    Perhaps due in large part to the city’s notoriously harsh, never-ending winters, Montrealers have a profound appreciation of their green spaces, always jumping at the chance of spending a couple of hours outdoors, basking in the sun. The Mont-Royal Mountain is the most popular, however, simply by its size (529 acres!), its fabulous views over the city and its architect — Frederick Law Olmsted. Parc Lafontaine and Parc Sir Wilfrid Laurier are also local favorites, where sunbathers, young families, BBQ-ers and joggers mingle happily, enjoying every minute of the all too short summer months. The two parks are located near delicious take-out counters (Ma poule mouillée and Lapin pressé, respectively) making it a perfect pique-nique opportunity.

Stock up on fuel for exploring at Mana Foods: Like Doctor Who‘s TARDIS, this indie health-food store is bigger on the inside than it looks from the outside. (It also has a shockingly vast selection at reasonable prices.) Other highlights include Mahina, often voted Maui’s best boutique, and the funky soaps, jewelry, clothes, and Hawaiiana of Alice in Hulaland. Downshift at Baldwin Beach Park, the best for bodyboarding and swimming. Then drive out to Ho’okipa Lookout (before the Mile 9 marker) to marvel at the massive breakers in winter or advanced windsurfers streaking across the sea almost all year round.

Easterly trade winds blow steadily over the island from March through August, while waves come consistently in late fall and winter. If you’d like to try surfing—or even just look like a surfer—while in Aruba, Bula Surf Shop in central Oranjestad can get you started. Opened in 2003 by two surfers, the store boasts a friendly staff that’s knowledgeable about all things watersports-related on the island. Pick up everything from swimsuits and sunglasses to boards and backpacks by popular surf brands like Billabong, Quicksilver, and Ripcurl. Just don’t stop by on Sundays—that’s when the staff is “gone surfing.”

    A Niçoise institution for nearly 100 years, Chez Pipo specializes in socca, a chickpea-flour flatbread that comes out of the restaurant’s wood-fired ovens looking like a giant pizza. Their motto, “Aqui si mangia la socca,” says it all—socca is the only dish they serve, alongside a selection of Provençale spreads like tapenades made with anchovies, artichokes, olives, or sun-dried tomatoes. Seating is on a large terrace during summer months or in a wood-trimmed dining room for shade or winter dining. The line outside can get long, but because of the simple menu and well-trained staff, the service moves quickly.

    Swami’s Beach, off hwy 101 in Encinitas, has some of the best surfing in the nation, especially during the winter months. Due to the competition for the waves, mostly expert surfers and locals are found in these waters. In this photo- Swami’s beach is actually the furthest point on the beach. So called “Swami’s” because of the Self Realization Fellowship Center located on the cliffs above. Even if you don’t surf, this part of the CA coastline is gorgeous. After enjoying the beach, you can head down the road to have lunch or dinner at one of the many restaurants that line hwy 101.

    My idea of a good time is getting lost in the woods all so I can spend a few days finding my way home, but I can’t deny the allure of glamping – especially when it comes packaged up in the form of the Kings Canyon Wilderness Lodge, the Northern Territory’s answer to rustic chic. The luxury eco-cabins – fully heated and air conditioned – are wonderful, but there’s little reason to tuck yourself away inside when you can sip Aussie wine by the fire, or enjoy a gourmet meal under starry skies (or in the lodge restaurant on chilly winter nights). The last thing I expected to tuck into in the Outback was a spicy prawn curry, but I shouldn’t have been surprised – the Northern Territory has plenty of tricks up her sleeve.

    Quebec really knows how to throw a party. It may be cold, but the Quebecois absolutely love it. The Hotel de Glace is just one example. Covering 32,000 square feet, this glistening example of “ice engineering” is just too much fun to pass up. If you’re feeling adventurous, make a reservation and spend the night, all of the rooms are themed differently with unique ice carvings in each room. The hotel will provide you with arctic-style sleeping bags designed to keep you warm well below zero. If perhaps you would like a libation, there is a bar that serves signature drinks. I sampled a Hotel De Glace cocktail that consisted of vodka and ice cider served in a shot glass carved from ice. After dark, the hotel comes to life with beautiful colored lighting that really highlights the structure. For a bit more fun for you adrenaline junkies, you will find a climbing wall made of ice, the gauntlet is now thrown down.     A ten-mile drive from downtown Flagstaff will take you back about a thousand years if you take a quick hike down into Walnut Canyon National Monument. From about 1150 AD to the early 1300’s, this meandering section of forested canyon was home to a thriving village of cliff-dwellers, part of the Sinagua culture. A series of steep stone steps leads down from the visitor center to the dwellings. The area is often snowy in winter; blanketed in white, it’s a striking contrast to most people’s mental images of Arizona. Coming from Flagstaff’s Victorian downtown, these ancient ruins are a testament to the complex layers of human settlement in the Southwest. The Sinagua culture is thought to have eventually merged with the modern Hopi people to the northeast.

