Diani Beach is a 25km strip of pale, sugary sands backed by the cerulean Indian Ocean. As one of the more developed towns on the Kenyan coast, there’s a great variety of restaurants, cafés, bars and shops here. Also on offer are activities from horse riding to kite-surfing and tours of the ancient Kaya Forest. Popular haunts in Diani include the Forty Thieves Beach Bar - renowned for their fun beach parties and tasty pizzas, as well as Ali Barbour’s restaurant – set inside a candle-lit cave which opens out onto the starry night’s sky above. However you choose to spend your time in this idyllic costal location, one thing is for sure: as the sun sets, castling a golden glitter on the sea below, and the beach-front restaurants lay flickering lanterns on the sand, there are few other places in the world you will want to be.

The soft, gold sand of Batibou Beach stretches along Dominica’s northeast coast, where the Atlantic is calm enough for swimming. Visitors and locals alike come here to relax in the shade of towering coconut trees, or sip rum punch in a hammock at the tiny, rustic beach bar. To reach Batibou, walk 20 minutes down a rough, often muddy trail, or hire a roundtrip ride from the Hampstead Country House. If you’re seeking solitude, avoid Sunday afternoons, when the barbecue scene is particularly lively.

You are lucky the sun only rises and sets once a day on Hawaii—otherwise, you’d spend all of your time transfixed by the horizon. Hike to the leeward (eastern) side of any island on a clear evening and train your eye over the ocean in search of the “green flash,” an optic phenomenon in which a green sliver of light hovers in the wake of the setting sun. (On Oahu, the remote Kaena Point is a good spot to see the flash.) Sunsets on Kauai, “The Garden Island,” make the beauty of the coastal surroundings even more poignant. If you rise early and tackle the Lanikai Pillboxes trail on Oahu or summit the volcano at Haleakala National Park on Maui, you’ll experience an unforgettable morning as the sun rises over the ocean for a new day.

It sounds “too good to be true”, right? No big resorts... miles of remote beaches... turquoise water... no crowds. The coastline of Cambodia is truly a tropical paradise! There are signs that things are changing, but today Otres Beach, just outside the Cambodian town of Sihanoukville, is untouched by commercial tourism. The beaches are empty and clean. Decent marijuana can be purchased legally (although the law is grey in this area as it is only legal to consume and NOT smoke!) at a number of hip bungalow bars set up along the beach. Drinks are cheap and very easy to come by, and your toes never have to leave the sand. Everything is rustic here, but there is a lot of charm in the dozen establishments along this remote stretch of beach on the Gulf of Thailand. The roads are still dirt. It’s off the beaten path. Air-conditioning is pretty much nonexistent here, and even electricity is hit or miss. Some describe the vibe here like Thailand 20 years ago before tourism was that country’s biggest industry. It’s what all of us beachcombers are looking for, and I found it at Otres Beach, Sihanoukville, Cambodia!

Copenhagen (and Denmark) are famous for being incredibly environmentally friendly. Windmills play a huge role in making that possible. One of the best places to see the large windmills installed just off Copenhagen’s coast is from the beach at Amager Beach Park. I find that the fact that they are marine windmills makes them even cooler and more fascinating than those installed on land.

If you’re staying on the east coast or close to Kingston, Wickie Wackie Live! is the place to be for some live reggae on the beach. For just a small entry fee, you’ll get to enjoy excellent local performances seaside—often held on Saturday evenings, 8 p.m. until midnight. There are onsite food and trinket vendors, as always, and the atmosphere is one fit for a wide audience, including families. Wickie Wackie is one of only a few live venues in Jamaica where up and coming artists get to show off their skills. Many made their debut here before rising to stardom.

There’s no shortage of refreshing waterfalls in eastern Jamaica. But after Reach Falls, I’d say Somerset—also located on the east coast—is a close second in natural beauty. Somerset Falls’ cascades can be reached by hiking or by canoe ride along the river. Either way, it’s a stunning, still relatively verdant area teeming with bird life—resident parrots—and caves to explore. It’s easy to find too, ideal for a day trip from either Port Antonio or Ocho Rios. Look out for a billboard right off the paved northern highway, about an hour and a half north of Ocho Rios.

Like Five Guys in DC, Whataburger in Texas, and Shake Shack in NYC, In-N-Out is the West Coast burger joint for those in the know. It’s been a SoCal staple since it first opened in 1948 and has since developed a cult-like following throughout the Southwest. Order like a local off the not-so-secret-menu and either indulge with an “Animal Style” burger (extra pickles, extra spread, grilled onions and a mustard-fried patty) or pretend to be healthy with a “Protein Style” burger (gluten free with lettuce instead of a bun).

