    While the state of Virginia generally has more historic accommodations than you can shake a stick at, few would argue that the Houses of Colonial Williamsburg trumps them all. Guests can truly immerse themselves in an 18th-century environment (with 21st-century conveniences) with a stay in one of the original homes, shops, offices, or kitchen buildings of the Revolutionary City. Two dozen cottage-like buildings vary in size and layout, with period antiques or reproduction furnishings. Tavern rooms are closer to traditional hotel rooms, with private bathrooms and sitting areas and a great room downstairs with a fireplace for gatherings. All rooms and houses have access to the amenities of the Williamsburg Inn and Spa, discounts on Colonial Williamsburg tickets and passes, and preferred reservations for dining, spa appointments, and golf tee times. What guests are really paying for, though, is location and uniqueness of experience rather than luxury.

    The state’s first dedicated craft-beer café and boutique showcases over 500 brews in the up-and-coming Kakaako neighborhood. All seven Oahu breweries rotate through here, including Home of the Brave. This nearby brewpub not only produces great suds like the smooth Remember Pearl Harbor Lager, but it squeezes World War II memorabilia into its Brewseum (brewseums.com). The shop is especially strong on Hawaiian beers with seasonal flavors like Lanikai Brewing’s use of Surinam cherries in a sour or Honolulu BeerWorks drawing pad thai flavors into a Hefeweizen. Look for beers steeped in terroir too: Waikiki Brewing is smoking its own malt with local kiawe wood, while Aloha Beer salted a German-style Gose with ocean water!

    The Botanical Garden was established in 1600, but moved a few times before settling on its current central site in 1870. The beautiful grounds are particularly noteworthy for the extensive complex of historical glasshouses. There are 27 in total, ranging from the grand Palm House that dates from 1874 to a specially cooled greenhouse used for growing arctic plants. It’s very much a working garden, used for scientific research, but for visitors it’s a beautiful—and free—spot to spend an afternoon.

    This sprawling, 165-room mansion may be known as Hearst Castle, but officially, it’s called La Cuesta Encantada (“The Enchanted Hill”), former owner William Randolph Hearst’s affectionate name for the property. Designed by legendary California architect Julia Morgan to the newspaper magnate’s specifications, Hearst Castle was considered completed in 1947, even though it was still unfinished. Now a national historic landmark and museum dedicated to art and excess, it’s filled with Egyptian, Greek, and Roman antiquities, along with Old Master European artwork, Chinese and Near Eastern art, and art deco items—25,000 artifacts in all. There’s always something blooming in the 127 acres of gardens, whether it’s sweet-smelling hyacinth, walls of magenta bougainvillea, fragrant star jasmine, or orange California poppies (the state flower). Don’t get overwhelmed by the numbers during a visit here. Most tours of the estate focus on certain areas, instead of the entire grounds. Pro tip: The Hearst Castle private tour, a four-hour, in-depth exploration of the lavish grounds and mansion, is well worth it. The customized route can access any areas of the estate that are available to the public, but since it’s limited to a maximum of six guests, you can cover a lot of ground with your private guide and get information that shorter tours can only touch upon.

    On sunny days, Parisians head for the Luxembourg Garden, built by Marie de’ Medici in 1611 and modeled after the Boboli Gardens in her native Florence. In addition to the magnificent Medici Fountain, there are more than 100 statues arranged around the garden’s 20 hectares (50 acres), which encompass both formal French and English gardens. Here you’ll find chess players, puppeteers, children sailing tiny boats on the octagonal pool and sometimes a free concert in the gazebo.

    A few years back, when Lima’s Central Restaurante was closed because of zoning issues, Peru‘s celebrity chef, Gastón Acurio, was one of many who petitioned for it to be reopened. I knew that meant the young chef at Central, Virgilio Martinez, must be doing something truly special. Virgilio’s restaurant is located in Lima’s hip Barranco neighborhood. I stopped in solo one afternoon for lunch and was dazzled by the dishes his servers put in front of me: charred purple corn with scented octopus, lentils, yuzu, and bok choy; “mask of the suckling pig” (or pig face) with tart green apple, baby tomatoes, and galangal; and suckling goat with chickpeas, goat cheese, and lemon verbena. Each course was plated like a work of art and was a beautiful riddle on the palette. My enthusiasm for my food earned me a tour of the open kitchen and the rooftop garden, where servers pluck flowers or clip herbs for dishes like the citrus gelée with edible flowers (pictured above). Chef also gave me a tour of his incredible chocolate cellar, where he shows off his favorite chocolate bars from around the world.

    On most days in Prague, it feels like every tourist in town has gathered on the Charles Bridge. And for good reason — this 14th-century cobblestone span crosses the Vltava River, connecting the Old Town with the Lesser Town (Mala Strana) and providing picturesque views of both sides of the river, medieval churches, towers, and Prague Castle on the hill. King Charles IV commissioned the bridge in 1357. The bridge has 16 arches and protected by towers on either end: the Old Town Bridge Tower in Old Town and the Judith Tower and Lesser Town Bridge Tower on the Mala Strana side. The bridge is lined with 30 large statues of religious figures and luminaries, dating from the Baroque era to the present day The best time to go is at dawn, sunset or after dark after the crowds have thinned and romance is in the air.

