    The reward for climbing 418 steps to Aksla mountain’s summit is a cake, coffee, or a three-course dinner at Fjellstua. Admire one of the most famous panoramic views in all of Norway from the minimalist restaurant’s large windows. Although the outdoor kiosk is somewhat of an overpriced tourist trap, step inside for the evening ocean-themed menu, in which traditional Scandinavian sides of boiled potato and salad put the focus squarely on the fish. Book in advance to guarantee a window table—if the weather cooperates, you’ll catch a stunning sunset across the archipelago.

    This university for music was established in 1875 by, you guessed it, renowned Hungarian composer Franz Liszt. The building is of course primarily a school—but its lively in-house concert series, including chamber music, student ensemble performances and classical works for larger orchestras in several halls and spaces—assures a lot of public interaction with this place’s wonderful classical music tradition. This gorgeous, recently refurbished Art Nouveau building is packed with lovely tapestries and gold-leaf decoration, making it as much a feast for the eyes as it is for the ears.

    Tourists usually miss this relaxed neighborhood eatery in upscale Frogner, just a short tram ride from downtown Oslo. Chef Sergio opened its doors in 1987, and since then he’s become quite the local celebrity thanks to his restaurant’s wide, open kitchen. Creamy French-inspired sauces dominate Sergio’s menu, placing the focus squarely on traditional ingredients and presentation techniques rather than the “new Nordic” craze sweeping Norway’s capital. The interior has a slightly dated feel, but the service is swift and the ambience is just right for the food on the table. Great for couples or a romantic celebration.

    A loud mix of hipsters, college students, and professionals enjoy three floors of entertainment and fun at this traditional-themed British pub. Nosh on favorites like fish and chips, bangers and mash, and the “Brixton Burger” with bacon and fried egg on its first floor restaurant. Down a pint of Fuller or St. James at the second floor’s Lodge Bar adorned with wood paneling, brick walls, antler lighting fixtures, and leather furniture. Or head upstairs one more level to bask in the panoramic views of D.C. and the surrounding U Street neighborhood on its rooftop deck.

    Enjoy your Pasta Alla Norma (one of the most traditional Sicilian pastas with tomatoes and roasted/fried eggplant) like the Sicilians—straight from the eggplant itself! Find a gorgeous (and large!) eggplant in one of the many street markets in Cefalu, slice off the top, and roast it whole. When soft, scoop out the eggplant flesh, and fill it with the Pasta Alla Norma. A perfect one-dish-wonder.

    Just be sure to get to the markets early for good produce.

    The customary dessert of Puerto Rico, the brazo gitano (gypsy arm), can be found at Franco’s in Mayaguez. This place has been around for generations, preparing the rolls for local markets and grocers and also for their own store. The cake is rolled into a log shape and then pumped with a filling. This one is a zanahoria (carrot) cake with a cream cheese filling. You can find many types of rolls, with all sorts of fillings. The traditional ones contain fruit jams. When in Mayaguez, be sure to stop here for this delicious roll.

    You will feel like home in this typical and familiar Portuguese restaurant, offering good food and a good place to dine with friends, before you head to Bairro Alto for a drink. If you don’t like to wait for a table, try to arrive a bit before 8pm.

    My suggestion is Gambas à Guillo (garlic prawns) as an appetizer and tuna as the main dish.

    Take a break from shopping along Istiklal Street at Hala, which specializes in authentic home-cooked Anatolian cuisine. You know you’ve found it when you see women with white headscarfs kneading dough in the front window. They’re preparing and cooking Turkish savory pancakes called gözleme. Hala is a great place to try gözleme along with other traditional staples like Ali Nazik kebabs and manti (meat dumplings served with yogurt and oil, caramelized with tomato paste, and seasoned with mint and red pepper). Wash it all down with a glass of Ayran, a salty yogurt drink adored by many Turks.

    The vibe in Waikiki is the most frenetic of all the spots in the islands, but there is an escape. The scene at the current iteration of the classic Hawaiian hangout, Duke’s, is a step back even by Oahu standards. Best approached via the beach to enhance the original feel and avoid the mall-like carnival from the street entrance, this is the kind of bar that welcomes sand on your flips. Slip in for happy hour and be prepared to jockey for a spot. Even with the crowd, the music, the food, the drinks are all designed draw you back to a simpler time when Duke was still riding the longboard. I’m partial to the beers and french fries, but will never refuse a fish taco. With a long relationship with the Kona Brewing brand, I opt for the Longboard larger or Fire Rock Pale ale. The umbrella drinks don’t disappoint, but neither do the gin and tonics. The local musical talent that ply the stage at Duke’s are traditional Hawaiian in style and like to keep the island theme front and center. There is a family vibe to the musical community, much like the rest of Hawaiian culture, and it’s not unusual to get a sibling or cousin to come up on stage and do some traditional Hawaiian dance or help out on a song or two. There was an 8 year old girl that got asked to come up on one of our visits and she blew the crowd away! The strip a Waikiki can be a bit daunting in terms of relaxation, but Duke’s remains my refuge from the madness. Aloha.

Explore a few museums and round off your visit with a boat trip on the river. Although several museums at Zaanse Schans charge for admission, there’s no entry fee at the popular tourist attraction created by relocating houses, windmills, storehouses and barns to form a replica of a typical Zaanse village. Alongside clusters of windmills, characteristic wooden houses and unique shops, traditional Dutch crafts are showcased and the lifestyles of people who lived in Holland long before sex, drugs and rock ‘n’ roll entered the picture are revealed.

    Known for its elevated approach to Turkish cuisine, as well as its elevated views of Istanbul from atop the Marmara Pera hotel, Mikla is ranked 51st in the World’s Best Restaurants and should be at the top of your list for a memorable night out in Istanbul. Mehmet Gurs, Istanbul’s most famous chef, draws from his Finnish-Turkish background to combine traditional dishes, ancient cooking techniques, and local ingredients with a forward-thinking and environmentally sustainable perspective on food. The menu changes daily but might include manti (ravioli) with smoked buffalo yogurt or lor (cheese curd) ice cream. Even if you can’t get a reservation for dinner here, the city views can be enjoyed along with a cocktail at the bar or out on the terrace.

    Mr. Armando and Mrs. Francisca run one of the hidden gems of Porto’s gastronomy - the Adega Vila Meã. The restaurant is located close to the São Bento train station, and inside you can sample Portugal’s bold flavors, from codfish to roasted veal and from hake fillets to grilled pork. On top of these delightful options, this restaurant is known for the “Cozido à Portuguesa” – a Portuguese food culture landmark! This traditional Portuguese dish is prepared with prime quality meats - sausages, veal and chicken, pork belly, bacon, all kinds of smoked meat, and vegetables such as cabbage, carrots, turnips and potatoes. The portions are huge, so remember that this will probably be the only meal you will need to eat during the whole day.

    The actual name of the place is Adega Rio Douro (since it’s facing the river) but everyone knows it by Tasca da Piedade, named after the owner Mrs. Piedade. It’s also known for having “fado vadio” - traditional Portuguese music, here sang by non-professionals every Tuesday in the afternoon from 4pm until 7pm. While the music flows you can try a lot of Portuguese “petiscos”, such as stewed chicken guizzards, meat croquettes, “bifanas” and the crown jewel “iscas de bacalhau” - boiled codfish loin enveloped in a parsley omelette. The symbiosis between food and music is guaranteed, as everything here is done with passion. You might even be lucky to listen to the owner singing a few “fados”.
