Lahaina-born Chef Alvin Savella wows diners and his peers with rich, flavor-infused dishes with striking plating. He now captains this restaurant at the Grand Wailea Maui, named after Hawaii’s state fish, the Humuhumunukunukuapua’a. Set in the lagoon, the round thatched space provides spectacular sunset views. Start with appetizers like Cantonese BBQ-style char siu pork belly, squid ink bao buns, and 'ulu (breadfruit) risotto with nasturtiums. Then move on to the impressive mains, which include lobster ramen in red miso-coconut broth and free-range Huli Huli chicken rubbed with li hing mui (Chinese salty dried plum seasoning), served with garlic fried rice and charred pineapple relish.
