    The thermal hot springs in Rincón de La Vieja at Rio Negro (Black River) may not be as well known as those in the Arenal area, but we had the pools and surrounding forest to ourselves. From where we stayed at the Hacienda Guachipelin Rincón de La Vieja, the springs were accessible by horseback or vehicle, followed by a short hike and crossing a rather dubious hanging bridge. The pools are heated by the Rincón de La Vieja Volcano, so you definitely want to test the steaming water. There are seven pools to sample of different shapes, sizes and temperatures. The first pool was too hot to plunge more than our toes into. And the pool that was “just right” was the last one, which happened to be ideally situated next to the churning river. After two days of horseback riding, hiking, canyon ziplining and rappelling, it was great to unwind at this private oasis. If a rainforest/volcano adventure beckons you, I recommend staying at Hacienda Guachipelin Rincón de La Vieja and getting an adventure pass from Adventure Tours--both are at Rincón de La Vieja National Park.

That said, for those who can live with dinner earlier than Argentina’s customary 9 p.m. or later, La Cabrera offers an early seating they call “happy hour” that’s wait-free and includes a 40 percent discount on all menu items.

    Two of Dominica’s top scuba sites snuggle together in southwestern Soufrière Bay: La Sorcière (Witches Point) and, just to its north, L’Abym (the Abyss). Both are dramatic wall dives, poised between steep topside cliffs and a submerged crater. While divers often see turtles here, you should also keep an eye out for frogfish, seahorses, and flying gurnards amid the orange elephant ear sponges, bright as prison jumpsuits.

    We hung out at La Biznaga Restaurant a few times while in Oaxaca. We ate dinner there twice—the main courses were a bit too big, so I’d steer anyone who’s asking toward the delicious appetizers. They’re also open all afternoon and they have interesting beer on tap and a good selection of mezcals. They make a crazy spicy michelada. They’re on García Vigil 512, near Santo Domingo.

Indeed, it seems little has changed at La Crèmerie du Glacier since it was first opened in 1926. Go with a large appetite, as the traditional dishes—raclette, fondue—arrive in alarmingly substantial quantity. No surprise then that locals descend upon this cream-colored restaurant in the evening, turning the dining room into a lively, raucous spot.

    Few dishes exude more Swiss tradition than raclette. For more than 700 years, locals have been gorging on this smoky, often nutty cheese in mountain chalets across the country. For a deep dive into the dish’s history, head to tiny fromagerie La Tzoumaz, where Yohann Magnin works for four months every summer making the drool-inducing cheese. Visitors can watch the entire process, from swirling and heating the milk to packing the cheese into a mold, then venture into the back room to get a sense for the aging process (don’t forget to grab a sample). Magnin is the only cheesemaker in town and his factory sits opposite Maison de la Forêt (House of the Forest) as you enter the village from the valley.

    The best of several great Atlantic beaches around Punta Rucia, Playa La Ensenada is made up of a fishing village and 4.5-mile stretch of sand with calm, crystal-clear water.
