    When the Four Seasons Hotel Philadelphia moved out to the Comcast tower, the hotel was transformed into The Logan, a contemporary and city-centric hotel. Guestrooms decorated with unique local artwork have marble bathrooms, Bluetooth connections, and large windows that look out onto Swann Fountain and Logan Square. A variety of suites can suit travelers of various needs, with bunkbed rooms for families, and flexible layouts with Murphy beds for entertainers. The Philadelphia-inspired decor is echoed throughout the hotel, from the lobby chandelier with images of 300 notable residents like Joe Frazier, to the abstract portraits of Grace Kelly outside the elevators.     Especially after its recent $35 milllion refurbishment, Four Seasons Costa Rica sets the standard for service and luxury in Costa Rica’s burgeoning luxury resort market. Its location is unmatched: perched atop a narrow isthmus, overlooking beaches on both sides, at the very tip of the Papagayo Peninsula. Three swimming pools form the hub of action, spanning the width of the peninsula; on one side of the enormous main pool is an adult pool leading to serene Playa Virador on the Pacific, while the busier family pool leads down to Playa Blanca, where most of the water activities happen—snorkeling, stand-up paddling, kayaking. There’s also an 18-hole Arnold Palmer–designed golf course that’s been tamed from the surrounding jungle. Guest rooms have marble baths, and outdoor terraces or verandas, while the larger suites (one- and three-bedroom) include their own pools. For light dining options, try the ceviche offerings poolside at Bahia or Italian seafood at Pesce. For a splurge, head to Caracol at the golf course for steaks and lobster tail.

Try Bar Ferd’nand next door, also co-owned by Dillon, for a glass of wine and simple bar snacks, or take home a bottle.

    Toro Toro by Chef Richard Sandoval is a new 300-seat restaurant and bar that combines culinary flavors of Asia and Latin America. During a recent trip, we sat down in the main dining room to sample the award winning arepas corn cakes, small plates and handcarved steak entrees. The Toro Toro brand originated in Dubai where Sandoval has showcased his homemade empanadas to tens of thousands of diners. The bar is lined with toffee-colored banquettes and stone bull statues. Be sure to try the “Machu Picchu” cocktail consisting of pisco, St-Germain and fresh jalapenos. For groups, create a multi-venue event for 300 pax with the Olay breakfast restaurant next door. Table 40 is the private dining room located inside InterContinental Miami’s contemporary kitchen. Available for group events and intimate dinner parties, Table 40 seats 14 for a luxurious dining experience featuring cuisine by InterContinental Miami’s corporate chef, Alex Feher. “We try to enrich one’s experience at the InterContinental,” says Kovensky. “Whether it’s the level of service, the artistic presentations or the F&B.”

    The Rosedeer Hotel is one of the first buildings you see in Wayne, sitting squat on a narrow piece of land between the railroad tracks and the hills behind. It looks like a movie set, and has been. Running Brave, Shanghai Noon, and In Cold Blood were shot here along with numerous commercials and music videos. A ten-gallon hat riddled with bullet holes wouldn’t look out of place. Don’t expect fancy cuisine—burgers are the norm, and if you want a steak, you’ll be delivered the meat and instructions on how to use the BBQ out back. But people don’t come for the food. Wayne is an authentic Western outpost, built before the road and at one time a thriving town, thanks to the nearby Rosedeer Coal Mine. People come in now for photo ops, for a chance to see one of the few remaining holdouts of the Wild West, and because the 100-year-old hotel and adjacent saloon are said to be haunted. But owner Fred Dayman, who was born and raised in the hotel, won’t talk about it. Book a room, if you dare, and find out for yourself.

Floor-to-ceiling windows encircle the dining room so it appears to be floating above the ocean, all the better to watch the sunset while eating hand-shucked oysters and sipping Rum for Your Life cocktails. Chef Rainer Schwarz’s menu centers around seafood, prepared with a range of international influences—Spanish octopus is grilled with chickpea puree and zahtar, and lobster stars in a spaghetti carbonara. The spot draws a stylish crowd not just for dinner but also weekend brunch, with a must-try version of eggs Benedict (made with Berkshire ham and blood-orange hollandaise, plus steak or crab). While waiting for a table, sidle up to the Stateroom Bar, the former home library of Old Hollywood actor Slim Summerville, for artisan libations heavy on fine bourbon and whiskey. Pro tip: Locals know best, and they can’t get enough of the whole fried branzino, served with roasted shishitos and ponzu sauce.