    In 2016, one of San Diego’s most seasoned restaurant managers decided to open his first solo project, bringing Campfire to Carlsbad. The eatery is dedicated to the art of live-fire cooking and draws inspiration from famed Argentine chef Francis Mallmann. In the kitchen, executive chef Andrew Bachelier uses a custom 12-foot hearth, powered by a Grillworks grill named Grace, to cook dishes like manila clams with smoked pork belly, and brisket with cornbread purée. Located in a former auto repair shop, the restaurant features quirky design elements like a Quonset-style corrugated-metal arch sourced from nearby Camp Pendleton and dating back to World War II.

    The Galleria Borghese, which is set in the large public Villa Borghese park, was born in the 16th century as the collection of Scipione Borghese, a powerful Cardinal and nephew to Pope Paul V. The Cardinal amassed an enormous number of ancient sculptures, many of which are displayed on the ground floor where several Bernini statues and Caravaggio canvases also appear. The upper story, on the other hand, is home to Renaissance and Baroque paintings. Seek out Titian’s Sacred and Profane Love, Raphael’s Deposition, and Cranach’s Venus and Cupid. Unlike other collections of the era, which were kept in private palaces, the Borghese collection was intended to be open to the public, much like the surrounding grounds known as the Villa Borghese. The family collection is now property of the Italian state. Due to its dimensions and popularity, visits are limited to a fixed number of visitors every two hours and for a maximum of two hours. Be sure to book tickets well in advance and don’t bothering going to the museum without a booking.
  • Karawari Lodge is one of the most remarkable places I’ve ever stayed in what is the most incredible country I’ve ever visited. There’s no AC at the lodge, no WiFi, and very little hot water. But what there is is a real sense of adventure. Stationed on a ridge some 300-feet above the Karawari River, deep in remote Arambak country, the lodge serves as a gateway to the dense lowland rainforest that is home to a staggering array of flora and fauna and what seems like an endless number of spectacular villages. After days of exploring via riverboat, the lodge is a great place to return home to – watching the sun set over endless expanses of jungle with a cold South Pacific beer in hand is my idea of a good time.     Bear’s Hump is one of Waterton National Park’s best hikes. It’s extremely short, measuring only 2.8 km, but it involves plenty of climbing as the trail winds uphill from the Visitor Information Office towards the rocky bluffs that hang high above the townsite. The hike itself is little more than a forested staircase that will test the lungs of even the most seasoned hiker; however, the destination is absolutely stunning. From Bear’s Hump, the views extend across the Waterton Lakes and deep into the USA’s Glacier National Park. Sunset is an absultely wonderful time to check out this stunning view, but don’t forget to take a flashlight for the steep hike back down.

    You’ll hear no highway traffic at these twelve lakeside cabins and 3 bunkhouses, which sit beyond roads’ reach and are accessible only by boat. Supplies are delivered via barge, and even the accommodations float upon the water: Initially built to house logging crews, the resort’s wood-shingled cabins and docks sit right on Ross Lake, supported by massive red cedar float logs measuring more than 3 feet in diameter. Azure waters lap against your front porch, where deck chairs face a row of mighty mountains (the largest, Snowfield Peak, reaches 8,347 feet). You can spend your days gazing at those views, or you can use the resort as a base for exploring North Cascades National Park and Ross Lake National Recreation Area. Rent one of the resort’s motorboats, canoes, and kayaks to access trailheads sprinkled along the lakeshore, or just hike from your cabin: The Big Beaver Trail winds past the resort. There’s no onsite restaurant, but all accommodations include kitchen facilities, so pack in all your own food and beverages. After the 2.5-hour drive from Sea-Tac, you have two options for reaching the resort: You can hike about a mile to Ross Lake, where the resort will pick you up by boat ($2 per person), or you can catch a ferry/truck combo from Diablo Dam ($14 per person, ferries run twice daily at 8:30 a.m. and 3:00 p.m.). Just don’t wait till the last minute to make your booking, since reservations typically fill a year in advance.

    The owners of Sidework hit on the idea for their cozy little eatery after listening to locals grumble about how hard it was to find a low-key place to have a drink and casual bite during the summer and winter tourist seasons. They already owned the brewpub around the corner, so they turned the adjacent space—which they used for “sidework” like filling water pitches and rolling silverware into napkins—into the spot everyone was craving. Today the narrow, intimate bar serves self-described “American-American comfort food,” which includes small plates like blue claw crab soup, fig flatbreads, and charcuterie boards, and larger dishes such as olive-oil-poached branzino and beef short ribs in red wine reduction. For the perfect start to your night, drop by during the daily happy hour for discounts on select wine, beer, cocktails, and mini filet mignon sliders.

    What began with Azul y Oro—chef Ricardo Muñoz Zurita’s high-end university “refectory”—is now a multi-restaurant group famed for an almost museum-like reverence for traditional Mexican cooking in all its infinite variety. The downtown iteration, called Azul Histórico, is a gorgeous space in the courtyard of a 17th-century colonial palace (once inhabited by descendants of the Emperor Montezuma) and is now one of the Centro’s most sought-after tables, terribly romantic beneath its tree-and-candlelight canopy. Menus are seasonal and themed—often focusing on cuisine from Mexico’s regions and states—and are sure to present some delicacies even most Mexicans never knew before. Ask questions and swing just beyond your comfort zone. Out-of-towners and locals alike love the flair with which dishes emerge from the kitchen, in extravagant, eye-catching Mexican pottery.
