    The Caramoan area, on the eastern tip of the Caramoan Peninsula in Bicol, is a rugged and remote landscape of white-sand beaches, rich woods, swampland, lakes, and caves. Numerous seasons of the reality TV show Survivor have filmed around this region, including at Gota Beach. Most travelers explore the pristine Caramoan Islands by small outrigger boat. There are too many to scope out in one trip, but don’t miss famous Matukad Island with its pure white sands, exotic rain forest, limestone rock formations, and even a hidden lagoon. Another must-visit is Manlawe Island, a one-kilometer-wide sandbar surrounded by ankle-deep water. Other highlights include Cotivas Island, Gota Island, and Sabitang-Laya, a triangular landmass with powdery sand, caves, and superb snorkeling. Accommodations in Caramoan include family-run inns that are equipped with modern amenities but rustic enough to accentuate the region’s remote and unspoiled ambience.

    In Melbourne, coffee is king. As part of a long love affair with the caffeinated brew, the city has perfected the processes that go into producing a consummate cup of joe, making it one of the best places to hone your own coffee-making skills. Everyone from espresso amateurs to budding baristas are welcome at the Collingwood Coffee College, where the experts behind Proud Mary Coffee lead everything from two-hour introductory courses to latte art lessons and fully accredited barista trainings. If you’d rather just put your taste buds to the test, the school also holds free weekly cupping sessions, during which you can sip your way through a range of seasonal blends.

    If you’re in Madrid and in the mood for tapas, you might not know exactly where to go or what to taste. The Mercado San Miguel (metro Sol) takes away all that decision-making by providing you with a taste experience all under one roof. The old, derelict market was renovated just a few years ago and turned into an upmarket culinary emporium of sorts. It has more than 30 food stalls, each selling something different. My favorite is the bellota ham sold at Carrasco, but there is plenty more. You can sample sherries and Rioja wines at the wine bar, or do as Spaniards do and pick away at tapas as you make your way through the market. I highly recommend the croquettes, or croquetas, in one of the outside alleys: they have ham, chicken, shrimp, cheese and a variety of others. The more standard tapas area easy to find, like tortilla, and seafood is beautifully laid out for you to pick and choose. Right in the middle is my top-rated tapa place. I couldn’t find a name for it but it’s the largest counter, shaped like a U, and has everything from potatoes aioli to steamed razor clams, with everything in-between.

    This “Palace Greatly Blessed by Heaven” was once the heart of Korea. It was the power center of the Joseon dynasty (1392–1897), and was originally built in 1395—some new digs for a new dynasty. Like the Forbidden City in Beijing, the palace is a complex of buildings—a throne hall, the king’s living quarters and more—a sort of city inside a city, accented by gardens and pavilions. The Japanese flattened the place in the 1590s, and the site remained a ruin until a complete reconstruction in 1867 brought back more than 500 buildings. At the Gwanghwamun Gate, soldiers, beautifully costumed in red robes, still perform the changing of the guard. Seoul has other palaces, but this is the one to see if your time in town is limited.

    Overlooking the Coal River Valley, Barilla Bay, and the vineyards that produce the winery’s award-winning rieslings, sauvignon blancs, and other cool-climate varietals, Frogmore Creek is also home to a restaurant you can write home about, open daily for lunch from 11:30 a.m. to 3 p.m. Here you can pair the star of the most recent wine harvest with colorful dishes such as beef tataki with horseradish gnocchi or cured yellowtail kingfish sweetened by seaweed and soy caramel, apple, and pomegranate. Edible flowers and bright sauce droplets create art on the plate. But the real masterpieces are the desserts. If “chess mate” and “lemon basil legos” are on the menu, order both. In late 2017, Frogmore Creek opened a second restaurant inside the MACq 01 building on the Hobart waterfront.

    The Chicago River and Lake Michigan are two of the city’s greatest assets, and there’s no better way to experience both than with an architectural boat tour. While there are plenty of reliable options around, go with First Lady Cruises, which calls upon expert docents provided by the Chicago Architecture Foundation to reveal extensive history, culture, and style insights (for example, how the design of Willis Tower was based on cigarettes, or how the Monadnock Building on Jackson Boulevard was fabricated with 100 different shapes of brick). Book anytime between May and November for these rides, which run every day of the week and last 90 minutes.

    It’s an unforgettable experience: Getting up at the crack of dawn in mid-winter, walking through the large municipal park on the Pest side of town, checking in to the Széchenyi Thermal Bath (mostly with Hungarian pensioners because tourists usually arrive later), and slowly easing into one of its three large outdoor hot spring pools, surrounded by the golden yellow neo-Baroque palace—built in 1913 for the baths—while old men playing chess in the water. Then watch as the sun rises slowly, and your breath dissipates into the cold, crisp air. The spa has 15 indoor baths, too, as well as 10 saunas at various temperatures. This spa isn’t about being posh, it’s about easing into the kind of everyday self-care that Hungarians have known and avidly practiced for centuries. Just join them.

    Foodies, rejoice. Torvehallerne is a one-stop shop for several meals, snacks, and gourmet groceries or gastronomical gifts. It’s an airy, light-filled building with all kinds of purveyors, from fantastic coffee shops, chefs cooking fresh pasta and serving it hot to you at the counter, a farmers market outside, a tapas bar, you name it. If you’ve ever been to Florence, think of Mercato Centrale, but in a nicer setting and housing more variety. Ride your bike there to grab a bite or to spend the day enjoying its bounty.

    Did you know that only 25% of French people buy their cheese from a fromagerie? And of that 25, only 3-4% go to an affineur (cheese refiner). Both are the sad realities of a dying tradition in France of sourcing provisions from neighborhood artisans. Young affineur Baptiste Yapar doesn’t let the disheartening takeover of corporate food business dull his passion. The firebrand cheese master focuses his energy on running his shops Au Coeur du Marché (at the Marché d’Aligre) and educating the public. At La Cuisine Paris cooking school, he takes a small group through a complete background of cheese (it didn’t begin in France!), methods of production and the various designations and families of cheeses available. A copious tasting of 7-10 different cheeses (with wine) follows the contextual debut and is, as my friend and I agreed by the end, the closest thing approximating cheese heaven on earth. It is a fascinating two-hour experience that will not only inform how you consider the nuances of cheese in the future but will have you excited to seek out your nearest independent cheese shop for more.

    A tiny former ferry—the m/v Fremont Avenue—takes 50-minute spins around Lake Union, a glacial-gouged body of fresh water the size of Monaco. A cruise reveals gorgeous views of the Space Needle and Seattle‘s skyline, as well as the rusted splendor of the world’s last remaining synthetic-gas plant, now a postindustrial play space for picnics and kite-flying. Quirky narration highlights more hidden sights, like the studio of world-renowned glass artist Dale Chihuly and its birdhouses shaped like vintage RVs. Bring cash or checks for the $12 ticket and $2–$4 treats. Well-behaved, leashed pets are welcome, too!

In fact, many of the guests stop by the restaurant on their way to or from a day trip to the lake itself.
