    Like many of the hippest bars in town, Mary’s is intentionally hard to find. As you make your way down King Street, hang a right on Mary Street and look for a bar on the left with no sign and a rocker crowd. Inside the two-story tavern, a chalkboard menu lists enough craft beers (including the house-brewed Slayer Juice), wines, spirits, and cocktails to require a second chalkboard for fried chicken and burgers (known as the best in town). Get your birds by the half, whole, or “Larry style”—two whole birds deep fried with mash and gravy—and your burger with “trashcan bacon.” Mary’s also does a bacon Bloody Mary with American cheese melted over the rim of the glass that’s more than worth a try.

    They say Hemingway used to drink at La Venencia. If that’s true, you wouldn’t know it: there are no photos of Don Ernesto on its walls, no placards identifying Papa’s favorite table. La Venencia isn’t the kind of establishment to talk about its clientele; rather it holds their confidences tightly in its faded brown folds like any good bar should. The amber glow emanating into Calle Echegaray attracts you to La Venencia, much like a moth to a flame or perhaps, more appropriately, like a barfly to good sherry and sherry is all they serve. Posters of jerez festivals from the 1930’s paper the walls and share that same brown patina of the background as if to say that these aren’t replicas, they are originals with the scars of time to prove it. There are no menus. If you ask for one, the bartender will point to a listing hung over a table or one behind the bar. La Venencia is a wonderful place to enjoy a drink if you follow a few rules. Squeeze into the bar top. The bartender will jot in white chalk figures as you order. Order a copa of manzanilla fine and a tapa of queso and of chorizo. The bartender will slide you a small bowl of olives. Try them. Don’t take pictures inside; remember, the confidences described above. Pet the black cat sleeping on the table. When you ask for the cuenta the bartender will tally your order and then after you pay he will then wipe away your chalky notation with a quick swipe of his hand. I always found that very moment left me a little saddened.

    Britxos opened its doors in the summer of 2012 to great fanfare among Brussels expat foodie community. We were already familiar with the team, from catering company La Britannique, for their incredible food and warm, friendly service. Britxos is a cozy little bar in the St. Gilles neighbourhood of Brussels. It is filed with light from the huge windows and colour, from the chalkboard walls, filled with menu items and comments from past visitors. The name is a play on British (chef and owner Alex’s nationality) and Pintxos (the Basque word for tapas). Inspiration is taken from Alex’s love of food and travel and each dish is named for the city that inspired it. Every Monday night there is live jazz. Friday nights are the popular gourmet night,s with a 4 course fixed-price menu, and Sunday is the un-missable Britxos Brunch. You’ll hear every language found in Brussels being spoken here, while enjoying a fantastic and affordable meal.

    A North Bondi Beach institution since 1993, Sean’s Panaroma is known for unpretentious yet delicious fare, served in a homey dining room alongside fresh-cut flowers and views of Australia’s most famous beach. The simple chalkboard menu of entrées, mains, and desserts changes weekly—sometimes daily—based on what’s growing locally and at owner Sean Moran’s farm in the Blue Mountains (which also hosts stays). The waitstaff is tried and true, with a deep knowledge of Sean’s organic ingredients and wines. On your next visit, you might be treated to burrata-stuffed squash blossoms, a comforting arrangement of steaming mussels and perfectly seared tuna, Sean’s signature free-range herb “chook” (chicken), and a biodynamic red wine from New Zealand.

    American sommelier Brian Patterson, his wife, Jenn, and their massive Leonberger-Retriever mix, Bear (the Beartender!) are the consummate hosts at Lisbon’s newest, most interesting, and surely smallest wine bar. Located on pretty Praça das Flores in Principe Real, Patterson curates his all-natural wine list with a laser focus on small producers from around Portugal. He sources his finds on reconnaissance drinking missions around the country, including some of Portugal’s more underdog wine regions. His updated-daily chalkboard menu includes a half dozen or so offerings by the glass (€3.50-7) along with two batch cocktails, as well as intriguing bar snacks to accompany (his hummus is destination-worthy in and of itself). The bar doubles as a bottle shop; rightfully so, there is only room at the bar for about 11 provided everyone is sucking in their wine guts. File under: Wine Revelation.

    Housed in a converted elementary school dating back to 1915, this sprawling hotel complex has long drawn out-of-towners and local Portlanders alike with its bars, restaurants, miniature movie theater, and even a heated soaking pool that’s open to the public for a small fee. While these amenities—along with the hotel’s sprawling school grounds and proximity to the popular Alberta Arts District—are enough to make it one of the most attractive spots to stay in town, its real cred shines through in the 57 guest rooms, many of which are actually converted classrooms (and still have some of the original scholastic features, such as chalkboards, integrated into the room design). Don’t leave without sampling some of the McMenamins signature brews in the Boiler Room Bar, housed in what was once the school’s boiler room.
