The former residence of Napoleon Bonaparte’s grandnephew, on a hill leading down to the Seine next to the Trocadéro, has been converted into this striking palace hotel whose airy, light-filled spaces by Pierre-Yves Rochon showcase European Empire and minimalist Asian decorative influences in a manner some French traditionalists find refreshing, others eccentric. The location is a bit of a desert when it comes to shopping and dining. However, culture-minded guests love the cluster of less touristy beacons within a two-block radius.

Many rooms in the Shangri-La Paris have unimpeded views of the river, and some have Eiffel Tower views from the bathtub. The second-floor historic rooms, with alabaster columns, stained-glass windows, and coats of arms bearing bees and “B” for Bonaparte, have become a popular venue for society baptisms.

Avalon Hotel is situated in the very center of town, opposite the covered market, on a site formerly occupied by a vegetable market. When the neighboring house was destroyed in a fire and the location was up for development, Avalon was born. The hotel has a modern, artistic look with Nordic simplicity and bold colors. The 101 rooms are decorated in a style that combines the strict Scandinavian aesthetic with a more artistic coloring. Twenty-four of the rooms have an open bath—integrated with the rest of the room, so you can watch TV while taking a bath—and three of them have their own gym. One of the first things you notice about the hotel is the turquoise pool that looks like it’s going to fall off the roof. That belongs to the top-floor penthouse suite, but you can access the pool and have a swim while overlooking the streets below even without booking the room, since the pool is open for all guests in the afternoon. And the outdoor street-level terrace is a good place for an afternoon drink in the sun or a long summer lunch.

Unexpected surprises abound in Amsterdam. On the city’s east side, you’ll find one denoted by a tall windmill: Brouwerij ‘t IJ (the IJ Brewery), a small brewery and pub situated in the former Funen bathhouse, next to the De Gooyer windmill. Opened in1985 by former musician Kaspar Peterson, Brouweij ‘t Ij prides itself on a large selection of unfiltered, non-pasteurized beers and seasonal offerings. All are certified organic and made on the premises. Belly up to the bar next to the big mill and order your beer from a chilled tank. Follow the scent of hops onto the large outdoor terrace, where you can enjoy your brew with an order of peanuts, boiled eggs, abbey-made cheese, salami, ossenworst from Slagerij de Wit or Skeapsrond cheese from Dikhoeve Farm. The adjacent pub serves more substantial meals, as well as drinks and snacks. In addition to beer, Brouwerij ‘t Ij’s menu includes wine and non-alcoholic beverages. Guided tours are offered on weekends.

A short trip from Barcelona via bus or car, explore Besalú’s medieval old town. Cross its restored 11th century bridge into a picturesque village with cobblestone streets. Shop for handmade trinkets or stop off for a meal or a drink in bars and restaurants offering traditional Catalan fare. While you’re there, be sure to stop off and see Besalú’s historic synagogue and Jewish ritual baths.

If you’re dreaming of making your wellness fantasies a reality, Sanará checks all the boxes. In addition to minimalist white interiors that encourage meditation—or, at the very least, tranquility—the boutique resort offers daily morning and evening yoga sessions, vegan meals made with locally sourced produce, and organic bath products crafted on site. Even the mosquito spray is biodegradable (but don’t worry, the 17 guest rooms have air conditioning). Though there’s no pool on the grounds, the resort is steps from a white-sand beach kissed by lapping waves and dotted with shady loungers. If you’re in need of even deeper relaxation, Sanará’s five serene treatment rooms set the tone for crystal healing, Mayan-inspired remedies, and bio-magnetic therapy, as well as soothing facials and massages.

This landmark hotel, built in the Swiss rustic style popular at the turn of the 19th century, has hosted Winston Churchill, Arturo Toscanini, Albert Einstein, the Shah of Iran, Henry Kissinger, and the Rolling Stones, among others. Situated high above Zurich, with a sweeping forest and a golf course for company, it offers breathtaking views of the city, the lake, and even—on clear days—the Alps.

Renovated in 2008 by Lord Foster for a cool 385 million Swiss francs, it now features a bold, contemporary edifice that wraps around the turreted original, two entirely new wings (the Spa Wing and the Golf Wing), and a completely revamped interior. An easy, 10-minute trail leads to these paired cascades on the west side of the mammoth Morne Trois Pitons National Park—the higher, lefthand fall is known as Father (279 feet) and the smaller as Mother (131 feet). While the path stops at the viewing platform, visitors often descend and bathe in the pools, moving cautiously over the slippery rocks.

