    A recent makeover of the Four Seasons Hotel Chicago from Houston-based Rottet Studio did away with the dark and clubby vibe common in older Chicago hotels in favor of a brighter natural palette. Today, the lobby is open and bedecked in oversize floral arrangements; the open-plan lounge there, with its modern glass chandelier, has become a high-end local watering hole known as the Social Bar. The new Adorn restaurant is now a big-night-out dining destination courtesy of chef Richie Farina’s creations that range from a perfectly prepared filet mignon to caviar and eggs. Upstairs, the 345 guest rooms—more than half are suites—feature understated grays and pale greens and come with deep soaking tubs and (if you ask) unimpeded views of Lake Michigan.

    After decades of rule by innocuous lagers, a small revolution is brewing in Beijing’s beer scene, with a handful of small-scale brew operations popping up over the past few years. Great Leap is among them and brings together foreign beer makers with local ingredients in a way that doesn’t make “East meets West” sound cliché.

    Take the popular Honey Ma Gold Ale. It has peppercorns from Sichuan, in central China, and Shandong date honey from the coast. Meanwhile, Little General IPA uses Chinese hops, while Danshan Wheat Beer includes black tea from Fujian. All fun to try. Beers at Great Leap start at ¥25 for a pour of Pale Ale No. 6. Great Leap’s flagship brewery and pub, on Xinzhong Street, can handle everything from large parties to single imbibers, offers views of the brewing equipment behind a glass wall, and has a good range of bar food, including a tasty burger and fries at ¥40. Order it and you are almost sure to get one last pint.

    Set in an 18th-century palazzo, once a former bank, the Park Hyatt Milan boasts interiors designed by American-born, Paris-based architect Edward Tuttle. It aims to wow from the outset. Guests are greeted by a lobby decorated with sophisticated materials such as warm travertine stone and alabaster, and topped with a 30-foot glass-domed cupola. There’s a discernibly modern aesthetic throughout the rest of the hotel, though, from the vibrant modern art scattered throughout the public areas to the contemporary color palettes (creams, beiges, and gentle grays). Rooms are correspondingly elegant, with high ceilings, expensive dark woods, rich wool carpets, and hand-selected furnishings (Murano light fixtures, Bang & Olufsen TVs). The bathrooms are especially impressive, not only because of their generous size and marbled interiors, but also thanks to the mirrored walls, double sinks, octagonal stone and glass showers, and Lauro Tonatto bath products.

It’s one of the best places to see desert conservation in action: Al Maha is in the heart of the Dubai Desert Conservation Reserve, home to the UAE’s largest free-roaming herd of Arabian oryx, a species brought back from extinction in the wild through rehabilitation initiatives. Guests should keep their eyes peeled for gazelles, too—300 Arabian and 100 sand gazelles inhabit the dunes, and the more inquisitive ones often come right up to the 42 tented accommodations. Water recycling, biodiesel, and solar panels all contribute to Al Maha’s efforts to tread lightly on the fragile desert ecosystem.

    The Review:
    Off the Pacific coast of Panama, near the border with Costa Rica, floats a lush island that indigenous people dubbed Palenque, or “sanctuary.” Once home to an ancient, pre-Columbian community, the island stood empty for hundreds of years—save for the all the wildlife, birds, and flora—until Ben Loomis arrived. For five years, the architect and designer lived on site, sleeping in a hammock by night and getting to know the land by day. Eventually, he put both his background and love for nature to use by creating this private island resort, dedicated to the principles of sustainable luxury.

    There are just eight beachfront casitas and one Villa Estate on the 400-acre island, so privacy is a given. Each of the 650-square-foot casitas has direct beach access, an outdoor tub, organic bath products, daybeds and hammocks, artisan-made furnishings, and a mini-bar stocked with local juices, snacks, and beers. Standout amenities include binoculars, a yoga mat, and a meditation cushion, plus a water bottle to use around the resort; Wi-Fi is free, but “island speed.” In addition to the main beach that fronts the casitas, guests have access to six other sandy stretches, along with nature walking and hiking trails, a main infinity pool, a spa, and complimentary use of kayaks, snorkels, and paddleboards. Meals are full of fresh, sustainably sourced ingredients and vibrant Panamanian flavors; rates include three meals a day, along with snacks and non-alcoholic drinks. An Island Foraging experience brings you closer to the culinary process as you learn to fish using ancient techniques, pick goodies from the island’s orchards, and hunt for wild ingredients along rainforest trails. Off-island excursions like whale watching, island hopping, and more can also be arranged, but with the run of a place like this, it’ll be hard to leave.
