    One of Bermuda’s most historic resorts—there’s even a 300-year-old sea captain’s cottage on the property—Cambridge Beaches is a traditional rose-hued confection that matches its four pink-sand shores. Though an English country club vibe prevails in many of the public spaces (think tennis whites and croquet on the lawn), the rooms are anything but stuffy, outfitted with vibrant coral and lime-green sofas, zebra-striped rugs, and in some rooms, private plunge pools. Relaxation can be found in the marine-sourced treatments on offer at the Ocean Spa, but if you’re looking to excite the palate, the acclaimed Tamarisk restaurant plates up local takes on creole specialties, from the iconic Bermudan fish chowder to fresh-caught lobster baked in garlic and coconut oil.

    If one is going to throw around the word “iconic,” let’s make sure it’s used appropriately. As with Zuni. The awkwardly shaped restaurant—it’s in a narrow storefront with wider spaces on the mezzanine—was opened in 1979 by Billy West. West’s best move was hiring chef Judy Rodgers in 1987. She put in a brick oven—and thus the Zuni roast chicken was born. This dish, more than any other (except perhaps the Caesar salad), defines Zuni. The chicken is roasted in the brick oven and served over a bread salad: greens with chewy bread croutons. Simple, perfectly cooked, and seasonal. Rodgers died in 2013, but the restaurant soldiers on without her. The menu changes with the season and with what the local farms are growing, and will doubtless explain the provenance of your meat. Rodgers, along with her peer across the bay, Alice Waters, pioneered California cooking, and the cooks who have passed through here have gone on to define today’s vibrant restaurant scene.

    The nine-mile dirt road through Pike’s Peak National Forest is a properly isolated, remote, and grand driveway to Lost Valley Ranch, one of the few guest ranches in Colorado that is so close to Denver. (It is only about two hours by car from Denver International Airport, and a short drive from any other front range city.) The drive leads you through the still-recovering burn area of the 2002 Hayman Fire, then dips down into a green oasis, in a cozy corner of the Goose Creek drainage. Lost Valley is a traditional, medium-size ranch with plenty of history and a robust kids and teens program in the summer. It’s all about horseback riding in the morning and afternoon, a lazy schedule punctuated by the dining room bell and yelps of happy children and ranch dogs playing in front of the main lodge. Lost Valley Ranch books week-long, all-inclusive packages throughout the summer season; shorter stays are available in spring and fall. Rates begin at $3,020 per adult, and cheaper for children (how much cheaper depends on age), and include meals, lodging, horseback riding, evening entertainment, and children’s programming (Trap shooting, town purchases and massage therapy are extra).

    When the red-meat craving hits, there’s one place that satisfies the need for a juicy fix: Burger Tap and Shake, otherwise simply known as BTS. BTS offers a great selection of burgers made from locally sourced beef that is freshly ground on premises daily. The meat patties are all gently hand formed so the meat is as loosely held together as possible and the cooked burger is served on housemade buns and with housemade condiments including some mighty fine pickles. I have to admit that my favorite burger is the Southern Comfort. There’s something about the warm fried-green tomato patty against the cool pimento cheese sauce is that is truly addictive! As the name of the restaurant implies, there are beers to be had, both bottled and on tap. For lunch, I usually go with a milkshake; try the flavor of the month for a taste of something unique and different. If you really want to indulge, go for one of the shaketails! BTS is a small joint. There is a small bar for seating, and tables inside. During the warmer months, there’s al fresco seating as well. If you come between noon and 1pm, expect a line. It does move quickly and your patience will pay off with a truly yummy burger. Metro stop: Foggy Bottom

Get some challah French toast in the morning...or a chicken-green-chile omelette...and no shortage of croissants and scones... Mid-day, if you want one of the best sandwiches around, try the “Everything Reuben,” which won 2nd place in the World Food Championships in Las Vegas last year-- corned beef, vinegar slaw, Swiss cheese and house made Russian dressing on a fresh pretzel roll... Summer brings gazpacho, zesty and cold... ...and every Friday, there’s BABKA! Cinnamon or chocolate--(I pick the chocolate every time)--in a big ‘loaf’ or as a shareable ‘baby babka'--it’s an unexpected big-city-bakery taste here in the Southwest desert. Note the cycling gear on the wall--yes, they sponsor the spandex-clad, those helmeted pelotons who definitely earn their carbs...(Tucson is one of the nation’s biking meccas.) Ahh, “Tucson Born and bread,” read the jerseys and socks... The patio has mountain views and misters to counter the ‘dry heat.’ Years ago, when I first visited Tucson before deciding to move here, this was one of our stops--one of those places that makes you think ‘yeah, I could live here...’

