Nestled among swish boutiques on Nueva Costanera, the city's foodies quickly dialed in on the potent cocktails and fruits of the sea. While ceviche may be the house speciality (in about 20 different ways), don't miss the "causas," dainty potato terrines with seafood toppings and chili sauces, their "tiraditos" (cousin to sashimi) and hot dishes like grilled crab. Forego the wine and try a fun cocktail like a "cholopolitan"—a play on the cosmo with pisco instead of vodka.