    The Chuzenji Temple in Oku-nikko, Tochigi Prefecture, was originally founded in 784 by a Buddhist monk known as Shodo-shonin and is located on the shore of Lake Chuzenji, which is approximately 1,300 meters above sea level. In the middle of the Meiji and early Showa periods, many European embassies built vacation houses around the lake, lending a unique atmosphere to the environs. There is something to do or see all year round here: cherry-blossom viewing in the spring, bird watching, marine sports and hiking in the summer, autumn colors in the fall, and the Snow and Ice Festival as well as cross-country skiing and ice skating in the winter. You can either rent a car or catch a bus from Tobu-nikko Station, about a 40-minute ride.

    Opened in 1915 as Tent City—a string of luxury canvas tents along Lac Beauvert, with vistas of Whistlers Peak and Pyramid Mountain—the iconic Fairmont Jasper Park Lodge was possibly North America’s first “glamping” site. The destination proved wildly popular, and in 1922 a main lodge was opened, as well as a series of luxury log cabins spread across 700 acres in the heart of Jasper National Park, a UNESCO World Heritage site. Bristling with Douglas firs and pine trees, the property sees herds of elk nibbling the grass, chipmunks scurrying through the trees, and even the occasional bear. The 442 rooming options—all of which were renovated between 2015 and 2017—include cozy spots in the main building, fireplace-equipped Junior Suites, and bring-the-whole-family Signature Cabins, all with views across the lake or the forest and mountains. The newly introduced Estate Cabins, located near the golf course, feature a private gated entrance for a more residential feel. Classic lodge-style interior design is the order of the day in the cabins, with wood beams and a combination of earthy and granite tones, while rooms and suites are clean-lined and decked out in fresh white bedding and light wood accents.

    An ancient atoll, Molokini lies 2.5 miles off Maui’s south coast, where the water is calm, clear, and teeming with marine life. Here, snorkelers and scuba divers can expect up to 150 feet of visibility, allowing for perfect views of yellow tang, parrot fish, black triggerfish, bluefin trevally, and even moray eels. To explore it for yourself, book a tour with Maui Classic Charters, which sails to Molokini in a 55-foot catamaran with a glass-bottomed viewing room. Choose one of the early-morning trips for a better chance of calm seas and bigger sea creatures like octopus and eagle rays, and bring along snacks, sunscreen, and, for those who run cold, perhaps a rash guard or thin wet suit, especially in the winter months.

    At this 11-acre organic farm outside Aix-en-Provence, American Lisa Pepin and her French husband, Johann, lead truffle-hunting tours in English during both the summer (May to September) and winter (mid-November to mid-March) truffle seasons. Guests search for “black gold” while learning about how truffles are harvested and truffle dogs are trained, then enjoy a sampling of fresh truffle hors d’oeuvres, Champagne, and Les Pastras’ olive and truffle oils. During the hunt, the Pepins regale their visitors with stories of success and sabotage, while teaching them the difference between a Provençale truffle and its inferior Chinese counterparts, and how to properly clean, store, and cook with truffles. Johann’s enchanting tales and Lisa’s joie de vivre will have you coming back for more, only next time to stomp grapes, harvest olives, or simply shop the farm’s delicious products.

    Flagstaff, Northern Arizona‘s winter-playground-college-town, is often overlooked as visitors drive through it on their way to or from the Grand Canyon. But if you have time to linger, this town will reveal its charms. In recent years, it’s become a regional mecca for farm-to-table dining, with new restaurants repopulating its 19th-century downtown. After getting your fill of locavore dining and microbrews, work it off by going for a run or a hike up on McMillan Mesa, an ancient lava flow with superb views of the San Francisco Peaks, the highest mountains in Arizona. Buffalo Park has a two-mile loop through grassland and ponderosa pine forest, connecting to trails that go up into the wooded slopes. Remember, though, that Flagstaff is over 7000 ft/2133 m. above sea level--give yourself time to acclimate to the lower oxygen levels...

    The Banff Ave Brewing Company uses pure Canadian Rockies glacier water as its beer’s not-so-secret ingredient. The water makes for a perfectly imperfect beer, as it comes chock-full of minerals usually removed before the brewing process. Open since 2010, the Banff Ave Beer Co has six handcrafted beers on tap at the brewpub in downtown Banff, along with a food menu that puts an eccentric twist on traditional pub fare. The brewpub is popular year-round. In the winter, it’s great for après ski or for a nice meal before sampling some of Banff’s bolder nightlife venues.