    Leave it to the coolest, hippest country on the planet to come up with a cool concept like that. Sweden, you keep surprising me. Imagine a ultra-modern record shop in the heart of a touristy, busy medieval square. Imagine a mouth-watering café that offers cakes each more delicious than the other, and a plethora of imported coffee. Imagine a fabulous soundtrack, that goes from the classic grunge hits to the indie Swedish hits. This place is called Folk A Rock - it’s an ode to rock music that shares a passion with traditional fika and appreciates the beauty of its historical neighborhood. I’ve never seen anything quite like it - not that I would expect to. Sweden, in all things fashion, music, and, well, just about anything really, has a secret recipe for these types of things that few can rival. These über, effortlessly cool types of things. One one hand, it kind of makes you want to hate Sweden and remain green with envy. But on the other hand, the result is always way too fun to overlook, especially in the case of Folk A Rock. If you’re an indie music lover with a sweet tooth, this may just be your heaven on Earth.

    A little over a mile from where the deer roam in the saguaro-studded foothills of the Santa Catalina Mountains, sit down for some izakaya-style dining. Japanese “tapas” might not be a completely accurate description for this genre of shareable plates, but you get the idea. Ginza is family-owned, and a nice surprise in this corner of the desert. After an evening hike in Sabino Canyon, sit down for your choice of izakaya-plates or fresh sashimi—Tucson is only a six-hour drive from the Pacific, and a four-hour drive from the Sea of Cortez. And if you’ve never had a bowl of ‘real’ ramen (just say ‘no’ to maruchan), you’re in for a revelation of toothsome noodles in porky broth. A few of my favorites are the sautéed shrimp with mild green chilies, the gyoza, and (for a main course) the bibimpbap-chirashi bowl. Over sushi-rice, you’re served a generous sampling of fresh sashimi, tamagoyaki (slightly sweet rolled omelet), sprouts, and seaweed, with a quail egg as a garnish. Korean-inspired spicy/sweet ‘bibim’ sauce tops it off. Chef-owner Jun Arai’s wife, Diana, is from Mexico, which explains the homemade flan on the menu. Take a hike, then take a seat. After the cactus, kampai!

    For much of its history, the western edges of Manhattan neighborhoods like the West Village and Chelsea consisted of small manufacturing buildings and warehouses that served the piers on the Hudson River. Over time, those factories were replaced with residential developments, and shipping largely moved out to Brooklyn and New Jersey. What remained, however, was an abandoned light-rail line, located above street level. After 10 years of lobbying the city, state, and federal governments, the first section of the High Line park opened in 2009. It now extends for 1.45 miles, from Gansevoort Street in the south to 34th Street at its other end. An innovative design by James Corner Field Operations uses native species to preserve some of the feeling the old rail line had when it was overgrown with weeds. It has quickly become one of New York’s most popular attractions, both with residents and visitors who stroll the length of it, as well as a model for other cities attempting to find new uses for old infrastructure.

    At just over 540 yards, Długi Targ, which translates to “the Long Market,” isn’t really all that lengthy. Still, it makes for a lovely walk, stretching from the Green Gate at its eastern entrance through the medieval city of Gdańsk to the Golden Gate at its western end. Lined with cafés, restaurants, and souvenir shops worth a stop, the route is also home to picturesque architecture, including historic tenement houses that were renovated after World War II. Be sure to stop at the elaborate 17th-century Neptune Fountain (which represents Gdańsk’s ties to the sea) and, just behind it, the 15th-century Artus Court (a medieval hall fantastically decorated with hunting trophies and models of tall ships hung from the ceiling). A tiny detour down Kramarska Lane behind Artus Court will take you to St. Mary’s, the largest brick church in the world. In this enormous space, which can accommodate as many as 25,000 people, you’ll find a 500-year-old, 25-foot-high astronomical clock, as well as several Baroque statues of angels playing musical instruments. If you’re not afraid of heights, consider climbing the 409 steps to the top of the church tower.

    The winding road to Gorges du Verdon (Europe’s Grand Canyon) is a bit of a white-knuckle ride. If you want to take in the views, it’s best to pull over at Point Sublime (the right bank after La Palud on the D952), where a gigantic cliff of calcareous rock plunges 2,834 feet to the bottom of the gorge. Once you reach Gorges du Verdon, there are hikes for every athletic ability, but the 8.6-mile Blanc Martel circuit, which takes you to the heart of the canyon, is legendary. Just note that it can take between five and nine hours depending on your skill level, so be prepared with water, sunscreen, hiking shoes, a hat, and an extra pair of socks for the puddles in the two tunnels near the end. If you prefer the water, head to the emerald-green Lake of St. Croix, where you can rent a stand-up paddleboard, canoe, or kayak, or simply spend the day swimming and sunning. No matter how you spend your time at Gorges du Verdon, remember to bring a bag for garbage and leave nothing but footprints.

