His small shop on the outskirts of the medieval village of Panzano is a Mecca for carnivores seeking quality meat (plus curious tourists), and he also has a restaurant—Solociccia—where you can sample some of the best bistecca in the region. If you visit his Antica Maccelleria Cecchini on a Sunday morning, when he works to a background track of jazz and opera, you’ll be offered a glass of wine, a hunk of pecorino cheese, and a nibble of some of his meaty products (like the fennel-flavoured salami called ‘finocchiona’) to ease the waiting time.

    I’m far from a hunting enthusiast, but I am an avid fan of taxidermy, so when I heard that every Cabela’s features museum-quality displays, I was hooked. And they weren’t kidding. The Lacey, WA location has a multi-story mountain plunked down in the center of its showroom, studded all over with bighorn sheep, foxes, bears, bobcats, rabbits, and the occasional polar bear. Underneath the mountain is a walk-through aquarium featuring regional fish, and the second floor has a truly impressive display of African big game, including a giraffe, zebra, elephant, and lion. When you’ve admired the lifelike mounts and fed the koi in the beaver pond, you can stop at the cafe for an exotic-meats sandwich before hitting the road. Ostrich burger, anyone?

    My guide, Paco, a.k.a. Francisco de Santiago, 46, is a full time tour guide, and also a former child chess champion and bullfighter (“that was many kilos ago”), orders a flight of artisanal mezcal samples at our first mezcalería of the evening, and instructs me on the proper way to taste the purest of agave drinks. “You spread the mescal on top of your hand, like this, then wait for the alcohol to evaporate, then smell it for citric, floral, or smoky tones.” After smelling, a sip, then another for good measure, you take a bite of orange slice dipped in crushed maguey worms and sea salt. After that, we dive into the city’s tacos and street food, beginning our night with two cups of esquite—boiled corn kernels mixed with lime, chili pepper, and mayonnaise, which we bought from a father-son team who have been working the same street corner for 22 years.     The Sanctuary of the Madonna di San Luca has a commanding presence in the landscape overlooking Bologna. We arrived knowing that it was connected to town by a 2.5 mile portico some say can be seen from space. We dropped our bags at the hotel, grabbed some water and headed for the hills. No map, no directions. There are signs that guide you, eventually. Get a map. The streets and neighborhoods heading up to this massive, covered staircase are wonderful to get lost in, which we easily did. Finding the entrance, we began our pilgrimage to the church at the top of the stairs. There are 15 chapels celebrating the Mysteries of the Rosary, kind of like the stations of the cross for any of the Catholics in the audience. We hike/jogged up to the top, stopping along the way to enjoy the view and the artwork. The 18th century Sanctuary at the top provides spectacular views of the Emilia/Romagna countryside and of Bologna in the valley below. It was hot and sunny on our visit, but one of the locals told us it snows up on the hill during the winter. We had a quick decent, then out to happy hour where the specialty is the appertivo bar. For the cost of a glass of wine or cocktail, many of Bologna’s restaurants invite you to graze gratis at the traditional piccoli morsi trays laid out across the bar. It’s easy to make an evening out of nibbling on a variety of meats, cheeses, pastas, pizzetes and deserts at any number of stops. After a long, inspiring walk; my kind of tradition.

    The Lake House at Ferry Point on Lake Winnisquam is in Sanbornton, New Hampshire. We were staying at this B&B for a couple of days as we explored the Lakes Region. The house is over 200 years old and has been lovingly restored to its former glory. It used to be the summer home of the Pillsbury family. It is the only lake front B&B in the region and is across the road from Lake Winnisquam. The view is one of quiet beauty..the house on a rise, the point across the road with its gazebo, dock, the little sandy beach, the hills and mountains in the distance. No detail has been overlooked by John and Cindy Becker, the innkeepers. As we walked into the welcoming foyer, we were met by John who showed us around the breakfast room, and living room with its bookcases and large hidden TV. The front porch has comfortable wicker furniture in which to relax and enjoy yourself. John took us up to our room. Each room is named after an area lake. There are 9 rooms. Our room had a huge four-poster bed with a sitting area. John showed us the “Welcome Basket” of goodies...razor, tooth paste, tooth brushes, maple popcorn, buffalo sticks, candy rocks, and bottles of water. The bathroom had fluffy white towels, a blow dryer, orange scented Tarocco shampoo, condition, and moisturizer. Breakfasts are created by John and are yummy. He also has cookies available all the time. You can tell that John, Cindy, and their children love this house and enjoy their guests.

Be sure to also score a table for later, as Monkeypod Kitchen does double duty as one of Maui’s top restaurants. Menu standouts include such seasonal dishes as kiawe-roasted squash ravioli, coconut-corn chowder, Hamakua wild mushroom pizza drizzled with truffle oil, and bulgogi pork tacos with Asian pear and house-made kimchi.

As its reputation grew, however, Meneghetti transformed into a boutique hideaway with rustic rooms—and a Relais & Châteaux designation, to boot. Lounge on the series of outdoor terraces, swim in the indoor and outdoor pools, and dine on creative dishes like bream sashimi and lamb chops with stuffed zucchini.

Nestled amidst the heritage shopfronts of its compact downtown area is one of the country’s most interesting restaurants, proving there is plenty of culinary excellence outside of New Zealand’s big cities. Bistronomy showcases seasonal ingredients in its compact and stylish dining room—produce is often grown or foraged locally, and creatively harnessed for plates including fish tartare with sorrel and apple, or confit lime with shortbread, orange curd and mint. The drinks list presents excellent varietals from the nearby Hawkes Bay wine region, and Bistronomy’s NZ$75 chef’s choice menu of six courses is great value.

    Owned by a Chinese chef who spent time cooking for French celebrities in Paris, Chez Nicholas is a small restaurant with big flavor. Here, Chef Nicholas serves five-star French cuisine to a smattering of tables (always make a reservation to avoid disappointment). For the best possible meal, don’t choose your own dishes—just order the five-course prix fixe, which comes in “simple” or “deluxe” versions with or without wine pairings, and let Chef Nicholas take it from there. Once a month, he does a Chinese weekend, with gourmet dishes from different regions of his home country. No matter when you stop in, however, expect exquisite food accompanied by the elegant sounds of French music and opera (the chef’s favorite).

The talented owner and chef Rudi Štefan continues to raise the bar at this gorgeous spot, which is housed in an ancient palace. In nice weather, book a table on the small terrace with sea views. Once seated, decide how many courses you want—there’s a minimum of three at lunch and five at dinner—then sit back and let the culinary adventure begin. Attentive waiters will bring out beautifully plated dishes celebrating regional flavors with a global spin. Think amberjack tataki, monkfish tripe, beef-cheek pasta, and tongue cubes with breaded sage, all paired with top-notch local wines.
