    You probably didn’t think of traveling to Peru for world-class French cuisine, yet here it is. The minute you walk in, you leave the Andes behind in favor of a European vibe, reflected in music, decor, and, of course, what’s on the table. Everything on the menu is French, including the expansive choice of wines. The five- or seven-course tasting menus are the perfect way to sample as many flavors as possible, but if ordering à la carte, save room for sumptuous desserts and a delicious coffee, picking your personal ideal from a wide range of blends.

    The JW Marriott is internationally known for its luxury brand, and El Convento Cusco just might be one of the most impressive properties in its portfolio. Here, you don’t even have to travel to Machu Picchu for an archeology lesson, as the learning begins almost the minute you step through the hotel’s stunning brick arches—they were painstakingly rebuilt by hand from what remained of a 16th-century Augustinian convent, which was in turn built on Ican and pre-Incan ruins. Guests can wander downstairs through two exhibition rooms of excavated artifacts, or join free guided tours each evening at 6 p.m.

    Rooms are individually decorated with sleek, dark-wood furnishings and Peruvian travertine tabletops. A handful have small balconies with views, while some on the lower floor look out onto one of the many remaining Incan walls that thread through the city. You can request to have oxygenated air piped into your room to help combat the discomfort many feel at 11,000-plus feet of elevation and there’s even an EMT on staff just in case. When hunger strikes, head to the on-site Qespi Restaurant, considered one of the best in the city for its exquisite interpretations of Andean cuisine.

    Limo offers Peruvian fusion par excellence that uses typical ingredients in daring new ways. It’s particularly known for fish, including many types of sushi, as well as a variety of entrées that feature tuna, shrimp, octopus, crab, salmon, or trout, some inspired by Andean recipes, others taken from the Japanese tradition. Not a seafood lover? No problem! Limo also has delicious options featuring chicken, pork, beef, and alpaca. This second-floor restaurant overlooking the Plaza de Armas is also a great place for sampling pisco cocktails. Reservations are a good idea, especially if you’d like to score a balcony table with a town-square view.

    One of the city’s top restaurants, Cicciolina offers Italian-style dishes with a Peruvian flair, such as quinoa-encrusted prawns and osso buco with pumpkin ravioli topped by local cheese and a touch of Andean mint. There’s plenty to choose from, including seafood, duck, beef, alpaca, chicken, and even a few vegetarian dishes, as well as perfectly done handmade pasta. You can pick from either the tapas or the full-restaurant menu in the bar area, but not the other way around, so you may want to go twice, as the tapas are fabulous, too. A great wine list and yummy desserts finish out options in a small, lovely venue. Reservations are a must.

    A Starwood Luxury Collection hotel in the heart of historic Cuzco, Palacio del Inka occupies a former palace, built by the Incans as part of the Coricancha (the centerpiece of their empire). Since ancient times, it’s had many lives—it was seized by the Spaniards in the 16th century, served as a museum in the 1800s, and finally became a hotel in the 1970s. Today, the property features artwork and artifacts from both the Incan and colonial eras, which guests can tour each day at 5 p.m.

    Situated around a large central courtyard, the 203 rooms are decorated in a colonial motif, with carved-wood furnishings, jewel tones, and gold accents. Also on-site is a small but very nice spa with a hydrotherapy pool, dry sauna, Turkish bath, whirlpool tub, and showers with lighting effects, as well as a small gym with cardio machines and weights. While Palacio del Inka is just a few minutes to Plaza de Armas and its many eateries, guests would be remiss to not dine at least once at the hotel’s Inti Raymi Restaurant, which serves Andean and international dishes made with locally sourced ingredients. Before dinner, grab a drink at the Rumi Bar, which offers excellent cocktails and a free pisco tasting each night at 6 p.m.

    This Cuzco corner presents a notable juxtaposition between ancient Incan and Spanish colonial architecture. Since the Incas worshipped their sun god, Inti, above all others, this temple in their imperial capital was the most important of the entire realm. It was here that they brought the idols of all peoples they assimilated, to offer them representation as they demanded allegiance in Cuzco. When the Spanish arrived, they tore down much of the temple and built a monastery on top of it. However, the walls that do remain provide stunning examples of pre-Hispanic engineering, particularly the rounded outer wall that can be seen from Avenida del Sol.
  • Sacsayhuaman is an impressive Inca fortress on a steep hill that overlooks all of Cusco. The ruins are humongous, but archeologists believe that the original site was as much as four times larger. What remains today are the impressive outer walls constructed in a zigzag formation across three levels. As with many Inca sites, the walls are made from massive, irregularly-shaped boulders that stick together like a jigsaw puzzle without any additional support. The stones are laid together so tightly that a sheet of paper will not fit into many of the cracks. As the night comes down, this is a perfect location to appreciate the stars.

