    Kailua Beach is always named one of the best beaches in the world. It has the most deliciously soft sand, gentle surf, and maybe a turtle ( honu) to swim with. Kailua Beach is actually many beaches. For a fascinating study on ancient beach names, take a look at the historical Hawaiian names in John R.K. Clark’s book “The Beaches of Oahu.” In modern times the beach names are three. Oneawa ( AKA Castles), lies to the north near the house the President favors for holidays. Kalama sits in the middle of the crescent named to honor Queen Kalama the wife of King Kamehameha III, former owner of the entire Kailua district. Kailua Beach Park is thirty acres with parking, picnic facilities, lifeguard and restrooms. Kayak rentals are close by and you may pull the boats across the street, stopping for a custom made sandwich at Kalapawai Market, and paddle out to one of the Mokulua islands. If you want a quieter experience albeit with no facilities or life guard, try Kalama Beach via any marked public right-of-way along Kalaheo Avenue beginning in 300 block and proceeding north. Pay attention to no-parking signs; find parking down a side street off Kalaheo Avenue TOWARDS the mountains. Leave nothing of value in your car, take chairs, towels, sunscreen, hats, a cooler of water and perhaps lunch. If winds pick up, pack up and head to docile Waikiki.

    Liguria is an institution in Santiago. It’s the default for meeting friends and colleagues over chilled draft beers called schops, or dangerously loaded cocktails. The bar scene is animated and starts in the late afternoon around happy hour and ends in the wee hours of the morning. The kitchen pumps out tasty Chilean bistro-style fare ranging from countryside rabbit in mustard sauce to their much renowned “carne mechada,” a braised beef in tomato and red wine chopped up on pasta or sliced down into sandwiches. Choose from one of their signature burgers, with selections like standard beef burgers, alongside lamb, chicken, turkey and veggie patties. Urban Stack also prides themselves on their bar, which leans heavily on bourbon and, of course, “Tennessee whiskey.” Try the Dixie 8, made with Chattanooga Whiskey. The renovated Southern Railway Baggage Building is the best place to enjoy a cocktail in Chattanooga.

Housed in a building from 1860, the café is owned by New York transplants Andres and Zoltan, who have created a fun, funky space with a true artisanal spirit. Thanks to relationships with the best coffee producers in Nicaragua, Espressonista’s coffee drinks are the best in Nicaragua. All ingredients are sourced from local markets or farmers, and the same attention to detail can be found in the design of the space and the plating of the meals.     Named for its owner’s “poz-itive” vibe, this casual, welcoming restaurant ranks among Dominica’s best. Expect Cajun, Creole, and Caribbean fare in the mix, along with fusion dishes and strong vegetarian options. Menu standouts include callaloo soup, veggie rice, and snapper in coconut-curry sauce, but the lobster, grilled with lemon-garlic butter, tends to steal all the headlines—or at least those not occupied by the fresh juices and home-infused vodkas. Open for dinner only, Poz is quite small in size, so make a reservation to avoid waiting for a table.

    Dream about a Caribbean beach bar and chances are you’ll imagine someplace like MooMba, just south of Palm Beach. Here, you’ll find oversize palapas, tiki torches at night, and a crowd looking for fun with their feet in the sand. From its lounge chairs positioned under swaying palms to its extensive list of tropical cocktails, the watering hole is really what an island vacation is all about. To eat, there’s a buffet, with Sunday’s beach barbecue theme being your best bet. Go at happy hour, which is timed to coincide with the sunset, then stay into the evening for live music and DJs.

    Located on the island’s unassuming south coast, down a street that doesn’t even have a name (which isn’t uncommon in Barbados) sits a little beach bar called the Carib. Wander up to the wood deck and smile at the Bajan waitress pulling double-duty behind the Mt. Gay Rum-lined bar, as she waves her hand at you, the universal sign for “just sit anywhere.” Pull up a non-luxurious plastic chair and soon you’ll find a cold Banks in your hand (the local brew - about the color of a Bud Light but with much more flavor) and a plate of steaming Bajan food on its way. The Carib, which I eat at almost daily during my time in Barbados (I’ve been to the island seven times), has the best flying fish on the island. Order yours platter or sandwich style, with sides of cou cou (a local dish about the consistency of mashed potatoes) and salad. Be sure and start your meal with a basket of pipping hot fish cakes - also the best on the island. Luckily when you’re done with lunch and ready for a nap, the beach is a few steps away. Grab a chair and an umbrella for $10 U.S. for the entire day. You probably have the beach to yourself, until school gets out when the local youth will stop by for a dip in the ocean and maybe a game of cricket.