I realize that this is a highlight that may not even need words, since the image is so very convincing. If you find yourself exploring the Costa Brava (‘Rugged Coast’) of Spain, be sure not to miss the beach town of Calella and have lunch at the Hotel St. Roc to sample the local specialties and witness this view. Once you descend on foot from the Hotel St. Roc, you’ll start to see footpaths and stairs headed down to a few, beautifully quiet beaches. The water is clear, the swimming great, and siesta seems to never really end in that glorious sunshine.

For our few days in Vis, a two-hour ferry ride from Split, we would drive our Vespa until we got to a beach—they are not hard to come by on this small island. This beach, right about in the middle of the south coast of the island, is mostly only accessible to boats. But we, boatless, scrambled down a steep cliff because it looked so perfect, and spent a few dreamy hours. We arrived on the ferry at Vis Town, walked into the tourist office and booked an apartment for a few days. Those days were spent going from beach to languid, four-hour meal, to beach again.

Covering nearly two thirds of Basse-Terre island, Guadeloupe National Park is an astounding 54,000 acres of lush rain forest, plus offshore mangrove and coral reefs. Some of the island’s best-known sights are inside the park, including active La Grande Soufrière volcano at its center, 4,800 feet above sea level. The park also contains famous waterfalls like Carbet Falls and the Cascade aux Ecrevisses, and Les Bains Jaunes thermal pool is a refreshing swim after conquering one the park’s many hiking trails. Nature lovers will swoon over the 800-plus species of flora and fauna here, ranging from orchids to bats to the endangered agouti (a type of small rodent). You can explore Guadeloupe National Park on your own or go with an outfitter like Vert Intense, an eco-friendly operation that knows every inch of this vast green escape, and also offers canyoning.

After decades of rule by innocuous lagers, a small revolution is brewing in Beijing’s beer scene, with a handful of small-scale brew operations popping up over the past few years. Great Leap is among them and brings together foreign beer makers with local ingredients in a way that doesn’t make “East meets West” sound cliché.

Take the popular Honey Ma Gold Ale. It has peppercorns from Sichuan, in central China, and Shandong date honey from the coast. Meanwhile, Little General IPA uses Chinese hops, while Danshan Wheat Beer includes black tea from Fujian. All fun to try. Beers at Great Leap start at ¥25 for a pour of Pale Ale No. 6. Great Leap’s flagship brewery and pub, on Xinzhong Street, can handle everything from large parties to single imbibers, offers views of the brewing equipment behind a glass wall, and has a good range of bar food, including a tasty burger and fries at ¥40. Order it and you are almost sure to get one last pint.

It’s hard to say what’s the biggest draw at Capri Palace Hotel & Spa, a whitewashed retreat overlooking the Gulf of Naples with 68 rooms that blend stylish minimalism with beach-chic comfort. As the name implies, wellness junkies beeline to the property to indulge in anti-aging facials, body scrubs and massages, and signature leg treatments at Capri Beauty Farm, a 10,800-square-foot oasis of calm. Then there are the dining options. With its inventive coastal cuisine and impeccable service, L’Olivo is the island’s only restaurant with two Michelin stars, while the hotel’s beach club eatery Il Riccio earned a star of its own for its seafood-heavy Mediterranean menu; given the accolades, both spaces are much better looking than they need to be. Another strong contender: the pool. Though small, it features a wall studded with windows, so you can swim with a side of voyeurism.

Hopkins Village is a coastal escape with a perfect balance of culture, local and international dining, and some of the best accommodation options in the country. Once a remote Garifuna fishing village, Hopkins has become a full-fledged tourist destination without losing its local flavor. You’ll find yourself immersed in the Garifuna way of life, laid-back during the day and alive at night. The village’s main stretch of beach is one of the safest in Belize, even if the sea isn’t that typical turquoise hue. Inland, explore a host of activities ranging from Garifuna drumming classes at Lebeha Drumming Center or cooking classes at Palmento Grove Cultural & Fishing Lodge to hiking at nearby Mayflower Bocawina National Park. Nights bring options for drinks and dining—try a Garifuna restaurant, but also treat yourself to alfresco gourmet meals at Chef Rob’s. Weekly drumming nights are popular on the beach, as is gazing at the stars from your hammock.

This industrial-chic eatery has a covered patio and floor-to-ceiling doors that welcome good weather inside, all overlooking the ocean on Dominica’s east coast. Pagua Bay puts a strong emphasis on seasonal, farm-to-table fare—a commitment made trickier by Hurricane Maria’s destruction in autumn 2017. Still, the restaurant continues to serve reliable American fare with Caribbean twists, including ceviche, goat tacos, chicken Creole, and mahi-mahi salsa. Wash it all down with a frosty beer or coconut rum punch.
