    Chef Jorge Vallejo spent time in the kitchen at Pujol before he and wife Alejandra Flores opened Quintonil, giving the former boss a run for his money. Their place, too, has become a fixture on best-restaurants lists, and is changing how people understand Mexican food. Taking its name from a weed that not long ago “decent” Mexicans wouldn’t dream of eating, Quintonil seeks to rescue and preserve discarded Mexican ingredients—particularly heirloom vegetable and herbal varieties—as part of the progressive and sustainable eating program it so elegantly advocates. Menus change seasonally, but a recent bill of fare included an avocado tartare with ant eggs and quelite-herb chips; chilacayote squash in mole with basil; and a rich chocolate-and-pinole-flour parfait. A tasting menu of Neronian proportions is also available.

The rooftop pool (open to restaurant as well as hotel guests), occupies a prime spot on one corner of Six Points, that crazy intersection where three major shopping streets cross paths. That means the regulars are a mixed bag, but all come in for a good time, whether that means for brunch in the newly redesigned Café Robey street-level restaurant, to drink until dawn at the poolside Cabana Club bar, or to sneak up to its new sister, the Up Room, at the top of the deco tower.

Owned by a husband and wife restaurateur duo from Jalisco, the western Pacific district of Mexico, Loló is open for dinner and brunch, highlighting traditional Mexican flavors with fresh Californian ingredients. Order several of the smaller plates—try the panko avocado tacos or the huitlacoche and requeson, stuffed wonton ravioli—and share. Reservations available. Loló is open Mondays through Thursdays from 6 pm to midnight and Fridays through Sundays from 11:30 am to 5 pm and 6 pm to 1 am. Sunday brunch is available from 11 am to 4 pm.

With caught-the-same-day seafood and beef, poultry, and vegetables sourced from Mexico, the menu offers plenty of delicious dishes, including a grilled seafood platter with shrimp, scallops, and octopus. But those in the know also visit Tequila to imbibe the spirit after which it’s named; the restaurant has a bar stocked with more than 50 different kinds of tequila and bartenders are more than willing to tell you about the similarities and differences among them all. The backdrop for all this is an oversized patio surrounded by fruit trees and the chef’s herb garden. Smokers can take a turn through the walk-in humidor, featuring Cuban cigars that are impossible to get back in the United States but are perfectly legal in Mexico.

    Breakfasts in Mexico are a lot more interesting than eggs and toast. Start with a cafe de olla (coffee made in a clay pot with brown sugar and cinnamon) or hot chocolate with bread to dunk in it, then move on to the main course. A lot of the popular Mexican breakfast dishes are tortilla-based. These chilaquiles are made with crispy fried tortillas that are drowned in spicy tomato sauce and topped with queso fresco, onion and parsley. A breakfast like this will give you plenty of energy for a day of sightseeing. The markets in Oaxaca offer great breakfast options, especially if you’re looking for a large meal that will fill you up and keep you satisfied until the late lunch that is customary in Mexico. The Mercado de la Merced has a few good options, including Fonda Florecita and Fonda Rosita, which both offer delicious breakfasts.

    Esperanza, an Auberge Resort, sits on the southern tip of the Baja California Peninsula, offering guests exceptional views of the Sea of Cortéz. Each of the hotel’s 57 rooms faces the sea and Esperanza’s private beach but also offers access to four separate swimming pools. Hotel staff keep guests as busy as they want to be with a full schedule of activities, some of which are the usual Baja resort suspects like yoga lessons and cooking classes. A number of options are quite unique, however—book a master tequilero to teach you about the fine art of tequila appreciation, or take classes in Spanish, salsa, painting, and more.     La Capilla de la Familia Sagrada sits at the base of Black Mesa, a sacred mountain on the San Ildefonso Pueblo reservation. It is one of the most photographed buildings in New Mexico. The little adobe chapel, against the backdrop of the Sangre de Cristo mountains, is dramatic in every season of the year. It can be seen from the road between Espanola and Los Alamos, but cannot be visited without permission from the Pueblo.

    La Virgen de Guadalupe-Our Lady of Guadalupe–is revered by Mexicans, and her image is ubiquitous, found in every form imaginable, from traditional statues to bumper stickers. She also lends her name to any number of businesses and buildings, including the Basilica to which faithful flock–many on their knees or carrying crosses–each December 12. The arrival of the pilgrims is a sight to behold, but so is the basilica, an architectural marvel, which you can visit any time of the year. Completed in 1976, the present basilica is not the first one to have sat on this site; an older one, which needed to be replaced because it was sinking, remains on the grounds and is open to the public after renovation and rehabilitation. The principal architect, Pedro Ramiréz Vázquez, who died in 2013, is responsible for some of the most compelling modern buildings in Mexico City, including Estadio Azteca and the National Anthropology Museum, as well as a number of buildings throughout the country and abroad.

    If anything’s endemic to Orange County it’s surfing—there are 40 miles of coastline here, after all. It’s not hard to find passionate practitioners of the sport, but doing is one thing and teaching is very much another. For newbies or even intermediate surfers looking to get back on a board, La Vida Laguna’s approachable, confidence-boosting instructors are the surest way to success. In private and semi-private lessons, their goal is to ensure that their surf pupils—starting from age eight—stand up on a wave, of course, but they also want to create more ocean advocates in the process. Wave safety and selection plus etiquette training are part of the lessons, along with pop-up drills, positioning, and gentle pushes at Thalia Beach, which has consistently calm waves for beginners. Guides also lead stand-up paddleboard lessons, hikes, and kayak adventures (expect frequent sea life sightings), tailoring and combining experiences upon request. Appointments are necessary and can be made on the phone, online, or at the company’s historic Craftsman bungalow in downtown Laguna. Local tip: For fewer surfers in the water, book a couple lessons on weekdays during the winter season.

    On the non-descript, busy corner of Bucareli and Morelos streets in Mexico City is a café with a famous history: Fidel Castro and Che Guevarra met here at Café La Habana several times, chain smoking and drinking strong coffee, to plan the Cuban Revolution. Nowadays, you can still get excellent coffee—and pretty good food—while you plan something a little less dramatic (but more enjoyable), like your vacation itinerary. Old journalists and businessmen congregate here for hours on end while salt-of-the-earth, slightly surly waitresses take your order and bring you your food and drink. Come for breakfast and order their chilaquiles, motuleños, or molletes, and wash it down with an espresso or café americano.
