    I hadn’t been awake for longer than a minute. I peeled back the tarp door to my room, walked out onto my deck, and leapt. It was an abrupt but purifying way to start the day. The cool, brackish water instantly defogged my mind, and my eyes opened to see the surrounding Tatai River and dense Cambodian rain forest. A lone sampan, anchored along an islet, was the only man-made object to interrupt the natural scenery. My chic bungalow lightly swayed on the calm water behind me, an incongruous encampment against the wild jungle backdrop.

    Located on the southern tip of the Cardamom Mountains, near the Gulf of Thailand, the 4 Rivers Floating Lodge lives up to its name. The retreat’s 12 landless suites all float on their own buoyant platforms, moored to the riverbank. Outfitted with a ceiling fan, armoire, and wood-paneled shower, each of the towering, safari-style tented rooms also provides a nearly 360-degree view of the tropical landscape. A boardwalk connects the rooms to a central lounge and dining area decorated in a muted variety of Miami Beach sleek.

    At first blush, getting to this secluded outpost might seem daunting. Guests can arrive by boat, drive, come by cab or take a bus from Phnom Penh: I took a five-hour bus trip from Phnom Penh, followed by a half-hour longboat ride from the village of Tatai. But the journey is well worth the peaceful reward. The Cardamom Mountains contain the largest and most intact evergreen rain forest in mainland Southeast Asia. For decades, the region was largely off-limits to developers because of land mines and fighting between government forces and the Khmer Rouge militia. This very isolation protected the area’s natural habitat, which is now home to scores of endangered species, including Asian elephants, hairy-nosed otters, and Siamese crocodiles.

    Mine-clearance efforts and the end of hostilities have made travel here safe for more than 10 years, but it remains a sparsely populated frontier. The area’s remoteness is remarkable in and of itself. In the afternoon, I took a boat ride to the Tatai waterfall with several other guests. Even our skipper, a young Cambodian man who leads visitors on these trips every day, was still in awe of the lush surroundings. “So quiet and beautiful,” he said, looking at the palm trees along the river’s edge. After we arrived at our destination, I spent the rest of the day sitting beneath the waterfall’s forceful but soothing cascades, letting nature’s masseuse relax my muscles.

    I returned to the lodge for dinner beneath an orange and purple sunset. On the restaurant’s uncovered patio, the only sound accompanying the clang of my utensils was the soft splash of kingfishers swooping to pluck fish from the river. I was less delicate, digging into skewers of mozzarella, watermelon, and fresh shrimp and a plate of steamed river fish topped with a basil cream sauce. In the lingering twilight, I sipped a gin and tonic on my private terrace before easing under my bedsheets. The building itself was originally a private waterside home constructed in 1652—some 40 years after the first English settlers arrived to Bermuda—and it has operated as restaurant for more than a century. The name comes from the married Irish poet who lived here and spent his days on Bermuda composing love poems to local women. However, don’t let the tavern in the name fool you: The cuisine and vibe here is haute, and the menu showcases French influences on island favorites, as well as traditional Bermuda fish chowder and grilled meats; if they’re listed on the day’s menu, the soufflés are a must-try. There’s no longer exactly a dress code (the emphasis is on “elegant casual”), but like everything in Bermuda, it is best to err on the side of formal.

    Conservatorium has a fascinating past. It started as a bank and then became a music academy before renowned Italian designer Piero Lissoni transformed it into a hotel in 2012. From humble beginnings in Boyle Heights to outposts in Echo Park, Downtown L.A., West Hollywood, Burbank, and a Koreatown location on the second floor of the Platform 35 food hall. Guisados has flourished thanks to handmade tortillas anchored by braised chicken breast, flank steak, or pork. The mole poblano taco is especially mouthwatering, and the quesadilla con chorizo is big enough to share—though you probably will want to keep it all to yourself.

In fact, the place is so trendy that it sells Curry 36 merchandise in the shape of hoodies and even its own branded ketchup. Besides currywurst, the stall serves other sausage-y delights such as bockwurst and krakauers, as well as related meat products like burgers and meatballs. To be extra authentic, order your currywurst ohne darm (without skin) and enjoy it while standing at one of the outdoor tables.

