Both beginner and experienced kayakers will have fun on this leisurely (and super-easy) paddle across Mendenhall Lake. (Both guided and unguided options are available.) The paddling is, really, just 10 percent of the fun—maybe 25 percent. Over the past seven years, 1 Hotels has proven that eco-conscious luxury can be successful in North American cities ranging from New York to West Hollywood. The 1 Hotel Toronto, in the center of town, is no exception. Architecture and design firm Rockwell Group partnered with the developer Athens Group for 1 Hotel’s first Canadian property, bringing in Toronto-based craftspeople to build custom dining and side tables out of local wood in the 112 biophilic guest rooms and public spaces, where native plants fill shelves. The hotel works with recycling partner Green Planet to convert leftover kitchen oil and grease into biofuel.

The surprises at this excellent Italian restaurant in Disney Springs start right when you arrive and gaze upon the airy dining room. Complete with 50-foot-high ceilings, a grand staircase, and sweeping views over Lake Buena Vista, it’s themed after an abandoned airline terminal, with lots of fun travel touches that include a vintage-style glove dangling like a giant chandelier overhead. Chef Theo Schoenegger is a native of Italy, and his menu spotlights specialties from Rome and Sicily. Delicious Italian cheeses and cured meats are perfect starters for sharing. And signature dishes include Sicilian arancini di carne (rice balls with meat) and a spiral pasta dish topped with crab called busiate con granchio. Italian red, white, and Prosecco wines star on the well-informed wine list. And don’t miss a plate of cannoli to share for a sweet finish.

Looking at a map of this trail might cause a little bit of confusion considering the name, since the shoreline it follows is that of an ancient lake that covered most of what is now northwest Utah. Lake Bonneville, which was a freshwater lake, existed in its largest form around 14,500 years ago. Today, the Great Salt Lake is all that is left of the Pleistocene-era lake that was nearly the size of Lake Michigan. The trail that is being built along this long-ago shoreline is currently in segments totaling 100 miles, but there is a proposal to expand the trail into 280 continuous miles stretching south from the Idaho border to the town of Nephi, Utah.

Café Du Monde is always open; it’s the clientele that changes—from visiting families and local pensioners early in the morning, to couples in the evening, to Bourbon Street refugees looking for coffee and ballast in the night’s thinnest hours. The beignets are similar to Spanish buñuelos, fried fritters of dough, and are one of those French traditions that’s survived here more durably than in France. While probably not on anyone’s diet list—they come piled with powdered sugar—they’re surprisingly light, and an order (which equals three beignets) disappears with unusual haste.

Making a new luxury lodge in Africa stand out is challenging, but Xigera Safari Lodge, on the Moremi Game Reserve in Botswana, hits all the high notes as the shiniest new offering in a rising African destination. Run by the Travel Corporation’s Tollman family, the sustainably built lodge has design inspired by the Okavango Delta spearheaded by Toni Tollman, director of design, and the first Tata Harper spa (known for nontoxic and organic products) in Africa. Each of the 12 suites—including one two-bedroom family suite—and public areas will feature artwork by leading African artists. The entire property will sit on two small islands, floating slightly above lily-filled lagoons. And the Tollmans really do take sustainability seriously—they built the Xigera Energy Centre to meet more than 95 percent of their energy needs. The Travel Corporation, today with 42 travel brands, including Red Carnation and Contiki, started in Africa, and it has been the Tollmans’ lifelong dream to open this lodge—a full-circle coming home story for the family and brand. International air travel will open to Botswana as of December 1, and travelers must present a negative COVID test taken within three days of arrival.
