    Historic Santo Domingo offers a unique look at how the New World was settled in the years following Christopher Columbus’s arrival in the Caribbean on his first voyage in 1492, as well as subsequent expeditions. The Colonial Zone sits along the Ozama River, where the settlement’s original layout, walls, forts and other buildings remain much as they were 500 years ago. With its wealth of colonial architecture, the area has not surprisingly been recognized by UNESCO as a World Heritage Site. Among the historic buildings is the first cathedral built in the Americas, the Basilica Cathedral of Santa María la Menor (also known as the Catedral Primada de América, recognizing its historic significance). The ornate church once housed the remains of Christopher Columbus until they were moved to the Columbus Lighthouse, in the eastern part of the city.

    An award-winning boutique resort, Secret Bay serves exquisite style, service, and seclusion just a 10-minute drive from Portsmouth on Dominica’s northwestern coast. The luxury property has no communal spaces, beyond the decks, beaches, a riverside yoga pavilion, and the Zing Zing restaurant. Instead, guests retreat to six elegant villas and bungalows, fully stocked with their choice of goodies. Conceptualized by Venezuelan architect Fruto Vivas, villas fuse high design, local craftsmanship, and sustainably sourced materials like Guyanese hardwood. Guests can look forward to plunge pools, gourmet kitchens, pillow hammocks, and furniture carved from red cedar, along with high-tech touches like Apple TVs and Sonos Bluetooth speakers.

    Committed to sustainability, owner Gregor Nassief helped site Secret Bay’s villas to preserve the rainforest and oversaw construction of the entire resort without any heavy machinery. The property also plants vetiver to strengthen its cliff location and has applied to create a marine reserve in the waters below, where parrotfish flit among the coral. Explore them with the complimentary kayaks, stand-up paddleboards, snorkeling gear, dry bags, and GoPros on offer, or head to the treehouse-style spa, which gazes down on the cove and offers treatments like massages with custom-blended local oils. Guests can also opt to create their own culinary masterpieces or have the chef’s choice delivered by their attendant, who also serves as their housekeeper and adventure concierge.

    Over the next few years, Secret Bay will slowly expand to 50 villas, hidden among the neighboring 27-acre valley and ridge. In the meantime, swim to the resort’s waterline cave or paddle a kayak to the soft, golden Secret Bay beach. Though open to the public, like all Dominica’s coast, the beach sees very few visitors, meaning you might very well be the only one there.

    Hit Seven Mile Beach, a beautiful and—as the name would suggest—long stretch of shoreline to see why it’s one of the Cayman Islands’ most fabled features. Facing out to sea, you’d be forgiven for thinking you were beholding a life-size Rothko installation, with bands of the palest aqua, the richest cobalt and every gradation of blue-green in between. Also keep an eye out for the schools of fish that sprint along the water parallel to the shore.

Fresh off a $100 million renovation in 2016, the 170 rooms and suites are now what you’d expect from a Fairmont-managed property—clean, modern, and comfortably luxurious, all with water views—while public spaces have been elevated by an exceptional collection of modern art (Andy Warhol, Damien Hirst, and Ai Weiwei are just some of the luminaries who grace the walls). The new infinity pool has gorgeous views over the harbor, the spa offers treatments and fitness classes in partnership with noted brand exhale, and the marina’s water-sports team can organize everything from kayak and Jet ski rentals to paragliding lessons. Guests also have exclusive access to a private beach club on Sinky Bay—just 20 minutes away from the hotel via complimentary shuttle—which features water hammocks and snorkeling-friendly waters. Back at the resort, dining options include the buzzing Marcus, serving signature dishes from celebrated chef Marcus Samuelsson, and more casual options highlighting fresh seafood and local rum.
  • No visit to Antigua is complete without taking in the sunset atop Shirley Heights Lookout at its weekly Sunday sundowner party. The view from Shirley Heights is without a doubt the most famous, most photographed, most celebrated vista gracing Antigua. Immediately below, English and Falmouth Harbours clutch their bays. On clear days you can see Guadeloupe to the south and Montserrat with it’s still active volcano to the south west. It does get busy, so expect a crowd and while there might be a couple locals sprinkled in here and there, it’s mostly visitors. Around 7ish, the tunes crank up with either some reggae classics, some pumping soca, or even live a steelpan band. Smoke from a collection of barbecues compete with the music to fill the air and stimulate your senses. Expect chicken and ribs slathered in local flavors, plus burgers for the less adventurous. I did have some trouble getting grilled fish on my last visit, but once I found some, it was charred to perfection.