The Thompson Hotel, Toronto, opened in 2010 as a modern, translucent glass building soaring above its low-rise, red-brick neighbors and staking a claim as a symbol of glitz and glam in the King West neighborhood. Thanks to its fashionable in-house bars and restaurants, the hotel is a popular fixture both with locals and with the Hollywood set who visit each September for the TIFF film festival. The acclaimed Studio Gaia team designed the rooms, which have bold, dark-wood flooring and hot accents of orange playing off cool white walls. Heated marble floors in the bathrooms, spacious tubs, and sheets with high thread counts all contribute to the sense of luxury, and floor-to-ceiling windows ensure that rooms are flooded with natural light. The rotating menu of seasonal cocktails is especially delicious.

The Twelve Apostles impresses from the moment you turn off the coastal highway between Camps Bay and Llandudno beach and make your way up the winding driveway. Perched at the base of the mountain range for which it takes its name and overlooking the Atlantic Ocean, the views are swoon-worthy. Located about 25-minutes drive from Cape Town’s city center, 12A is adjacent to Table Mountain National Park and is a great escape from the city for a few nights.

Beyond the views, this luxury boutique has a distinct colonial-era vibe complete with period dress for employees, and decor that is old-world posh with a hint of flamboyance. No two rooms are the same, neither in size nor how they’re laid-out, which gives 12A its distinct boutique feel. But all feature plush fabrics in varying hues, many of which match their wallpaper, along with reproduction antiques and lots of mirrors and artwork. It’s definitely creative, although at times a bit over-the top. I loved the marble and glass modern bathroom with a deep soaking tub and bespoke bath products. The bed was also super comfy and the linens quality. Not all rooms have the same views either, so try to book one of the upstairs rooms where you’ll have either a sea or mountain view and a private terrace.

The service is five-star and so is the food. The onsite Azure Restaurant does excellent fresh seafood in romantic environs at dinner and the best buffet spread in town for breakfast, which should be taken on the outdoor patio when the weather is nice. For sunset head to the Leopard Bar, which pairs stunning views of the sun sinking into the Atlantic with an impressive port and cognac selection, along with a full bar. Also onsite are two swimming pools, an award-winning spa -- guests don’t have to book a treatment for complimentary access to the property’s hydrotherapy pool and flotation tank either -- plus a 16-seat movie theater.

Occupying a 1927 firehouse that was functioning until 1980, this nine-room hotel from the team behind Los Feliz’s Hotel Covell heralds a new era for downtown L.A.’s warehouse-cum-arts-district. The neighborhood’s first boutique hotel, the Firehouse boasts several original details, from concrete floors and exposed wood-truss ceilings to pressed-tin panels and niches originally built to hold statuettes of the Virgin Mary that were intended to protect firefighters. Also on the ground floor is a retail shop with a curated selection of wares created exclusively for the hotel by L.A.-based designers, including robes and striped tote bags by Clare V, bandanas and pillowcases by Block Shop, apparel by culinary brand Hedley & Bennett, serving pieces by ceramicist Robert Siegel, and furniture from ETC.etera.

If you’re looking for a day of grape-free respite in Mendoza, head off-the-grid to the hot springs of Cacheuta. The Terma Spa welcomes guests with an assemblage of thermal baths overlooking the scenic Mendoza River flowing downstream from the Andes. The indoor/outdoor thermal spa circuit winds through waters ranging in temperature from 73 to 105 degrees. Featuring a warm, minimalist aesthetic that highlights, rather than distracts from, the beautiful vineyards it overlooks, each of the spacious guest rooms are decked out in natural materials such as oak, jute, and Carrara marble. Rooms come with cozy bathrobes, well-stocked mini-bars, and inviting balconies with fire pits that will make you want to lounge and linger.

All of this is centered around a large, open-air bar, event reception area, and swimming pool. Though compact, the pool is nestled in an exquisite setting with vineyard views. If you can manage to peel yourself away from the hotel, the property also has bicycles that guests can use to get around town or pedal around the newly built Napa Vine Trail. Or, simply walk a few hundred feet to the winery next door, Beringer, for a sampling of their world-renowned wines.
