The rotating vendors have included Juan Luis, a Tex-Mex spin from BBQ master John Lewis, and seasonal booths where the city’s up-and-coming chefs test out their latest concepts, from Japanese sliders to shareable Indian small plates. Although the vendors change regularly, there’s always a coffee shop, a craft pizza or burger stand, and a variety of ethnic options, making Workshop a must on any dining tour of Charleston’s latest and greatest. It’s also directly adjacent to Edmund’s Oast Brewing Co., a popular hangout and generally regarded among the city’s best breweries.

    Wong Kei is a place all Londoners know. It’s the go-to restaurant in Chinatown when you want a big plate of noodles or sweet-and-sour pork, and you don’t want to pay a lot for it. The service was legendarily rude. In the old days you would arrive at the door and be barked at: “Upstairs!” The multi-level restaurant is always busy, so you’re sent to whichever level currently has space. Then you sit at a table with others, and you order your food, which will be brought to you when the waiters can be bothered. Disappointingly, the service is now thoroughly civil; I can only hope it’s a temporary blip. Either way, this is a must-have London experience, and you’ll easily come away with leftovers.

    The terraced organic garden that steps down the hillside in front of the Stanford Inn (above Mendocino Bay) provides some of the vegetables and herbs for the innovative cuisine in the hotel’s Ravens’ Restaurant. A stroll through the farm, with a visit to the donkeys and horses and llamas, helps work up an appetite for the vegetable-based whole-food meals that raise the bar on all-vegan fine dining. Innkeeper Jeff Stanford puts his ethics on the plate: Vegan for both health and philosophical reasons, Stanford collaborates with certified nutrition consultant Sid Hillman and the Ravens’ chefs to create dazzling meals, including one of the most innovative and tempting brunch menus I’ve ever encountered. The Inn, a large boutique hotel with panoramic ocean views, an organic farm, luxury amenities, and a bookstore and wine shop, gains additional points for being dog-friendly--even in a special dining area.

Initially made of wood but rebuilt with stone, it clocks in at 250 feet and leads directly to the castle ruins, offering peerless views of the Elbe Sandstone Mountains, the Elbe River, and the Königstein Fortress. For a small entrance fee, visitors can walk its length, then refuel at the Panorama Restaurant on the other end. Active travelers may even want to attempt the Golden Triangle hike between the Bastei, Wehlen, and Kurort Rathen, which also passes the ruins of Stadt Wehlen Castle.

Elsewhere in the lobby, guests will encounter Chinese screens, sculpted furnishings, and bronze tones that mimic the glow of sunset on the river. Rooms have taupe furnishings, with flashes of indigo and lotus-green, and abstract ink paintings of traditional Chinese garden landscapes. Some have hypnotic Huangpu River views. As with many hotels in Pudong, the property is set within a larger complex, in this case the 61-acre mixed-use Harbour City development.

    What started as an outback resort known as Wrotham Park Station in far north Queensland was bought by Indigenous Business Australia, dismantled, and loaded on 18 triple road trains (each roughly the length of three semi trucks) for the journey 1,740 miles across rain forest and desert to the Northern Territory’s Mary River Wetlands, about an hour and a half from Darwin, adjacent to Kakadu National Park. Safari tents from Kenya were added to the modern “Habitats” and restaurant and bar to complete the immersive Australian wilderness retreat. Like the world’s best safari camps, Wildman Wilderness Lodge has a spacious wooden deck with an infinity pool and daybed-style lounge chairs that encircle a fire pit. This is the place to watch the sun set and look for the area’s wallabies, dingoes, water buffalo, wild pigs, native birds, and two resident saltwater crocodiles known as Big Arse and Fat Arse.

    The Mary River Wetlands are known for having the highest concentration of saltwater crocodiles in the world, and the lily-studded floodplains are prime habitat for barramundi, which the restaurant often cooks for dinner. Open March through November, the lodge treads lightly on the landscape and is culturally connected to the native Limilngan, Unwynmil, and Wulna people, who have lived in the area for thousands of years.

    As the camp’s name indicates, the main reason to stay here is to catch the Great Migration, the annual movement of more than one million wildebeest and hundreds of thousands of zebra and gazelle making an 1,800-mile circuit through the Ngorongoro Conservation Area, Serengeti National Park, and into the Maasai Mara in Kenya. At the camp, large, tented chalets on stilts have wraparound decks with a 360-degree view of the landscape and its denizens. The lodgings blend into the surroundings on the bank of one of the great migration obstacles: the Grumeti River, with its many crocodiles, hippos, and boulders. Herds pass through the vicinity from August through November, and the Elewana’s northern Serengeti location miles from the main concentration of game lodges gives it a sense of privacy rarely achieved in the far more visited western and southern park corridors. One further advantage: The camp is within driving distance of the other great wildebeest crossing point, the Mara River, on the border region between the Serengeti and Kenya’s Maasai Mara National Park. The atmosphere at the lodge is cheerful and relaxed, and the huge tented suites, which are divided by canvas walls into bedroom and bathing areas, have comfortable queen or twin beds, wood floors, colonial-style leather chairs, African textile accents, and, unlike most mobile migration safaris, hot water and electricity 24/7.
