    Barista Parlor introduced artisanal coffee to Nashville when it opened its lofty, art-filled space in a former auto repair garage in 2012, serving top-notch small-batch roasters from around the country such as Counter Culture, Intelligentsia, and Stumptown. Two local outposts later, the company has evolved into a roaster-retailer, importing and roasting its own coffee beans for the first time. Try the zesty, fruity Daredevil or the cocoa-inflected Golden Sound while you take in the interiors, which pay homage to Tennessean talent: Doughnuts come from nearby bakers including Five Daughters Bakery in Franklin, and an enormous pixelated mural of a ship by Nashville artist Bryce McCloud covers the back wall.

    As idyllic a tourist destination as Zanzibar is now, its history is undeniably dark. At the height of the slave trade in the 18th and 19th centuries, some 50,000 people were brought to Zanzibar each year, brutally removed from their homes in West Africa and made either to work on the coconut and clove plantations here or sold off at the market to buyers from around the world. A tour of the original site of the slave market (on whose site now stands an Anglican cathedral, once a building project for freed slaves and now a memoriam with exhibits) is an important reminder of this ugly time. Visiting the dim and suffocating underground chambers to see where human beings were bound and held in chains is chilling.

    Iconic chef Roy Yamaguchi helped popularize Hawaiian-fusion food a generation ago, but at Eating House 1849 he takes a delicious detour with dishes inspired by Portuguese, Spanish, and Filipino flavors. This “plantation cuisine” evokes the immigrant dishes served in the mid-1800s, when the state’s first restaurant—a Honolulu establishment called Eating House—opened (according to legend). Yamaguchi brings some serious chops to the table: He trained at the Culinary Institute of America before serving as executive chef in Los Angeles‘s La Serene and winning a James Beard Award. The menu shifts seasonally, according to what farmers, foragers, ranchers, and fishermen produce. Expect delicacies like a beef-and-wild-boar burger and pork lumpia with green papaya. Cap it all off with cinnamon-dusted malasadas (Portuguese doughnuts) with Koloa Rum sauce!