    Like its nearby sister, the Belmond Hotel Monasterio, the Belmond Palacio Nazarenas is a hotel with ancient roots: the onetime private residence-turned-convent—and now turned hotel—has original Inca walls and colonial-era frescoes.

    As a newer hotel (it opened in 2012, following years of renovation and restoration), the all-suite property also has plenty of modern touches. All rooms are enriched with oxygen, to help guests adjust to the altitude, and have iPads, WiFi, and espresso/tea bars; depending on the category, they might also have heated bathroom floors, balconies, or original Inca and colonial design features.

    Other perks include Cusco’s first outdoor heated pool (with an adjacent pool bar), an intimate restaurant highlighting seasonal ingredients, and butler service for all—just like the Palacio’s original residents would have enjoyed.

    Cap your trip to Machu Picchu with a pisco sour on the Orient-Express train ride back to Cuzco. After boarding this luxury train for dinner and the return journey, everyone meets in the bar car for a drink. Live music, the rocking of the train, and the excitement from just experiencing Machu Picchu is a buzz to remember.     For those of us used to seeing chicken cut into parts, wrapped in plastic, and cooling in supermarket refrigerators, a trip to a local Peruvian market is fascinating and a bit daunting. At the biggest market, San Pedro, just up the street from the Plaza de Armas, you’ll find fruits, vegetables, alpaca charqui (the Quechua source of our word jerky), pig’s heads, herbs, fruit juices, weavings, and much, much more. You’ll see a fair number of foreigners wandering here as well, so for an experience that feels more authentic, try San Blas Market or Rosaspata, both off the tourist track.

    Cherubs hang from the ceiling and flying pigs decorate the bar. Aquarium bathtubs covered in glass are the tables and funky, modern art with Christian themes decorate the walls. Behind the bar a disco ball glitters the rows of liquor bottles and the bartender. The food is modern and classic: cuy and alpaca along a long list of beef tenderloin specialities.
  • Let the Urubamba River set your course during a thrilling rafting adventure along the Ollantaytambo rapids, available through the Belmond. The river helped form what is now the Sacred Valley, and along the way you’ll not only sense its power, but also get a feel for some less visited corners of the region it created. You’ll pass towering eucalyptus trees and the ruins of Inca terraces and more as you make your way down river, ending with a picnic lunch before returning to the hotel by car.     The Inca Trail is perhaps the most famous trek in Peru. This is the road to Machu Picchu, an ancient route that leads from the Sacred Valley into the heart of the Andes. You must obtain a permit and hire an official guide in order to hike the Inca Trail proper. There are plenty of tour operators in Cusco that offer trips up to Machu Picchu, so you should definitely look at reviews before you choose. For better or for worse, the tours are all-inclusive. The local tour operators employ porters to carry your packs and set up a camp. A team of local chefs will prepare three meals a day, and many hikers come back raving about the delicious meals. Keep in mind that the trek can be tough, especially in the first few days. The trail is often narrow, and it flirts with formidable heights. The mountains in this part of the Andes can rise well over 13,000 feet, and many hikers find themselves suffering from altitude sickness. Make sure to take a few days (in Cusco or the Sacred Valley) to acclimatize before you begin the journey. Finally: make sure to plan ahead! The Peruvian government limits trail access to 500 people per day, including porters. This regulation protects the local ecosystem and the delicate ruins, and it ensures that the trail won’t be too crowded. However, it also means that permits for the peak summer season sell out months in advance. If you aren’t able to get a permit for the classic Inca Trail, never fear: there are various other trails that lead to Machu Picchu.

    Tours of the Sacred Valley, and the entire Cuzco area, often feature side trips through gorgeous landscapes like Moray, an archaeological site with remarkable concentric agricultural terraces. It’s believed the Incas used these terraces—on which temperatures vary 59 degrees Fahrenheit from the top tier to the bottom—as a way to acclimatize non-regional crops for highland cultivation. Even if you don’t find that fascinating, it’s hard not to appreciate the beauty of the spot, and given that this part of Peru is not so heavily visited, it’s a nice escape from the beaten path.
