With so many unique options on offer, you’ve got an excellent chance of finding something that perfectly suits your aesthetic, be it a little black dress by Ella Fashion, or attention-grabbing earrings by Plain Janes. If you can’t find what you’re looking for downtown, you can always check out the other Design a Space locations in Fitzroy and Windsor—the selection is different at each store.
  • It’s one of the three isles that make up the U.S. Virgin Islands, and though St. Croix is the largest—measuring 218 square kilometers (84 square miles)—it’s the least visited of the trio. Perhaps that’s because much of the island has been set aside as parkland, which means fewer tourist hubs and more space dedicated to natural wonders, including pristine beaches and primo snorkeling and diving. But St. Croix also boasts many excellent historical sites. At various times it was controlled by Spain, Britain, France, the Netherlands and Denmark; the latter’s influence is the most visible in the architecture of St. Croix’s charming capital city of Christiansted, on the northern coast. Frederiksted, on the western point of the island, is a busy port surrounded by some significant colonial attractions, with a restored sugar estate and an 18th-century fort being among the most noteworthy. Here you’ll also find a family-run rum distillery and many restaurants and shops.

Ask for a nostalgic Australian treat, and you might be offered a Mit Mat (a ganache-filled play on the Tim Tam), a Ro-Vo (a room-temperature spin-off of an iced VoVo), or a Jatz pie (like a caramel slice topped with a mosaic of Arnott’s Jatz crackers). The bloke behind the brilliance is none other than Alistair Wise, son of cookbook author Sally Wise, who spent a stint working with Gordon Ramsay. This emporium of happiness—and envy, to be sure—also whips up scrumptious savories including a mean scallop pie and a buttery poached chicken “sanger” with bacon, lettuce, hummus, mayo, and hard-boiled egg.

    A North Bondi Beach institution since 1993, Sean’s Panaroma is known for unpretentious yet delicious fare, served in a homey dining room alongside fresh-cut flowers and views of Australia’s most famous beach.     In Old Town, locals often frequent the inviting, friendly Monica’s El Portal, a 36-year-old institution, housed in an unassuming building. There’s a range of traditional homemade dishes like blue corn chicken and a hearty green-chile stew. The carne adovada (New Mexican pulled pork) chimichanga is immensely satisfying. Arrive hungry and leave full.

    The 53-mile South Coast Track is the most epic odyssey in Tasmania’s most epic national park. It’s challenging and requires camping, not to mention advanced mountaineering skills, but it’s worth the effort for the primordial scenery, the sheer solitude, and sightings of such rare Tasmania wildlife as the near-extinct orange-bellied parrot. For a water-based expedition, Roaring 40s Kayaking arranges three- and seven-day trips that fly to the gravel airstrip at Melaleuca and paddle through the tannin-stained waters of Bathurst Harbour and Port Davey—maybe to forested islands or through The Narrows; it all depends on the notorious weather. Either way, you’ll stay at the pre-erected Forest Lagoon camp and savor your dinner and drinks like never before.

The Trident Castle, a kind of fantasy annex, is a former private residence whose grand rooms, sea-view terraces, and dollhouse-size chapel make it ideal for destination weddings. A hard road to get there? Not for guests who avail themselves of the helicopter pad.

Then there’s the rustic-chic café that whips up Asian-fusion cuisine that’s as rootsy and beautiful as the bikes. Come in the morning for breakfast ramen—bacon, roasted tomatoes, and a fried egg floating in bone broth—and a Japanese twist on a bloody mary. Then return for creative tapas and share plates in the evening complemented by a stellar list of Australian beers and wines.

    Chef Bill Granger started his first restaurant in Darlinghurst at age 24. Since then, his sunny Aussie eatery (most famous for its creamy scrambled eggs, ricotta hotcakes, and crunchy corn fritters) has spread to Surry Hills as well as Honolulu, Seoul, London, and four locations in Japan. The newest Australian outpost of Bills in Bondi Beach is bright and communal, spilling out on to one of the area’s most lively streets. Arrive early to avoid the long queue for weekend brunch, and sample everything from house-cured gravlax to the fried rice bowl with kimchi. Dinner (at the Bondi and Surry Hills locations only) is a more intimate, candle-lit affair, with interesting Aussie-Asian plates like tea-smoked trout salad, fish curry, spicy pork belly, and Japanese-style steak.