    In the 1920s and 1930s, this heritage-listed property on tree-lined St. Kilda Road was an automobile showroom that sold the ultimate status symbol—the Rolls-Royce. Now it peddles another sort of luxury good: the boutique hotel stay. In the lobby, the Royce Hotel honors its Art Deco past with an arched ceiling in imitation hammered gold and lovingly restored wrought-iron chandeliers, but a zebra rug and curved mirrored walls anchor the design in the present. Some of the property’s 100 rooms and suites feature two levels and soaring bay windows, while others have kitchenettes, spa baths, and balconies with views of the city skyline, but you’ll want to venture out for the contemporary Australian specialties, including grilled steaks prepared from a selection of local grass-fed beef, at the hotel’s chic 100-seat restaurant Dish. Central though it is, there’s no lack of green space nearby: The hotel is situated between the sprawling Royal Botanic Gardens and Fawkner Park, while buzzy South Yarra is just a 15-minute walk away.

    Tucked on the corner of Hopkins Avenue and Monarch Street, White House Tavern occupies one of Aspen’s oldest buildings, a small Carpenter Gothic–style white house that was built in 1883. The offerings here don’t change from when the restaurant opens for lunch at 11 a.m. to when the sky darkens and the cocktails start flowing into the night. The menu is made up mostly of hearty salads (Thai steak and noodle, kale with rotisserie chicken) and tasty sandwiches, including an incredibly crispy chicken sandwich and a flavorful, perfectly cooked prime rib au jus piled high on a homemade roll. The cocktail list is short and tends toward the classics—negroni, margarita, martini—but the wine list is surprisingly ambitious.

    For years now, the neighborhood between the Palais-Royal and the Opéra Garnier has been a hangout for Japanese and Korean ex-pats and visitors in Paris, with the Rue Sainte Anne as its culinary epicenter. Lined with Japanese restaurants and Korean groceries, this is where to come for a ‘break’ (if that’s even the right word) from steak-frites and macarons... When I lived in Paris, my Japanese neighbor told me about “Higuma,” which I subsequently introduced to all of my French friends. I’m glad to say that when I re-visited this ramen-house recently, it hadn’t lost its non-chic-charm. No sushi here--fresh hand-made noodles, donburi and curry will fill you up, along with perfectly steamed/fried gyoza--known here as ‘raviolis japonais.’ Grab a seat at the counter and watch your steaming bowl come together. Lines are common at lunch-hour. And even though Higuma now has three locations in Paris, THIS is the original: no-nonsense and venerable in the 1st arrondissement... As for the spelling of ‘lamen’ for ‘ramen’ in this Parisian institution--just enjoy the L-R confusion. Here, slurping won’t be considered gauche...and remember, “bon appétit” = “itadakimasu” and “merci” = “arigato gozaimasu!”

    Astoria’s Cannery Row has enjoyed a resurgence as a tourist destination for Oregon Coast visitors. As the former state capital clings to the Columbia River with the determination of a stubborn child, dwindling fishery and logging economies give way to opportunities. Bridgewater Bistro pairs perfectly with the new vision for the city’s future. With wonderful water views in a historically inspired space, the Bridgewater is an open and welcoming environment with two levels of seating. Summer sends patrons out on the expansive deck shadowed by the Astoria-Megler Bridge. The menu is focused and locally sourced. Our party started with the Bloody Mary oyster shooters and moved through the salad selection, pausing to peruse the extensive wine list. Local craft beers and specialty cocktails provide plenty of drink options. The main course was split between the fresh salmon and the steak offering, and both were prepared with inspired seasoning. Staff are friendly and professional with a genuine commitment to the work they do. The views have a tendency to distract from the food at hand, but those dishes find a way to hold their own in the competition for a diner’s attention. Combine value, quality, and service in Oregon’s NW corner for a memorable dining experience at the Bridgewater.

    Whether you choose the wine bar in the basement, the gourmet food hall on the ground floor (where you can also buy hot food to eat in the wine bar), or the fine dining restaurant in a big, bright open space on the first floor, you won’t be disappointed with the quality of food in this Exchequer Street emporium, much of which is organic. Main courses on the menu include dishes like grilled Irish lamb rump with broad bean succotash, black garlic and aubergine purée and smoked potato croquette, or aged Irish rib-eye steak with a choice of Béarnaise, brandy peppercorn or truffle butter sauce. There’s also an excellent lunch menu and the pre-theater dinner menu is good value and runs all night Sunday to Tuesday and from 5.30 to 7pm, Wednesday to Saturday.