    When this wine country–style restaurant opened in the Laguna Hills in 2016, it was instantly embraced by locals. Maybe it’s the hillside location—no bikinis in sight—that allows diners to breathe easy and indulge. Maybe it’s the warm wood-clad dining room with its lively open kitchen. Or maybe it’s the craft cocktails and 25-plus international wines poured by the glass. Regardless, Ironwood is not the place to come while on a diet. The biggest reason: the house-made giant meatball, served with fresh, made-from-scratch herb pappardelle, spicy pomodoro sauce, and ricotta salata. Limited numbers are made each night, so it’s worth going early (the dinner-only restaurant opens each evening at 5 p.m.). The menu also features American Wagyu burgers, mac and cheese skillets, and pork shanks with fried green tomatoes and fresh burrata—plus colorful, palate-cleansing salads incorporating handpicked local ingredients. When the weather’s good, a retractable roof is pulled back from the heated patio to reveal views of the picturesque Saddleback Mountains. Must-order: the warm fromage blanc brownie with Nutella ice cream.

    Downtown Denver’s most playful hotel, The Curtis offers whimsy in spades. Guests are encouraged to unleash their inner child with board games, toys, and old-fashioned candy in the lobby, while each level riffs on a different pop-culture genre, from “Sci Fi” adventure to “Dun Dun Dunnnnn!” horror (fittingly on the 13th floor). Standard rooms are filled with pops of color; unexpected elements in themed rooms include green ectoplasm-inspired floors in the Ghostbusters room and a wall-mounted sailfish in the Jimmy Buffett room (perhaps you’ll finally find that lost shaker of salt). The Corner Office restaurant and martini bar is retro-cool, with plaid upholstery and ‘60s-mod light fixtures, and the menu highlights street and comfort food favorites from all over the globe alongside inventive housemade cocktails and Colorado craft beer. There are also 24-hour business and fitness centers, but nothing about the hotel takes itself too seriously—except, of course, when it comes to showing guests a good time.

    In the Palmerie neighborhood outside of town, ethno-botanist Gary Martin and his wife, interior designer Meryanne Loum-Martin, have created a fairytale oasis—whose name translates to “big garden”—with five houses, five pools, and beautiful green spaces spread over nine lush acres. Set in three different villas, the 24 uniquely designed, boho-chic rooms range from the Small (which can be tight and somewhat dark) to the more spacious Standard, Large, Garden, and Pavilion options, which feature plenty of light and perks like fireplaces, terraces, king beds, and artisan details.

    When not lounging around one of the pools, guests can play a set on the clay tennis courts, wander around the botanical gardens, take a Moroccan cooking class with Chef Bahija, or explore the surrounding area by bike, vintage sidecar, or camel. Kids are more than welcome here and can look forward to such programming as calligraphy and magic classes, while adults can expect in-room massages and outdoor yoga classes. Breakfast is included in the room rate and, like all meals, can be enjoyed in various spaces around the hotel. Dinner is particularly magical when served underneath countless glowing lanterns.

    At this bird-lover’s paradise, guests have reported seeing Blue Cotingas, Green Shrike-Vireos, and any number of native Panamanian bird species just outside their bedroom window. Their luck is in part due to Canopy Tower’s unorthodox location in a converted radar tower, right in the middle of the lowland rainforest of Soberanía National Park. Accommodations span two floors at either 18 feet (mid-canopy level) or 28 feet (canopy level), and range from basic yet adequate single rooms that share a bathroom, to a large suite with a private balcony. The lush rainforest setting also means there’s plenty more than birds on view—howler and tamarin monkeys, two- and three-toed sloths, nine-banded armadillos, and white-tailed deer are frequently seen from the tower, plus the stargazing is phenomenal. Guests can choose from day rates or all-inclusive birding and nature packages, the most comprehensive of which is a 20-night exploration of the surrounding area.

    When the Hôtel du Vieux-Québec poured nearly $3 million into renovating what was once an 18th-century nunnery in 2014, it was already recognized for its green leadership and sustainability: it’s the only carbon-neutral hotel in the province and the only one in Canada to use 100 percent biofuels. Today this boutique property on Rue Saint-Jean, convenient to all old-city attractions, furthers its ecocommitment with features like rooftop gardens that not only grow organic produce for its clients and employees but help with cooling. The hotel keeps five beehives as part of the Urban Honey Project, which helps pollinate city gardens, and the honey is used at the hotel restaurant. All of the 45 rooms and six apartments are unfussy yet comfortable, and even standard rooms have mini-fridges and a work desk. Guests are particularly fond of the continental breakfast basket that’s hung from your door each morning (so long as you book directly through the hotel) and the espresso maker and fresh fruit available anytime in the lounge.
