    With a fantastic location by Hoan Kiem Lake and some of the best-prepared Vietnamese food in the Old Quarter, this stylish venue is onto a winner. The dishes here are very much old-style Vietnamese. There are no bells and whistles or attempts at fusion, but down-home creations such as pork steamed in coconut, fried tofu with lemongrass, and shrimp in chili sauce are right on the money.

    Inspired by the cooking of his wife’s grandmother, Madame Hien is chef Didier Corlou’s attempt at upscale but unfussy Vietnamese cuisine. Set in the former Spanish embassy, it is a beautiful spot for both lunch and dinner, with the outside courtyard in particular providing refuge from Hanoi‘s busy streets. Dishes, meanwhile, run the gamut from traditional classics to Corlou’s “New Hanoi” creations, adding exotic twists to familiar French and Vietnamese staples.

    Are there any nobler or more beautiful horses in the world than the gray-white Lipizzans who wow audiences with their high stepping at the Spanish Riding School? In the 16th century, the Hapsburg empire used Andalusian horses to create the breed in Lipizza (located in Slovenia). As they have for centuries, the Lipizzans perform their acrobatic haute école dressage in the Hofburg Palace’s Winter Riding School arena, an all-white baroque hall designed by Fischer von Erlach. Riders still wear the traditional uniform of bicorne hats and tailcoats, part of the reason UNESCO granted the Riding School its Intangible Cultural Heritage status. In addition to watching the performances, visitors can also tour the stables and sit in on morning training sessions set to classical music.

    At over 1,000 years old, Hanoi is not exactly a spring chicken. For some truly ancient Vietnamese history, however, it is worth spending time at Co Loa, the country’s first fortified citadel and a onetime capital of the nation dating back to the third century. Only three of the original earthen ramparts are extant today, but a pretty temple underneath a banyan tree provides added diversion.

    Recalling Saigon’s past, Cuc Gach Quan offers fine Vietnamese fare in a cozy setting that re-creates the home of the owner’s grandmother—a French-colonial house with worn, wood-plank floors; retro furnishings; warm lighting; and a floating staircase to connect the two levels. It’s grown in popularity ever since Brad and Angelina ate here in 2011, but the menu continues to focus on Vietnamese dishes while following the approach summarized in its motto: “Eat green, live healthy.” Expect menu items such as fresh spring rolls with shrimp, crispy sea bass, and fantastic homemade tofu fried with chili and lemongrass.

    Din Tai Fung is not a Singaporean chain—it originated in Taiwan—but outposts of this restaurant have flourished all over the city, thanks to its addictive dumplings. (Seriously: addictive.) Making the perfect soup dumplings (xiao long bao) is a skill that takes years to perfect. You can see the experts hard at work in glassed-in kitchens at every DTF eatery. To enjoy, swirl a little bit of soy sauce, black vinegar, and chili in a shallow dish of thinly sliced ginger, and dip away. Din Tai Fung also serves up the ultimate comfort food: Beef noodle soup. Its restorative, deep-brown broth with thin noodles can be savored with or without beef brisket. The spicy wontons in a vinegar sauce are also top-notch.

    The country’s third-largest city, and the largest in central Vietnam, Da Nang has become one of the country’s key ports thanks to its location on both the coast and the Han River estuary. The city itself is a typical bustling Vietnamese metropolis with relentless scooter traffic, but a number of attractions make visiting worthwhile. The town’s Dragon Bridge opened in 2013, but what makes it special is that every weekend evening the steel-arch dragon that forms a part of the structure spits out real fire from its head (the bridge is closed to traffic at the time, allowing crowds to see the spectacle up close). The Marble Mountains—five hills that seem to have just sprouted up in the south of the city—are an arresting sight. The Son Tra peninsula, with a marquee attraction known as Monkey Mountain, offers some good hiking and excellent sea and city views; you’ll also find the 220-feet-tall, gleaming-white Goddess of Mercy statue here. The sandy stretch east of the city center (given the nickname China Beach by American soldiers during the war) is crowded with restaurants, bars, and some seaside hotels.

    A couple of blocks west of the Sofitel Legend Metropole Hanoi, Hoan Kiem Lake—meaning Lake of the Restored Sword—is one of Hanoi’s anchors. It contains a number of sites worth visiting, like Ngoc Soc Temple and the picturesque, red-lacquered Huc Bridge. The greatest fun here is people watching, from men and women jogging round the perimeter to retired folks doing tai chi or dancing. Many locals come to socialize or just take a few moments to escape the city’s chaotic roads and traffic. Visit in the morning as the city is waking up and the air remains blissfully cool. Once back in Hawaii, he opened the upscale Lineage in Wailea, where he’s earned a loyal fan base for dishes like kimchi dip, fried turkey tail adobo, and squid luau with creamed taro leaf. Cocktails here are equally creative, ranging from a mai tai made with banana milk punch, Earl Grey tea, raisins, and coconut to a cucumber vodka number garnished with huli huli chicken skin. Whatever you order, be sure to pair it with the chili pepper water, a condiment and digestive aid that’s served in a take-home flask.

Built to resemble the performance venue directly opposite, the Beaux Arts structure’s two-story lobby makes a lasting impression with floor-to-ceiling marble columns and a French crystal chandelier shaped like an inverted wedding cake. Rooms feature elements of traditional Vietnamese design, plus double-glazed windows that promise quiet, accent walls outfitted in floral wallpaper, and bathrooms with separate tubs and walk-in showers. Spend the day admiring opera house views from the outdoor pool, which is heated in the winter, then sit down at Ba Mien to savor such regional specialties as cha ca (turmeric fish with noodles) and roasted pork with green papaya.