    Speakeasies and secret bars are an ongoing trend in Australian cities, namely Melbourne and Sydney. Down an unassuming alley off Crown Street, behind an equally unassuming doorway, lies Shady Pines Saloon—if it weren’t for the alcohol license on the door and the bouncer outside, you would never know it was there. Inside, the décor is reminiscent of an old hunting lodge or saloon in the American West, with mounted animal heads, vintage beer trays, dim lighting, Johnny Cash on the stereo, and peanut shells coating the floor. Mustachioed bartenders mix craft cocktails and can advise you on their selection of bourbons and whiskeys. The fresh-pressed apple juice and whiskey is always tasty, while the mystery moonshine in the “leg bottle” makes for an adventurous choice.

    What started as an outback resort known as Wrotham Park Station in far north Queensland was bought by Indigenous Business Australia, dismantled, and loaded on 18 triple road trains (each roughly the length of three semi trucks) for the journey 1,740 miles across rain forest and desert to the Northern Territory’s Mary River Wetlands, about an hour and a half from Darwin, adjacent to Kakadu National Park. Safari tents from Kenya were added to the modern “Habitats” and restaurant and bar to complete the immersive Australian wilderness retreat. Like the world’s best safari camps, Wildman Wilderness Lodge has a spacious wooden deck with an infinity pool and daybed-style lounge chairs that encircle a fire pit. This is the place to watch the sun set and look for the area’s wallabies, dingoes, water buffalo, wild pigs, native birds, and two resident saltwater crocodiles known as Big Arse and Fat Arse.

    The Mary River Wetlands are known for having the highest concentration of saltwater crocodiles in the world, and the lily-studded floodplains are prime habitat for barramundi, which the restaurant often cooks for dinner. Open March through November, the lodge treads lightly on the landscape and is culturally connected to the native Limilngan, Unwynmil, and Wulna people, who have lived in the area for thousands of years.

    The Review

    The second property from Spanish hotel chain H10 offers an oasis amid Lisbon’s city center. Set on a cobblestone street just off Avenida da Liberdade, the restored One Palacio da Anunciada is in a 16th-century palace a short walk from restaurants, cafés, and Bairro Alto nightlife, yet it avoids the clamor that normally comes with such a convenient location.

    When revamping the hotel interior during construction, designers and architects preserved as much of the original structure as possible while adding sleek modern touches. Case in point: Upon entering the lobby, guests will see a magnificent marble staircase ahead and an understated library with wireframe bookshelves to the right. Event spaces such as the board room feature intricate crown moldings and ceiling art reminiscent of the classical period, plus large windows that flood the rooms with natural light.

    Large windows fill nearly every space with natural light, from the marble-filled lobby to the spa’s indoor pool to the 83 guest rooms. Suites feel more like elegant apartments than hotel rooms. Custom hand-painted ceramics decorate the walls, while gentle lighting and soft edges abound in the bedrooms. On the perimeter of the hotel’s idyllic courtyard and gardens are the exceptional spa and O Jardim Wine Bar, a spot for Portuguese wine and tapas.

    My idea of a good time is getting lost in the woods all so I can spend a few days finding my way home, but I can’t deny the allure of glamping – especially when it comes packaged up in the form of the Kings Canyon Wilderness Lodge, the Northern Territory’s answer to rustic chic. The luxury eco-cabins – fully heated and air conditioned – are wonderful, but there’s little reason to tuck yourself away inside when you can sip Aussie wine by the fire, or enjoy a gourmet meal under starry skies (or in the lodge restaurant on chilly winter nights). The last thing I expected to tuck into in the Outback was a spicy prawn curry, but I shouldn’t have been surprised – the Northern Territory has plenty of tricks up her sleeve.
