    Not so long ago, Reykjavík’s restaurants focused almost exclusively on meat and fish dishes. Nowadays there are a growing number of vegetarian and even vegan spots, plus several places with a focus on healthy eating—such as the pioneering Gló, which opened back in 2007 and now has several other branches throughout the city. Gló’s menu changes daily to reflect the season and the market and features four main dishes, one of which is usually raw. Besides the entrées on the main menu, the compelling list of desserts provides further proof that it’s possible for healthy food to taste great too.

    I love checking out local zoos while traveling—especially when they’re clean, humane, and informative. The Aurora Zoo in Guatemala is definitely a great spot to take the kids for an easy day of excitement. It’s been open since 1924 and actually helps both conserve and rehabilitate animals. Oh, and tickets are less than $5. Worth a stop!

    My wife and two friends were tired of “museums” so they mistakenly decided to go shopping while I went to the Rodin Museum alone. It was breathtaking, the flowers were all in full bloom, the art on display inside was rare and beautiful, but the sculptures outside were displayed the way art should be seen. Here in three planes is the original design by Eiffel for the Tower, Rodin’s Thinker, and mid ground with the Eiffel Tower in the background. The gardens were just perfect, and I was sorry for my friends who’d decided to go into a department store to shop instead.

    At the foot of the Rialto Bridge with fantastic views of the Grand Canal, Osteria Bancogiro sits under the archway of the Bancogiro (a bank founded in 1600) from which the tavern gets its name. Here, you’ll find a ground-floor wine bar serving carefully curated varietals by the glass and bottle, as well as stellar crostini cicheti choices like salumi and cheese, warm octopus and eggplant, and shrimp curry risotto. There are also blockbuster canal views from tables on the stone terrace in front. Upstairs, surrounded by brick walls and vaulted ceilings, the stylish dining room offers a full menu of intriguing, modern Venetian dishes, including cocoa fusilli with boar ragù and a flavorful sea bream fillet.

    Mellow café by day, raucous party bar at weekends, Kaffibarinn is one of Reykjavík’s quintessential nightspots. Marked with a London Underground logo on the outside, it boasts celebrity associations including Blur’s Damon Albarn (who rumor has it once owned shares in the place) and filmmaker Baltasar Kormákur (director of 101 Reykjavík, among others). Open since the 1990s, Kaffibarinn certainly knows how to throw a party, especially when tables and chairs are pushed aside to create a makeshift dance floor and local DJs (and the occasional live show) make the crowds go wild.

Do it yourself if you’re confident, or join a guided tour (Skyline Eco-Adventures offers one that includes a zip-line ride). Once you’ve mastered the motion—and the 21 switchbacks along the road—effortless downhill freewheeling rewards you with unsurpassed views of the island. If you’d rather savor the vistas from a lofty perch, drive to the top for the sunset or book an overnight at one of the park’s wilderness cabins, accessible only by hiking trail.

Chefs Liz and Kirk are geniuses at creating special dishes that show off the region’s bounty, like bison carpaccio, venison striploin with maple parsnip purée, and a bison breakfast sandwich with bison sausage, fried egg, and foie gras butter. Ask the servers for help pairing the perfect regional beer or national wine with your order—they know their stuff.

    Once the vacation home of the Italian Duchess Rosa de Ferrari, this exceptional estate was converted into a hotel in 2005. 2014 marked the arrival of a new owner and a new era for the property. Today, Hotel Esencia is an elegant small resort on one of the prettiest beaches on the Mayan Riviera. Surrounded by 50 acres of lush jungle and manicured, palm-fringed grounds, Esencia pairs the amenties and comforts of a larger hotel with the attentive care typical of a boutique property or B&B. In the spacious rooms, lots of details stand out: iPod surround systems, well-stocked minifridges, 600-thread-count sheets, and walk-in closets.

    Deep within Grand Cayman, one finds another restaurant on the water. Be careful not to sit too close to the edge on the deck, however, the breeze might blow you right off. Inside the restaurant is a different story. All the tables and chairs are close together, making your dining experience intimate yet open to that of your neighbor and you can’t help smiling at those sitting next to you. Written on a savvy chalkboard one finds the specials of the day, of which you will find rarities like chicken liver pate and ceviche. The food is fantastic and the drinks are phenomenal. I personally recommend anything with mango in it. Once you’re good and full it almost feels necessary to sit and talk with the wait staff before leaving. The close knit environment makes it all the more friendly. Calypso Grill is definitely one of my favorite restaurants in Grand Cayman and I definitely recommend it to seafood lovers or just food lovers in general.

    When he sold his jewelry company in 2007, Canadian expat John Hardy and his wife reinvested much of the money into the Green School, an innovative K-12 school in Sibang Kaja, Bali. The curriculum is very experiential—the international and Balinese students learn everything from aquaculture to Balinese puppetry. Named greenest school of 2012 by the U.S. Green Building Council, the school is worth a visit if only to see the far-out architecture. Many of the complex buildings are constructed entirely of bamboo.
