    While much attention is paid to the Japanese and Italian influences on Los Cabos cuisine, one of the very best spots in town is an Argentine entry. The low-key, low-lit courtyard restaurant Chamuyo features a dozen or so tables, a long bar, and a traditional Argentine grill. The steak-house menu sends you on a culinary adventure through Buenos Aires dance halls and the verdant pampas. Meat-stuffed Argentine empanadas (markedly different from the Mexican variety) are served oven-baked or fried, and make excellent starters. For your main course, try chef Marcelo Romby’s 22-ounce beef ribs, which he slow-cooks for more than four hours. Pair it with a bottle of Baja red and, if you can, save room for some first-rate alfajor cookies.

    Rio lacks São Paulo’s strong Italian traditions. Perhaps that’s why some of Rio’s best pizza in fact comes from there—like Pizzaria Bráz, if you can judge by critics and mad-crazy crowds that pack into this spot on the Jardim Botânico district’s liveliest street. The pizzas start as a thin, wood-smoked dough and then are topped with mozzarella and a sauce made from a careful selection of tomatoes, and sometimes involve elaborate toppings that add up to capreses, the classic Braz, or even more daring recipes like those with wild-game cold cuts. Appetizers, too, keep ’em coming back (pão de linguiça, a divine sausage bread, for example); and you’re served a capital chopp at your table or even as you wait in line at the door.

    Huahine is home to the most extensive collection of pre European marae (traditional temples) in all of French Polynesia. These are found at Maeva, which is about 7 kilometers from the island’s only town, the sleepy port of Fare. Prior to European arrival, Maeva served as the seat of royal power on Huahine and you’ll find the 30 excavated marae (many of which have been restored) scattered among the village’s modern buildings along its shoreline and up the side of Matairea (Pleasant Wind) Hill. There is a designated walk around the site, which starts at the water’s edge and then leads up the slopes of Matairea Hill, where the most marae are located. It takes about two hours to complete. Make sure to bring plenty of water. You can pick up a brochure outlining the walk and what marae you’ll see along the way from the small archeological museum at the water’s edge. The museum also tells the story of the excavations which began in the 1920s.

    Most visitors to the Philippines will learn something about the country’s Spanish and American colonial history; fewer will learn about the people who were here before. The mountains of Luzon are still inhabited by distinct indigenous ethnic groups known collectively as the Igorot, or “people of the mountains” (though today some prefer to use alternative terms). Despite hundreds of years of colonial rule, some indigenous peoples managed to maintain—and still continue—their traditional way of life. Sagada, a town in the Mountain Province, is a good place to witness this aspect of the Philippines. Many travelers check out the hanging coffins in Echo Valley, which are nailed to a cliffside and intended to bring the dead closer to heaven. But the real value of visiting Sagada is to interact with the Igorots and listen to their stories.

    Located on the breathtaking Snæfellsnes Peninsula, a couple of hours north of Reykjavík, Hótel Búðir has been operating since the 1940s and is one of the best places to stay in the region—as well as one of the best places to dine. The restaurant is simply decorated with wooden tables and chairs, lace curtains, traditional paintings, and—the main draw aesthetically—huge windows that look out onto the magnificent landscapes of the peninsula. Framed in those windows are moss-covered lava fields, the glistening ocean, and the Snæfellsjökull glacier itself. The gourmet menu focuses on local goods: fresh fish and meat (lamb, veal) from nearby farms, with fresh, seasonal vegetables. Staff are welcoming and always happy to guide you through the very decent wine and cocktail lists.

    There’s a strong connection between the Rocky Mountains and the Himalayas, with climbers going back and forth, so it should be no surprise that Nepalese food has made its way to Colorado. Opened, run, and operated by members of the Sherpa people, the Sherpa House in Golden is the way to experience traditional Nepalese food without having to buy a ticket to Nepal. From the staple dal bhat (lentils and rice) to more exotic dishes and flavors, you can delve into the cuisine gently or just go for it. If you want to try it all, be sure to arrive hungry, order the sampler platter (or all-you-can-eat lunch buffet), and let the flavors of the Himalayas amaze you.

    The Blue Lagoon geothermal spa is one of Iceland’s most visited attractions, and its Lava restaurant has become a big part of making the experience memorable. Set into a lava rock face, the restaurant offers stellar views over the lagoon and serves international food created by Ingi Þórarinn Friðriksson and his team of experienced chefs in a modern, refined environment. The menu features traditional Icelandic dishes such as arctic char, lobster, and slow-cooked lamb, all updated with modern techniques and ingredients. There are also vegetarian dishes and an array of tasty desserts, set menus at lunchtime, and special menus for kids. The drinks list is impressively broad, with a good selection of cocktails and fine European wines should you want to make an evening of it.

    The Black Sheep Bistro, or BSB as the proprietors call it, is an upscale and modern restaurant that features a globally inspired menu. It’s one of the few establishments in Panjim (also known as Panaji) that can rightfully call itself farm-to-table: Most of its ingredients are sourced within a 100-mile radius. Menu favorites include clams and Goan chouriço, osso buco, and crabmeat ravioli. Housed in a traditional Portuguese-style building, BSB has an extensive wine list with an internationally trained sommelier to make pairing recommendations. Cocktails are available, too, with wacky names and taglines like “Hakuna Ma Vodka: It means no worries for the rest of your night!” Check out the menu during the monsoon time, when the wet season’s produce transforms what is available.

