Built as an aristocratic country manor in 1746, Kokkedal Castle was a private residence for much of its existence, hosting salons and parties for Copenhagen’s elite. Restored and opened as a hotel in 2011, the castle is now one of Denmark’s most luxurious stays, set on acres of sprawling parkland along the Danish coast, just 30 minutes north of Copenhagen. With its manicured gardens, afternoon tea on the terrace, and 18th-century–inspired decor, it feels like that friend’s country estate you’ve just been waiting for an invitation to—if, that is, your friend has an excellent restaurant in the original cellars, specializing in Danish and French country cuisine, and a world-class holistic spa ready to cater to your every whim.

To top it all off, thanks to the castle’s location, both Copenhagen and the region’s myriad other sights are within an hour or two’s reach, either by train or by car.

We were only in Geneva for a day, but we were told to take a unique photo with this fountain by our friends and this is what we came up with! While Geneva was overwhelmingly expensive for 2 college students backpacking, it was worth the trip to see the lake. It was a sunny day with the perfect blue sky to white cloud ratio. We picnic’d on the rocks with wine, cheese, bread, and meat with a long lost friend. I would love to go back and do some real exploring one day.

When you first show up at Bodega, you could easily mistake it for a popular neighborhood taqueria. Between the Airstream trailer serving tacos and the picnic tables, it looks like a low-key spot. It is that, but as you see the Ubers full of models and clubgoers arriving and disappearing into the small taco joint, you get a sense there might be something more going on. Look around for a guy with an earpiece at the back of the room and tell him your friend sent you, and you might just get directed to a back door that looks like an entrance to a Porta Potti. Pass through here and you’ll enter a graffiti-filled men’s washroom. It’s only after passing through yet another door that you will enter one of South Beach’s hot hidden nightclubs....

Part dive bar under the palms, part reggae dance hall, and part DJ club. This is the place to come for a great night out with friends. All Pura Vida!

A local friend recommended Cake Cafe in the Bywater, so a friend and I stopped for lunch after exploring all afternoon. The humble bakery has some of the best sandwiches I’ve ever had, including my favorite, the crab sandwich, pictured here. It’s challah bread with crab meat, brie, bacon and spinach. It seems like a steep price for a sandwich, but worth every bite. Cake Cafe started as a bakery that sold all manners of sweets, but specialized in king cake, a Mardi Gras tradition. They became so popular that the store expanded to include other food items. Whatever you order, be sure to finish it off with dessert.

Liguria is an institution in Santiago. It’s the default for meeting friends and colleagues over chilled draft beers called schops, or dangerously loaded cocktails. The bar scene is animated and starts in the late afternoon around happy hour and ends in the wee hours of the morning. The kitchen pumps out tasty Chilean bistro-style fare ranging from countryside rabbit in mustard sauce to their much renowned “carne mechada,” a braised beef in tomato and red wine chopped up on pasta or sliced down into sandwiches. Everyone seems to be talking about Chez Nous and, frankly, it’s easy to see why. A meal here feels like dining at your most fashionable friend’s place. The restaurant is tucked away from the main drag in a beautiful Charleston single house, with a handwritten menu that changes daily, with the chef taking inspiration from the daily market as well as the cuisines of Northern Italy, Northern Spain, and Southern France. If the weather’s nice, request a table on the porch or in the courtyard.

“We hope you adapt to our bohemian philosophy,” say the staff at Hotel La Semilla, by way of explanation when guests ask why rooms have no televisions (there is, however, Wi-Fi and AC). With distressed walls and furniture, the hotel has a shabby chic feel (or, as they describe it, “rough luxe”), and owners Alexis and Angie treat all guests as friends. Part of the room rate is earmarked as a donation to the Friends of Sian Ka’an, a conservation group dedicated to the preservation of the nearby Sian Ka’an Biosphere Reserve.

Covering nearly two thirds of Basse-Terre island, Guadeloupe National Park is an astounding 54,000 acres of lush rain forest, plus offshore mangrove and coral reefs. Some of the island’s best-known sights are inside the park, including active La Grande Soufrière volcano at its center, 4,800 feet above sea level. The park also contains famous waterfalls like Carbet Falls and the Cascade aux Ecrevisses, and Les Bains Jaunes thermal pool is a refreshing swim after conquering one the park’s many hiking trails. Nature lovers will swoon over the 800-plus species of flora and fauna here, ranging from orchids to bats to the endangered agouti (a type of small rodent). You can explore Guadeloupe National Park on your own or go with an outfitter like Vert Intense, an eco-friendly operation that knows every inch of this vast green escape, and also offers canyoning.

The boat basin Bassin de la Villette is berth to Marin d’Eau Douce, a service that rents out easy-to-steer electric boats by the hour. Captaining your own boat is an unforgettable way to see Paris and beyond. Cruise through the industrial countryside, watch graffiti artists working on city-sponsored projects, pass shipping barges, bob alongside the swans, and putter past the city limits on your self-guided visit. The trips are perfect for couples, families with young kids, or small groups of friends. (The youngest sailors will love the mini-boat rides available for 10-minute spins around the basin.)

My friend Andy says you can’t go to Milan without having an evening in Brera, the tiny artsy area adjacent to Milan’s fashion center. Bar Brera is the hangout of choice for expensive liquor and people watching.

Families would be hard-pressed to find a more memorable place to stay than Giraffe Manor. Located in the leafy suburb of Langata, about a 30-minute drive from central Nairobi, the 1932 family home of a former candy baron was modeled on a Scottish hunting lodge before becoming a sanctuary for endangered Rothschild’s giraffes, for which the boutique hotel gets its name. The ivy-clad brick mansion features 12 light-filled guest rooms, many with gauzy canopy beds and understated furnishings, but the real draw is the airy breakfast room, where you can feed the exceedingly friendly animals as they crane their necks through windows and doors in search of snacks. Afterward, complimentary chauffeured vehicles are on hand to take you to the area’s most popular attractions: at the David Sheldrick Wildlife Trust, the residents being fed are orphaned baby elephants.

When I first moved to the island, I joined a friend in the Old City for a tour and lesson on the history of Puerto Rico. When passing by this little section of town near Pigeon Park, my friend and native-turned-tour-guide said that this was the smallest house in Old San Juan. Wow, okay, so this little yellow portion is technically a house? I’ve visited this site several more times since then and have never actually seen anyone enter or leave this door. Whether it’s true or not, it makes for a cool story and great photo.

More commonly known as Turtle Beach, this Oahu North Shore cove often attracts honu, aka Chelonia mydas, the largest of the hard-shelled sea turtles. These big, friendly giants can reach 400 pounds as adults and are herbivorous, feeding primarily on algae and seagrasses, abundant year-round in the warm, shallow waters. Summer’s gentle surf—swells averaging just two feet—increase your odds of quality turtle time. Cross the road carefully and keep at least six feet away from the endangered turtles as they sunbathe onshore (mind any “no-go” zones maintained by volunteers). Avoid swimming here: The currents and beach rocks make it challenging.
