    Le Bernardin, on 51st Street between Sixth and Seventh avenues, is one of the handful of New York restaurants that is regularly awarded four stars by the New York Times (it is also one of five restaurants in the city with three Michelin stars). Chef Eric Ripert’s specialty is fish, and the menu is divided into three categories: “almost raw,” “barely touched,” and “lightly cooked.” If you like your tuna cooked medium, this isn’t the right place for you. Ripert often finds his inspiration in Japanese cooking, with his sashimi and light broths, and adds some Latin American influences, in his ceviches and some other dishes. The fish is always allowed to take center stage, and typically any sauce is merely intended to accent its flavors. The dining room has an understated, contemporary style with light-wood walls and high ceilings. Unlike some celebrated chefs, Ripert has chosen not to build a restaurant empire, increasing the odds that on any visit he will be at Le Bernardin, presiding over its kitchen and dining room.

    For 20 years now, the Spring Mountain corridor north of the Las Vegas Strip has been a hotbed of hot pots—and every other Asian dish under the desert sun. When celebs such as Anthony Bourdain and Penn Jillette raved about the real-deal northern Thai cuisine at Lotus of Siam, chowhounds followed. Tell your friends you’re finally making the trip out to the strip mall and they’ll tell you to avoid the items you can order from the takeout joint at home: no pad thai, no chicken satay. They’re right. Dive into the last page of the menu, the one about dishes from Northern Thailand, then entrust your tastebuds to the award-winning hands of Chef Saipin Chutima and try her larb or the jackfruit curry, anything with ground pork sausage, the khao soi (egg noodles and meat in a coconut curry sauce), the nam prik ong (a chunky mix of pork, tomato, and red chili, served with lettuce and raw vegetables), or the whole fish with chilis. The food is spicy, yes, and the afterburn is serious, but the depth of flavor is sublime enough to make you weep with regret the next time you have to call your local takeout place for delivery.

Dungeness crab with saltwater-poached foie gras and scrambled kani miso continues to be a favorite for diners, as is the egg-custard dessert—a brilliant and beguiling bowl of egg yolk, salted licorice, and frozen-yogurt meringue.

    Opened at the mouth of the Singapore River in 1928 to celebrate 100 years since Singapore‘s British founding, the Fullerton Hotel was, at the time, the largest and most expensive building in the Lion City. It served as the General Post Office, Exchange, Chamber of Commerce, and Singapore Club before undergoing a $320 million refit to open as a hotel in 2001. Visually, it’s a showstopper, with coffered ceilings, cornices, and marble floors—a Palladian building in stark contrast to the neighboring bland office towers. The atrium lobby is refreshingly bright, with a grandness of scale that brings drama to the arrival experience. Rooms have vanilla-colored walls, and some open to the atrium. The 25-meter infinity pool is almost theatrical, with Doric columns rising behind. Leisurely afternoon tea is a fine excuse to linger in the atrium lobby and appreciate the airy space’s tranquil qualities.

    One of the most famous sights in Germany, the Cologne Cathedral (known locally as the Kölner Dom) lives up to the hype. Its Gothic exterior, and especially its soaring twin spires, can be seen from all over the city, and its immense interior—measuring a whopping 66,370 square feet—brims with religious and cultural treasures. While its first stone was laid in 1248, the cathedral wasn’t finished until 1880. Today, its highlights include the Altar of the Patron Saints of Cologne by Stefan Lochner, the carved oak choir stalls, and the stained glass windows, which range from 13th-century examples to a more recent (and striking) addition by contemporary artist Gerhard Richter. The real treasure, however, is the Shrine of the Three Kings—an impressive work of medieval gold craftsmanship that’s bigger and grander than any other in Europe. Take it all in, then climb the 533 steps to the viewing platform on the south tower for a look over the city and, on a clear day, out to the Siebengebirge. Also be sure to visit the treasury, which holds artworks made from gold, silver, bronze, and ivory, as well as holy relics and sculptures from the Middle Ages.

    Opened in 2012, the Alpina is one of only two newly built, five-star hotels in Gstaaad in more than a century. Situated in a wealthy hilltop area in Oberbort, the hotel offers stellar views of the Bernese Alps (including the Spitzhorn and Oldenhorn) and the valley scenery of the Saanenland—as well as an impressive amount of discreet luxury. Built in traditional Swiss chalet style, the limestone-and wood-structure contains 56 rooms and suites that pair antique and artisan furnishings (wardrobes, tables, carved ceilings) with contemporary design pieces. All rooms have great views, though the higher the better; on the 5th and 6th floors, you’ll find the jaw-dropping, duplex Panorama Suite, with separate dining and working areas, and a fireplace. Furthermore, throughout the hotel’s public spaces, guests can see art by famous artists like Barbara Kruger, Tracey Emin, and Bosco Sodi.

    The hotel facilities are some of the best in Switzerland, ranging from an authentically Cuban-style cigar lounge to multiple Michelin-starred restaurants. Look around for a guy with an earpiece at the back of the room and tell him your friend sent you, and you might just get directed to a back door that looks like an entrance to a Porta Potti. Pass through here and you’ll enter a graffiti-filled men’s washroom. It’s only after passing through yet another door that you will enter one of South Beach’s hot hidden nightclubs....