    To the northwest of central Copenhagen, much-photographed (though less frequently visited) Grundtvigs Kirke is notable as a rare example of a church constructed in the expressionist style. Architect Peder Vilhelm Jensen-Klint won a design competition for the church commission in 1913, but World War I delayed construction until 1921, and the structure was not completed until 1940. (Jensen-Klint was also responsible for the surrounding residential development.) Grundtvig’s monumental and severe exterior was inspired by traditional Danish churches, while the soaring interior is filled with light that pours through the clear windows on sunny days and illuminates the pale yellow bricks. A bit off the beaten path, the church is about a 20-minute bike ride from the city center. The trip takes longer if you use public transportation, so do as the Danes do and hop on a bike.

    If you’re in Madrid and in the mood for tapas, you might not know exactly where to go or what to taste. The Mercado San Miguel (metro Sol) takes away all that decision-making by providing you with a taste experience all under one roof. The old, derelict market was renovated just a few years ago and turned into an upmarket culinary emporium of sorts. It has more than 30 food stalls, each selling something different. My favorite is the bellota ham sold at Carrasco, but there is plenty more. You can sample sherries and Rioja wines at the wine bar, or do as Spaniards do and pick away at tapas as you make your way through the market. I highly recommend the croquettes, or croquetas, in one of the outside alleys: they have ham, chicken, shrimp, cheese and a variety of others. The more standard tapas area easy to find, like tortilla, and seafood is beautifully laid out for you to pick and choose. Right in the middle is my top-rated tapa place. I couldn’t find a name for it but it’s the largest counter, shaped like a U, and has everything from potatoes aioli to steamed razor clams, with everything in-between.
  • This dramatic two-tier waterfall, whose name translates as “Golden Falls,” a reference to the shimmering mist that sometimes appears around the falls, is one of Iceland’s most famous—which is saying something in a country abundant with waterfalls. Saved from oblivion during the 1920s (foreign investors wanted to dam the falls to create hydropower), the waterfall lies in a canyon on the Hvítá river and is backed by scenic snowcapped peaks. It’s possible to follow the falls as they flow downstream through the canyon, either via a walking trail or on a rafting trip, though it’s worth noting that the paths are wet and can be slippery. The visitor center has a canteen that serves up surprisingly tasty local dishes like lamb soup; there are also a gift shop and a local exhibition centered around traditional life in the area.

    Restaurants abound in the heavily touristed Gothic Quarter, but few of them are particularly good. Irati is one of the exceptions, a bustling spot popular with locals thanks to its excellent pintxos, traditional Basque tapas served on bread and speared with a toothpick. There’s seating in the back, but you’re really here for the experience of eating pintxos, which means standing shoulder-to-shoulder at the bar and helping yourself to the buffet of bite-size offerings. A sure bet is the jamón, lightly drizzled in olive oil, and the blue cheese topped with quince paste and walnuts. Save room for the hot snacks, like ham-and-cheese croquetas, which are brought out at regular intervals from the kitchen. And don’t toss your toothpicks—that’s how the bill is tallied.

    Preservation Hall occupies a worn Creole town house that was originally built as a home in the early 19th century, and that had evolved into an art gallery and performance space by 1961. (It was founded by a man of philanthropic bent who fretted that the great, aging New Orleans musicians no longer had a place to play.) It hasn’t changed much since the ‘60s—audiences cluster on benches or stand along the back wall to hear whomever is playing that night. Among the glories of New Orleans is traditional jazz, which is still very much alive here and never feels as if it belongs in a morgue—or even an intensive care unit. Check the schedule for upcoming acts, but don’t get hung up on specific performers; every night offers something worth stopping by for, and everyone leaves in a better mood than when they arrived.

    This tiny joint on the Big Island serves what many consider the planet’s best poke (raw-fish salad). In fact, Yelp ranked it No. 1 among America’s top 100 places to eat in 2014. Go traditional with just salt, limu kohu (seaweed), and inamona (a roasted-candlenut relish) for toppings. Or opt for a more contemporary twist with anything from onions to avocado aioli, perhaps paired with a side of crisp kimchi cucumbers. Be forewarned: This casual spot runs on island time so don’t expect exact adherence to business hours.

    The town of Gamboa lies at the center of a rain forest on the banks of the Panama Canal, where Lake Gatún and the River Chagres meet about 20 miles from the capital. Gamboa’s Summit Park is home to Panama’s national bird, the harpy eagle, as well as to Soberanía National Park and the Panama Rainforest Discovery Center, where visitors can walk the Camino del Oleoducto (Pipeline Road), a famous bird-watching path where up to 300 avian species can be spotted on a single day. Another tip might be sailing the Chagres in piraguas (local pirogues or handmade dugout canoes) that plumb dense jungles and give visitors the chance to interact with the Emberá Quera indigenous community. This historic community lives off fishing, farming, artisanal craft-making, and tourism. Native-led tours showcase various local customs such as dances as well as vegetable-dye body-painting techniques and their meanings (known as jagua), in addition to the people’s relationship with nature. Navigating the rain forest with a traditional Emberá botanist is a singular experience.
