they’re in the High Sonoran Desert of Southern Arizona. There are the saguaro cacti, the cooing quail in early morning, the black-velvet skies at night, and, rising directly behind the resort, the Tortolita Mountains, whose granite boulders are inscribed with graffiti-like messages that have been there for a thousand years. Visitors so inclined can get equally lyrical about the 27-hole Jack Nicklaus–designed golf course, the 17,000-square-foot spa and fitness center, the three swimming pools, or the dishes made visible in the open kitchen of the resort’s main restaurant, the Core Kitchen and Wine Bar. The pervading feeling is that this is a place people have been coming to for refuge, rest, and replenishment for a very long time (since before 2000 B.C., according to some experts).

Buba’s own two daughters, nephews, cousins, and other miscellaneous family either host, help in the kitchen, play dj, man the bar, or simply greet visitors from their porches with welcoming, West Indian waves. This homegrown approach extends beyond hospitality to deliciously impact the food as well. Nearly every fruit, vegetable, and herb used in the dishes at Buba’s are all grown on the sloping overgrown gardens surrounding the restaurant. The result is a quintessential island restaurant with no real set menu. Instead, expect the freshest ingredients of the day lovingly coaxed into a collection of authentic Caribbean fare like rice and peas, stew chicken, steamed veggies, salad, and more.

    This Playa del Carmen restaurant takes its name from a traditional Mexican dish known as aguachile: chili-marinated shrimp with lime juice, onion, and sometimes other ingredients that lend it a strong, spicy-citrus flavor. With its open-air setting and laid-back, beachy style, plus a location a few blocks from bustling 5th Avenue, Los Aguachiles is in fact more local hangout than tourist joint. There’s an extensive menu of other casual Mexican seafood, most notably delicious tacos and tostadas (crispy tortillas piled high with traditional ingredients), as well as mezcal cocktails and chamochela (michelada-style beer mixed with sauces, then rimmed with chili powder and decorated with a shrimp).

    Calistoga Ranch sits in a private canyon of the ridge that makes up the eastern side of the Napa Valley. From this secluded spot, the entire valley floor unfolds. On windy nights, you might spot hawks surfing thermal winds just outside your balcony. But the views aren’t the only selling points of this ultra-luxurious 157-acre resort. Instead of traditional rooms, Calistoga Ranch is composed of 50 freestanding one- and two-bedroom guest lodges. Each upscale-yet-approachable lodge resembles a wooden cabin, with sweet-smelling cedar, indoor and outdoor showers, and a deck that opens to the mossy forest. The resort’s calendar is packed with activities, including bocce, wine-blending classes, and painting and photography workshops. Last year, the resort started offering guests a formal guided hike to Davis Estates Winery with a picnic lunch along the way. The pool area has earned numerous awards for its laid-back design. The on-site spa specializes in hydrotherapy with soaking treatments, while the property’s largest restaurant, dubbed The Lakehouse, overlooks Lake Lommel and serves a host of dishes made of all local produce. Try the halibut with piperade, carrot, fennel, and scallops.

    You’ll never sleep anywhere closer to Machu Picchu than Belmond Sanctuary Lodge—it’s adjacent to the site entrance, and the only hotel on the mountain. In fact, the lodge is built on the former staging area for American explorer Hiram Bingham, who rediscovered the “Lost City of the Incas” in 1911. You’ll pay a pretty penny but consider the price a once-in-a-lifetime splurge. If you arrive the day before your visit to Macchu Picchu on the bus up from Aguas Calientes, you can be at the gates right when they open at 5 a.m. and get a head start on most of the crowds—and the sunrise. And if you’re coming off a days-long hike on the Inca Trail, the spacious showers and plush robes will be the best you’ve ever experienced.

    There are only 31 rooms here, some with terraces and mountain views but all with exquisitely comfortable beds and marble bathrooms. The light-filled restaurant—only open to guests—serves both international and Peruvian dishes, and the bar is a great place to enjoy a pisco sour after a day of exploring the ruins. If you really want to stay in style, consider arriving by the elegantly restored Belmond Hiram Bingham train from Cuzco—the hotel offers packages.

    Built in 1934 from a couple hundred pine boards, the Dürkheimer Fass is the world’s largest wine barrel, and often described as the heart of the German Wine Route. Constructed by barrel maker and vintner Fritz Keller, it could feasibly hold 449,092 gallons of wine, but has never actually contained any liquid. Instead, it functions as a unique wine bar and restaurant, conveniently located on Bad Dürkheim’s main square.

    Surrounded by vineyards, the small town of Bad Dürkheim is of course famous for wine, but it’s also known for its annual sausage festival, which takes place over two long weekends in September and is said to be the largest wine-related festival in the world. Additionally, the “Bad” in the town’s name indicates local wellness facilities, including thermal baths, a spa park, and the old Kurhaus, a former sanatorium that now houses a hotel. If you’re feeling energetic, you can hike up to Limburg Monastery, which was built in the 11th century and today hosts concerts and theater performances.

    Canada’s first aboriginal arts hotel opened in 2014. Part luxury hotel and part social enterprise, Skwachays Lodge ticks all the right boxes. On the luxe side: plush linens, Hypnos beds (the same as the British royal family sleep on), spacious rooms, and abundant on-theme extras including Spirit Bear coffee (the company works with the Tsimshian Nation) and aboriginal-owned Mother Earth toiletries. The social enterprise part: all profits from the hotel and its gallery, which doubles as the check-in and lobby, go into subsidizing 24 live-work art studios on the lower floors of the lodge. Each room is unique, decorated with custom-made reclaimed wood furniture and designed as a partnership between local Vancouver artists and First Nations artists, including Corrine Hunt (a member of the Raven Gwa’wina clan from Ts’akis, who codesigned the 2010 Vancouver Winter Olympics and Paralympics medals). BC First Nations themes of eagles, ravens, bears, whales, and the sun and the moon all feature strongly in the design.
