    The beef goes back centuries, and will never be entirely resolved: what are the true origins of pisco, a grape-based, aguardiente distillate that became a national symbol of Chile…and Peru. To end the conflict, the people behind this bar and restaurant invented a new, independent republic dedicated to Pisco that is known as Chipe Libre. Inside a vast Lastarria mansion, this imaginary state unites lands in southern Peru and northern Chile, in obeisance to a sole monarch, pisco. The bar features a good 100 labels and cocktails like “Pisco’s in the Air,” made with lime juice, raspberry, papaya and basil; plus a full range of what are among Santiago’s best traditional sours. Standout food include the crunchy-seafood saltado (marinated and grilled beef strips), with mango, served on a sizzling grill; the joint’s star sandwich, El Presidente, is a solid slice of roast beef, fried egg, and shoestring potatoes. To avoid any sovereignty disputes, Chipe Libre flies its red-and-black, center-starred flag as the republic’s national colors.

    Set in the South Island’s Ahuriri Valley, on 6,000 pristine acres bordered on three sides by conservation parks, is your own slice of natural paradise. Opened in late 2018, The Lindis is a striking, contemporary lodge that blends into the landscape, with a sloping roof that mimics the mountain and river backdrop and, inside, floor-to-ceiling windows framing magnificent views.

    There are just five rooms to choose from—two master options and three lodge suites, all with private indoor and outdoor lounge spaces, fluffy king beds, and gas fireplaces. (Master suites also have separate living rooms and oversized bathtubs.) Beyond the accommodations, there are endless activities to choose from, from horseback riding, fly fishing, and e-biking to eco- and buggy tours and spectacular stargazing. Back at camp, there’s nothing to do as darkness sets in but lie back, stargaze, and listen to the calls of the wild.

Crowning the adjacent Hill of the Nymphs, the National Observatory is Greece’s oldest research institute. Set in lovely landscaped gardens, the charming 19th century building contains rare books and antique astronomical equipment. Occasional evening tours offer the chance to stargaze through a refracting telescope and learn about the Greek myths written into the constellations.

    Tucked away unassumingly in Copenhagen‘s hip Meatpacking District is one of the city’s top seafood restaurants, Kodbyens Fiskebar Restaurant. The industrial-style interior has design elements taken from the neighborhood and may not seem the setting for a Michelin-worthy meal, but the casual vibe in my opinion, only enhances the experience. The chef is fanatical about sourcing the freshest seafood. If you haven’t booked a table in advance, try going early and score a seat at the bar. The bartender will insist you have a glass of white wine with your oysters (try the briny Marennes). And don’t miss the excellent razor clam with maltbread, fennel, tarragon and dill.
