With its world-renowned chef and ultrachic decor, Blue—tucked discreetly into the Ritz-Carlton Grand Cayman—seems the sort of place you’d find in New York or Paris. But the main draw is decidedly local: spectacularly fresh ingredients sourced largely from the sea right outside and served up in such specialties as lightly seared wahoo with bok choy and kimchi broth; or poached halibut with sunchokes, salsify, and truffle jus; or bread-crusted red snapper with squid and sofrito sauce. If you’re feeling ambitious, go for the gusto with a six- or seven-course tasting menu—and tack on the wine pairings.

An active parish of the Roman Catholic Diocese of San Diego, Mission Basilica San Diego de Alcalá remains a tranquil place of worship and reflection. Regardless of your religious beliefs, the first of California’s 21 missions is well worth a visit for its extensive history. It was originally constructed in Presidio Park in 1769 but moved inland to its current site just five years later. Records show that it was the first place in California to cultivate olives; tree cuttings from this mission would later be used to found olive groves at other missions around the state. It’s also home to the grave of Father Luis Jayme, the state’s first Catholic martyr; he was killed when American Indians stormed the mission in 1775 and is now buried next to the altar. Destroyed many times over, the mission was most recently rebuilt in the 1930s, but looks as it would have in the early 1800s.

The choice of whether to build a church following a Gothic Revival or neoclassical design involved more than just aesthetics in 19th-century Québec. The former tended to be associated with Protestantism, and so the construction of the Catholic Basilica of Notre-Dame in that style raised eyebrows. When the St-Jacques Cathedral was destroyed by fire in 1852, the architects who designed a new church for the site, the Mary Queen of the World Cathedral, opted for the neoclassical style that was more typical of Catholic buildings. Constructed from 1874 to 1895, it is a quarter-scale version of St. Peter’s in Rome, complete with coffered vaults and twisting columns in imitation of those of Lorenzo Bernini’s baldachin in the Eternal City. The building’s green copper dome makes a statement, too, looming as it does over the largely Protestant neighborhood. The stucco crucifix by sculptor Philippe Hébert is one of most important works of art in the church.

This late-19th-century city-owned seafood market, which was by and large abandoned after Hurricane Katrina, was reborn as an upscale food hall several years ago. The dilapidated structure was spruced up and the navelike interior painted an austere, modern white. Then a dozen or so food vendors moved in, serving as a sort of incubator for those with an idea but no desire to go the food-truck route. It’s a great place to swing by for lunch or a casual dinner—you can get craft cocktails and spend some time at the oyster bar, then browse the other offerings, which include crab mac and cheese at Fritai and alligator-sausage hash at Elysian Seafood.

Located atop The McKittrick Hotel—site of the immersive theater experience “Sleep No More"—Gallow Green is a beguiling outdoor space overgrown with flowers and vines that offers up views of the Hudson River and the High Line. It’s as popular for late-night drinks as it is for weekend brunch; art lovers can fuel up here and then hop around the Chelsea neighborhood afterward. During warmer months, the rooftop hosts “Potions and Plantings,” a monthly tea party for kids (ages 5-10) and their adults. The event outshines all other kids’ tea times in the city (and there are many) and will make the grown-ups want to return for their own happy hour.

Expats here will probably tell you about their favorite “carpet guy” (the fellow who will “give you a deal” if you drop your friend’s name), but the carpet souk on Mina Road near the main port is a great place for the uninitiated to buy gorgeous Middle Eastern rugs. The Culebra Cut, which links Gatún Lake with the Pedro Miguel and Miraflores locks, is a catchy name for a channel that the French started digging. Under the Americans, the canal’s most backbreaking work took place here where hills once stood 160 meters (525 feet) above sea level. Thousands of workers blasted through rock and shale, and shoveled and hauled earth, to create what is essentially an underwater valley as well as a peaceful passageway for passengers.

In a city known for its breakfast tacos, it can be hard to decide where to start your day. One place that will never disappoint, however, is La Villita Cafe. The options here are simple—think bean and cheese, potato and egg, and chorizo and egg—but everything is delicious, especially the brisket and egg taco. When you’re done eating, check out the neighboring La Villita art community, which provides a window into San Antonio’s diverse past.

Playa del Carmen’s winning charm emerges all along this wide pedestrian avenue, which runs parallel to the beach. Eateries here include everything from cheap fast food like Pizza Renzo to upscale restaurants and cafes; the best people-watching is from outdoor seating at the sports bar Tequila Barrel or Chez Céline bakery. The shopping scene offers international luxury brands side by side souvenir shops, but the most interesting Mexican handicrafts await at boutiques like Sin Pecado and Sol Jaguar. Since this part of town has little shade, it’s best to avoid the midday sun; instead, try an early-morning visit with some streetside coffee in hand, then revisit at sunset to kick off an evening of dining, shopping, and bar-hopping.

If visiting a miniature version of a country the size of a postage stamp makes no sense to you, stay away from Madurodam, a top tourist attraction in Den Haag featuring historic Dutch towns, ports, canals, roads and monuments re-created on a 1/25 scale. On the other hand, if you fancy learning about the history of a nation that would be underwater were it not for Dutch ingenuity, by all means visit this interactive park that tells the story behind the battle against water, as well as many historic venues that still exist in Holland today.

It’d be challenging to find a more remote place to get fish and chips than The Bus. Yet another Alaska restaurant in a bus (the state is peppered with them), The Bus serves up what could be one of earth’s most delicate fried halibut and chips. Moist fish and a crispy and golden brown crust create layers of flavor. There’s a good chance one of Hyder’s own residents caught the halibut the day before. The fries are so good you’ll keep eating them long after you’re full. Very full. Important: Check The Bus’s Facebook page before you make the drive to Hyder. Owner Diana Simpson shuts down from time to time to do some fishing of her own. Road-tripping without a stop at The Bus would make for a very sad day indeed.

Like many aspects of geography, the International Date Line isn’t so much a physical boundary as it is a human construct that tries to make sense of the world we live in. It sits roughly on the 180-degree line of longitude in the middle of the Pacific Ocean, and its purpose is to separate calendar days based on the Greenwich Meridian half a planet away. Everything to the left of the Date Line is one day ahead of everything to the right; it also separates the Eastern and Western hemispheres. Things get interesting when you get to Polynesia, where Tonga and American Samoa are in the same time zone but are one day apart, because American Samoa is in the Western Hemisphere on the far side of the International Date Line from Tonga. If you travel farther west, you’ll find that the time in Fiji is one hour earlier than Tonga. These exceptions have been made over the years by independent nations to improve commerce and convenience for their trading partners. Crossing the International Date Line is a unique experience, as it’s the only place in the world where you can either add or lose an entire day in a single second!
