    The natural fresh-water springs at Hierve el Agua were incredible (and cold!). The water is very high in calcium carbonate, and the minerals have formed these natural pools and crazy waterfall-like rock formations. The dusty road was somewhat harrowing, we had to make way for quite a few donkeys packing some serious loads. (And the formerly white rental car came out of the experience with a light yellow coating.) But the view over the valley of Oaxaca was unbelievable, and the meal we had at one of the stands was delicious. We were there in December; it was clear and warm and perfect.

    Simply decorated with antique furniture, cozy carpets, and wooden walls hung with photos, the restaurant keeps the focus firmly on the food. The traditional menu ranges from fresh sea bass, turbot, and red mullet to duck, quail, and desserts like a divine chocolate cake with locally grown cherries, while the wine list showcases some 500 labels (Claude still works as the sommelier). Should you want to make a weekend out of your visit, head upstairs to the associated hotel, which offers comfortable rooms and breakfast in the restaurant every morning.

While all the rooms have been refurbished, those in the main house retain much of their original architecture, lending them a certain vintage charm. The Chequit operates on a bed-and-breakfast model, and guests can either take their morning meal in the lobby or opt to have a lighter option sent straight to their room. While the target audience here is weekenders seeking an escape from New York City, the hotel is also a popular spot for weddings and retreats, with two meeting rooms and full catering services available from on-site Red Maple Restaurant.

    Like all of the best Spanish tapas restaurants, Barrafina has no tables. In London’s Covent Garden, all the eating is done at a long marbled bar, lined with red leather stools, and there are no bookings: you get here first, you get served, all the while watching the chefs at work. The idea is that it’s just like being in Spain (the inspiration for Barrafina was Barcelona’s Cal Pep), and it really is: the atmosphere is chaotic and the food comes from all corners. One minute you’re eating a ortiguilla (a type of sea anemone found in the Balearics) in a paper cone, the next a chicken wing served in a Canarian mojo picón sauce.

Of course, the star attraction here is the Buddha-Bar Lounge, where DJs spin global beats every night while chic Budapesters and visitors alike sip on cocktails and snack on sushi. For travelers who would rather find other paths to enlightenment, there’s a spa with sauna, steam baths, hot and cold pools, and a Roman-inspired tepidarium.

Others include green herons, egrets, and Caribbean parakeets. For the best sightings, stop by when the sun is rising or setting. Note: The sanctuary isn’t the easiest place to find, which makes this stretch of marsh and mangroves delightfully void of tourists. There are no admission fees or set hours.

    Zum Dürnbraü, one of Munich‘s oldest restaurants, has been serving traditional Bavarian food since 1487. It has retained its popularity over the centuries by consistently delivering homeland classics while adding modern flavors. The restaurant is tucked away on a quiet side street in the heart of Munich, just 10 minutes from Marienplatz. Its main dining room looks like a typical Bavarian beer hall, but for those who seek a quiet daytime lunch spot, there is the very pretty and airy front garden. Bavarian specialities include wiener schnitzel, spaetzle with fried onions, duck with red cabbage, and roast pork marinated in dark beer. Zum Dürnbraü is also known for its pig knuckle, oxtail and ox tongue. Seeking lighter fare, I enjoyed a savory “Housewife Style” herring salad, with apples and potatoes in a sour cream sauce. It gets crowded during prime dining hours, so make a reservation or come for lunch.

    At Rossio, between the old cafes like Suiça and Nicola and on the other side of the D. Maria II National Theatre, next to Arco da Bandeira, you will find this little tasca. Here you can eat ham or fresh cheese sandwiches, bifana (pork sandwich) or some fried petiscos (snacks) like the Pastel de Bacalhau, a codfish cake, and shrimp croquettes. Ask for a beer or red wine from the house to accompany.

    If you’re looking for the prefect French vacation destination, the picturesque city of Pau, in Southwest France, may just have it all. Its location is perfect, almost equidistant from the stunning Pyrenees Mountains, for hiking and skiing, and the seaside, for enjoying the sun and surf. The bustling city market is one of the nicest I’ve visited in France and the restaurant offerings are varied and of excellent caliber. Throw in a photogenic chateau, friendly locals and proximity to international airports and you have the perfect holiday spot. The only problem is, (like me) you may not want to leave.

Its surrounding stone walls, built between the 11th and 13th centuries to protect the city from war and epidemics, stretch for a full 1.3 miles, comprising an immense system of forts, bastions, and walkways that offer breathtaking views. Hike along them, then be sure to check out the Lovrijenac Fortress, built atop a 100-foot rock looking out toward Venice (Dubrovnik’s historic rival). The Old Town’s main street of Stradun, known locally as Placa, is also worth exploring. It’s especially nice in the late afternoon, when the sun shines off the historic buildings and swallows soar in the blue sky above.

    Who is Sir Albert? This issue might perplex the uninitiated because the hotel and its staff insist that the mysterious aristocrat transformed his private mansion into a collection of sleek and fashionable pieds-à-terre for the international cognoscenti who come to Amsterdam. In reality, the 19th-century red-brick building was once a diamond factory, built to be so sturdy that the trams wouldn’t shake it, and, while that rich history is reflected in some of the angular and clean-lined decor, it’s more fun to imagine that a wealthy eccentric has designed the stylish and spacious rooms and left you in the hands of a staff used to realizing whims before they’re even imagined.

    The rooms themselves are indulgent in a minimalist way, with dashes of both Japanese modernism and midcentury Scandinavian design in the black wooden floors, oversized white soaking tubs, and all the latest technology; clearly, Sir Albert is well traveled. He also must have a taste for authentic Japanese cuisine, considering the house restaurant is inspired by traditional Japanese pubs and attracts discerning foodies and hip young locals alike. He clearly travels in trendy circles, considering his house’s location in lively De Pijp; his appreciation for art, too, is evident in the proximity to the Museumplein.

    Among the neighborhood’s art-minded hotels, the Gladstone is the most interactive, with shows, classes, and ongoing events. The 37 rooms, all designed by local artists, have breathed new life into the 128-year-old icon, which filmmaker Christina Zeidler took over in 2003 and revitalized in 2005. The Victorian landmark, named for its avenue (in turn named after four-time Canadian Prime Minister William Gladstone), has been a gathering spot for over a century. And it was home to legendary Toronto characters like cowboy Hank Young, who became a fixture at the hotel as a country singer in 1961 and manned the hand-operated elevator from 2005 to 2009, and Peter Styles, former host of Karaoke Night, with applause sign in hand. The legend of Hank lives on in a framed photo in the stairwell en route to the second floor.

Begin your stay in this architectural gem with a drink at the Café or Melody Bar (that is, if you’re not first thrust into Fameless Karaoke Night).

    The Samoa Cookhouse has been serving all-you-can-eat family-style meals since 1890. It used to be just for the loggers who worked in the company town of Samoa, just outside of Eureka, but since the ‘60s it’s been open to the public, for people like me who don’t work nearly as hard as a lumberjack but can still eat like one. There’s a set menu for every meal. Breakfast on a Sunday means sausage, scrambled eggs, biscuits, and gravy, and best of all, thick slices of French toast made from enormous loaves of just-baked bread. The waitresses are as friendly and energetic as you’d expect of people who have to serve a room that holds hundreds at huge tables covered in red-gingham vinyl tablecloths. Giant saws hang on the walls, and there’s a little museum off the dining room full of old mill equipment and great old photos. Hearty food, nice people. This place is good for your soul.