    After its previous Vigie location was destroyed by fire, Jacques rose from the ashes at a striking waterfront perch at the entrance of Rodney Bay Marina, a bit removed from the bustle of the other restaurants and bars. As popular as before, the upscale but unpretentious establishment serves Mediterranean and French dishes with a distinctive Caribbean influence to the likes of the prime minister and other high-ranking officials. Chef Jacques offers specialties like pan-seared scallops and red snapper. The veranda setting is particularly romantic at night.

    Not so at the Jamaica Pegasus. One of Kingston’s leading business hotels, the Pegasus is where I found the 24 Seven Cafe.

    Drink selections range from coffee, tea, sodas headlined by the local fave Ting to Red Stripe and a few other beers for those who want to keep the party going. 24 Seven Cafe is located in the lobby of the Jamaica Pegasus hotel. Night owls won’t want to miss it.

    A Caribbean coral reef in Boston? You’ll find it at the New England Aquarium, as part of the aptly named Giant Ocean Tank, which contains 200,000 gallons of water and is swimming with sharks, sea turtles, barracuda, and hundreds of other reef fish. While you can meet a family of harbor seals right outside the front door of the aquarium, it’s well worth your time to head inside to explore the exhibits that focus on habitats from the Amazon rain forest to the Gulf of Maine. The aquarium also boasts an IMAX theater and touch tanks, and if you want to encounter local marine life in their natural environment, you can join one of Boston Harbor Cruises’ whale-watching tours, which depart from the Central Wharf daily between March and November.

    Secluded and service-oriented are the adjectives that best describe Rosewood Mayakoba, a resort in Playa del Carmen that opened in 2008. At 1,600 acres, the resort is expansive, offering plenty of room for guests to feel that they have their own space. Rooms, too, are spacious and have either tile or wooden floors, comfortable beds and chairs, and a layout and design that draws guests to outside spaces such as patios and balconies. The sense of privacy is reinforced by special en suite features, including private plunge pools, garden showers, and sundecks. Service, which includes butler, concierge, and valet support, is first-class. Staff can facilitate or organize a wide range of experiences, both on the hotel property and in the surrounding area. These range from horseback riding on the beach and ocean kayaking to private dining and aerial tours of the Mayan site Chichén Itzá.

The restaurant has the feel of a residential dining room, albeit one that oozes traditional elegance and serves elevated takes on Bahamian specialties. You can pair dinner with a tasting in the property’s wine cellar, where the 250,000-bottle collection includes a rare (and expensive) 1865 Château Lafite and a 1727 Rüdesheimer Apostelwein, the world’s oldest. Prefer something stiffer? The cognateque offers tastings of its 9,000 varieties. The staff can arrange rolling lessons at the on-site cigar company, but if the way to your heart is through your stomach there’s also a culinary academy and a chocolatier. And while the hotel is located in the heart of Nassau, just across from the pink-and-white residence of the Bahamian Governor General, guests enjoy complimentary beach access at private Blue Lagoon Island.



    The Graycliff Restaurant at the historic Graycliff Hotel was one of the first five-star restaurants in the Caribbean, and it’s the perfect place to go for an exceptional fine-dining experience, with a menu that combines Bahamian specialties with European cuisine. The restaurant has five dining areas, including a garden gazebo, plus private dining in the wine cellar and at the chef’s table. The chef’s secret recipes are masterfully prepared and take advantage of fresh local ingredients like conch and lobster. After the meal, you can take a cognac or a handmade cigar from the in-house cigar makers. Dinners at Graycliff have a dress code of no shorts or sandals, and jackets recommended for men.

Learn about the island’s flora with a walk through the tropical gardens, and visit a range of Caribbean fauna, from goats to peacocks. Active kids will love the acrobatic course, trampolines, and swimming pools with multiple toboggan slides. There’s plenty to entertain grown-ups as well, including billiard and ping-pong tables, a mini-golf course, and spa relaxation area with massage hut.

The restaurant’s name, which translates to “the Silver Mirror,” serves locally sourced ingredients, such as Zeeland mussels, North Sea shrimp, and Dutch beef, with a contemporary flair; the award-winning wine list includes some 225 bottles from around the world. Order à la carte or try one of the tasting menus, which run from four to seven courses and are priced from €49.95 to €79.95 (about $60 to $95) without wine.
