  • Hemingway’s Restaurant has the best sunset views of one of the world’s most beautiful beaches, Grace Bay, from a pier-like patio. The restaurant at the Sands at Grace Bay Hotel makes blended-just-right Pina Coladas topped with an extra dollop of rum. Sip and keep watch for the resident dolphin JoJo, who has been patrolling the turquoise waters off this picture-perfect crescent of sand for more than a decade – there’s even a bell to ring if you see him, although who knows if it’s the same dolphin. After you get tipsy, order dinner. In addition to conch, the restaurant is known for steak and fresh-caught fish cooked only in olive oil. At lunch, the fish tacos are my favorite dish. There is live music twice a week.

    Across the bay from Puerto Ayora on Santa Cruz Island, Finch Bay is one of the few hotels in the Galapagos Islands located near a beach. While the hotel prides itself on its ecofriendly touches—such as its own water treatment plant, solar panels, a composting system, and the addition of 500 new mangrove plants surrounding the hotel—the atmosphere is more that of a contemporary resort than a rustic nature lodge. Outside, an oversized pool overlooks the ocean; inside, a Cordon Bleu–trained chef heads a modern restaurant.     A midsize resort with all the expected amenities for an international clientele (including a casino on the property), the Hilton Curaçao is just a 10-minute shuttle ride to Willemstad—but removed enough from town to encompass 20 full acres. The two private beaches are small but pleasant and exclusive to guests (a rarity in Curaçao), while the lagoon-like pool is large and inviting. A family-friendly resort, the Hilton also features a kid’s splashing pool, small playground, and rec room with games. There’s even interesting snorkeling in front of the hotel, as well as dive and boat excursions to surrounding Piscadera Bay.

    Decorated in a casual, beachy style, rooms boast private balconies with either island or ocean views, while suites offer access to an executive lounge with a breakfast buffet and evening hors d’oeuvres. There are also several restaurants and bars; guests recommend seafood and tacos at Celeste Beach Bar and the Sunday barbecue nights on the beach.

    Fort Pierce is located on the Treasure Coast of Florida. The city has seen a surge in popularity and has renewed both the historic city itself and its causeways, parks, inlet, lagoon, and beaches. Over the causeway the newly paved A-1-A is lined with stately palms and wide sidewalks. The inlet has a few great spots for a meal, burger, or a brew. In 1838, the U.S. Army built a fort in the area during the second Seminole Indian War. Lt. Colonel Benjamin Pierce was the commanding officer. During World War II, the beaches of the lagoon area were the training grounds for the Navy Frogmen ( today’s Navy Seals). About 140,000 were trained and practiced there at the Fort Pierce Inlet State Park. The South Causeway has a great peaceful park with a beach and boat ramp. The 1/4 mile beach along the Indian River Lagoon empties into the Atlantic Ocean. The aqua waters are busy with kayakers, sailors, and pleasure boaters. Picnic tables are placed along the shore. Fishing poles line the beach as people sit in their chairs reading or daydreaming as they wait for a bite. Pelicans, egret, and herons are some of the many birds near Fort Pierce on the Indian River Lagoon. Especially off-season you can find a parking spot. Spend a couple of peaceful hours at this beautiful spot on the Indian River Lagoon near the Fort Pierce Inlet. I enjoy my time spent there and I know you will too. Check out this area and park. You might want to go over the bridge into Fort Pierce and have dinner.

    When eating at the Sea House Restaurant, it’s hard to decide what is actually better: the view of Molokaʽi across the water, or the Molokaʽi sweet potatoes used in the frittata. Either way, both combine for a memorable breakfast on the island’s northwestern corner. Opened in 1963 when tourists were just discovering Maui, the Sea House restaurant celebrated its 50th anniversary in 2013—thereby making it one of the oldest restaurants in West Maui. Even with the history, fame, and ocean views, it’s one of the island’s most affordable restaurants. Most items on the breakfast menu will cost you $12 or less, and when you’re done with your meal, you can splash in the waters of protected Napili Bay. The Sea House sources many of their ingredients from local Hawaiian farmers (such as the Molokaʽi sweet potatoes), and they also follow traditional fishing calendars when choosing their fish for the menu. This is a great option for beginning the day on the island’s northwestern coastline and is a filling starting point for later adventures toward Honolua Bay and beyond. Or, just relax on the sands of Napili beneath the shade of a rustling palm. After all, there are only three hours between the end of breakfast and the start of the Sea House happy hour—an affordable menu that starts at 2 p.m. and has been voted one of the best on Maui.

    If you’re seeking that “shack on the beach” feeling without the actual shack, look no further than Laluna. At this Design Hotel, 16 romantic cottages overlook the ocean, each with an open-air shower, spacious deck, and four-poster bed surrounded by dreamy netting. A combination of Italian, Balinese, and Caribbean styles, the interiors come courtesy of owner Bernardo Bertucci, who served as a consultant for Prada and Armani in a past life. If you’d prefer something sleeker, the hotel also has several contemporary villas, which offer slightly less character but a lot more luxury, including multiple bedrooms, fully equipped kitchens, and private, full-size pools. Villa guests also have access to personal chefs, butlers, and trainers for an extra fee.

    Bertucci’s mix of European, Indonesian, and island elements carries over to Laluna’s thatched-roof restaurant and sunset lounge, which offers authentic Italian cuisine with a Caribbean twist. It’s also evident at the spa, where Balinese massages incorporate Comfort Zone products from Italy and guests can practice yoga in a beachfront pavilion. Flexibility is key here—you can book a cottage on a European plan (accommodation only), combine it with breakfast and dinner, or go all-inclusive. Regardless of which you choose, however, activities like water sports, daily yoga, and mountain biking are always included. For an extra fee, guests can also book Laluna’s luxury catamaran for a sunset cruise and snorkeling adventure.