While there are many pretenders to the title of the city’s best doughnuts—Voodoo Doughnuts certainly sells the most Instagrammable food products—Blue Star, from ubiquitous local restaurateur Micah Camden, is the most consistent. Flavors range from powdered sugar to maple bacon to passion fruit cocoa nibs, sold fresh daily until no more remain. The downtown location gets crowded early on weekends, so plan ahead. In a pinch, grab them at Blue Star’s airport location—which makes asking a friend to pick you up at the airport a sweet request indeed.

    We spent the night in this Bedoin tent in the Sahara near Erfoud, Morocco. The sand is this color, orange. The desert was actually wet in April, the night was cold and clear. The stars were amazing. Recommended. Many tour companies can arrange an overnight in the desert, either in a hotel at the edge of the dunes or in a private tented encampment.

    On the central coast north of Valparaíso, the beach resort town of Concón is popular with Chileans for its boardwalk, great restaurants, and, most of all, the 52 protected acres of monumental sand dunes that cascade down from high bluffs all the way to the sea. In addition to hikers, the dunes draw sandboarders who climb to the top, wax their rented boards by rubbing them with candle stubs, and then slide or sled down the slopes to the sound of the sea lions barking in the waters below.

    One of the most luxurious Western guest ranches, opened in 2005, Paws Up Montana, in Greenough, sprawls over 37,000 acres of classic Montana landscape: elk-filled meadows, rocky peaks, and ponderosa pines in the Blackfoot Valley, with the river of the same name running through it all. The most sought-after accommodations are the “glamping” tents on the banks of the Blackfoot or along Elk Creek that are available May through October and organized into five separate camps, taking just six guests each. The camps combine a Western lifestyle with an African safari formula: canvas suites with private baths, a communal dining pavilion with fireplace and fire pit, private camp chef, and butlers to help organize guest activities. Families and friends who prefer four walls between themselves and nature stay in enormous wood-and-stone villas with heated hardwood floors, fireplaces, leather furniture, huge flat-screen TVs, and panoramic windows; some of these homes come with outdoor hot tubs and tented bedrooms for kids.

    All guests have the opportunity to hike, rappel, canoe, play paintball, take cooking classes, and more, but the main action is on-site fly-fishing and horseback riding for all levels on 100 miles of private trails or in a 23,000-square-foot equestrian arena; adults and kids 12 and up can help move small herds of Black Angus cattle on sample stock drives. If parents want private adventure time, kid wranglers entertain young’uns. In the evening, communal entertainment takes place in a renovated barn that serves as stock sales venue, dance floor, and movie theater. Despite the busy activity menu and flow of golf carts transporting guests to and fro, the ranch is large enough, and accommodation so widely spaced that guests can survey the landscape and not see anyone.

    Forget Google Maps: You’ll quickly locate this venerable tapas bar in El Poble-Sec by the line out the door. With standing-room-only space for just 20 people, this sliver of a spot fills up fast—and stays that way until closing time. In a room lined floor-to-ceiling with bottles of wine, liquor, and pricey vinegar, you can sample a dizzying variety of tapas and montaditos (small bites served atop slices of bread). Many of the ingredients—namely the mussels, sardines, and tuna—come from cans, which sounds suspect, but Spanish conservas (tinned food) is actually of the highest quality. The cheeses—all fresh—are also top-notch.

    The Hole is a geologic formation that offers a dramatic look at the same karst process that created Conch Bar Caves and other limestone sinkholes and caverns found throughout the Turks and Caicos Islands. As its name implies, the Hole is area’s largest limestone sinkhole, about 60 feet deep and 50 feet across. A pool of water at the bottom connects to Juba Sound’s nearby ponds through an underground tunnel. You can rent a car and drive to the Hole on the east side of Juba Sound; however, use caution when walking near the edge, as limestone can crumble.

    While the name of this cape sounds scary, it apparently stems from the Nordic word for “turning point,” as Cape Wrath marks the most northwesterly tip of the Scottish mainland. It was here that Viking warships would turn south, heading for conquered lands in the Hebrides. Today, it’s simply a gorgeous place to visit, with spectacular views of the coastline, ocean, and surrounding moorland from the Clo Mor cliffs—the highest on the Scottish mainland, rising some 620 feet from the shore.

    Since the cape is so remote, access is challenging—there’s only one road and it’s separated from the main network by the Kyle of Durness, plus it’s closed to public vehicles. The only way to get here without hiking over moorland is to take the Cape Wrath Ferry across the Kyle, or the Cape Wrath Minibus, which offers a tour along the 11-mile stretch of road leading to the cliffs.