    L’Express, on rue St-Denis in the Plateau Mont-Royal neighborhood, opened in 1980 and has about it the air of a beloved institution. Indeed, with its timeless style, it feels even older than it is. This popular spot serves classic renditions of bistro fare—steak tartare, bone marrow, onion soup—into the early morning hours (2 a.m. except for Sundays, when it closes at 1 a.m.). When the kitchen ventures into new territory, the results are impressive. The spaghetti with mushrooms is unconventional in its presentation (topped with a healthy serving of arugula)—one of those dishes you try on the road and then want to re-create at home. Reservations recommended.

    Set in the UNESCO World Heritage-listed Banff National Park, the year-round Fairmont Banff Springs was the brainchild of Sir William Cornelius Van Horne, president of the Canadian Pacific Railway. On arrival at Banff, the tourism visionary made the canny observation, “Since we can’t export the scenery, we’ll have to import the tourists;” thus, he set about building a string of great railway hotels across Canada. The original wooden hotel that opened here in 1888 burned down in 1926, but was replaced two years later with the grander castle-meets-baronial-Scottish-hall structure that exists today. The public lobby spaces are vast, and there are countless nooks to curl up in with a book where guests will remain undisturbed. With its signature stone walls, turrets, and winding staircases, Van Horne’s gambit paid off: The Fairmont Banff Springs feels for all the world like an elegant and ancient castle, albeit one with all the modern conveniences.

    Rooms in the main building come with quirky period details such as chandeliers and crown moldings, while those in the Stanley Thompson Wing (the old staff quarters) are more spacious and a solid bet for families—who will also enjoy the kids’ club packed with activities such as campouts, science projects, and arts and crafts. The hotel also has 11 different restaurants, cafés, and bars, with the choices so diverse—from sushi, fondue, and Italian to Canadian steakhouse and southern U.S. barbecue—that guests are issued a food guide upon check-in to help them make the most of the hotel’s offerings. Of course, there are also a wide array of activities to help round out your time between meals, from skiing and rounds on the resort’s 27-hole championship golf course to downtime in the expansive Willow Stream Spa, which features indoor and outdoor whirlpools, a European-style mineral pool, and 23 rooms for therapeutic treatments.

    You don’t have to play golf to enjoy the Innisbrook Golf Resort located in Palm Harbor, Florida about 30 minutes northwest of Tampa International Airport, Innisbrook is a respected golf club with four golf courses, driving range, and golf school, But for members and non-members alike there is more to enjoy at Innisbrook than playing the back nine. There is full-service resort at Innisbrook. . There are 600 units (studio to 2 bedroom, with fully equipped kitchens) spread out over the resort in clusters of low-key two and three story buildings designed to merge into the natural surroundings of large oaks, palms, landscaped grounds, and golf courses. There are six restaurants,cafes, and bars. Packard’s Steakhouse specializes in premium beef steaks and seafood including local Grouper in season. There are six pools including the Loch Ness pool which is a family-oriented pool complete with sandy beach, shallow play areas, slides, and a waterfall. There is the luxurious and rejuvenating full-service Salamander Spa and adjacent Fitness Center. There are 11 clay tennis courts. If you forget your tennis gear, you can rent it. If you don’t have a partner, the resort has a pool of members who will gladly come play with you. There are paths throughout the 900 acres of the resort perfect for jogging, walking, and biking. Didn’t bring your bike? There are bike and surreys for rent. Lake Innisbrook is stocked with fish and fishing equipment is available to rent. Catch a bass? One of the restaurants will cook it up for you for dinner. The resort provides shuttles to nearby attractions including the beaches of Honeymoon Island. The Salamander Spa and Packard’s Steakhouse restaurant are open to guests from outside the resort with prior reservations.

    While other hotels rely on edgy decor, the Knob Hill Inn makes a statement with classic elegance and quality details like radiant floor heating in the marble bathrooms, feather bedding on pillowtop mattresses, and balconies with scenic views. A muted palette of neutral shades creates a calming ambience throughout, and the location—just outside downtown Ketchum—contributes to the tranquil vibe. Rooms feel like cocoons, not party zones, but the inn does offer a shuttle to downtown restaurants and Sun Valley’s ski lifts when you’re ready for some action.

    If you’d rather stay on site, the Grill at Knob Hill hums with energy come evening, when guests and locals alike crowd into the cozy, fireplace-warmed space for goblets of wine and mountain-inspired meals. Baskets of fresh-baked popovers with honey butter kick off the feasting, while Kobe beef burgers and aged steaks dominate the rest of the menu. Although the inn does allow children—and dogs—it mostly appeals to couples, so the indoor pool, hot tub, and sauna offer spa-like serenity.
