  • This was one of the most memorable horse-riding trails I’ve been on. The trail first starts off like any other, going through the rainforest, local Melanesian villages and creeks. We had the low-tide that morning to our advantage, in which we went through a path of mangroves. Being on a horse and maneuvering through the maze was a rare experience. It gets better too! The best part was towards the end of the trail, whereby we made our way towards the Lope Lope beach, took our shoes off and allowed our horses to carry us deeper into the aqua-blue water. They love being in the water and so would you, it’s really refreshing. The views were just gorgeous- a picture perfect moment. Megan is the solo owner and instructor. She lead our group and was so nice and professional, you can even tell that the horses there are happy. The two hour trail is decently priced too. I would highly recommend this to anyone who goes to Espiritu Santo.

    This eclectic 100-room property attracts adventurous extroverts ready to explore the surrounding red rocks, then swap tales over morning coffee or happy hour wine. Inside, decor honors the area’s Native American heritage, incorporating elements like grass-woven baskets, headboards crafted from local fallen trees, and desert flower hues against soothing neutrals. Pet-friendly rooms also feature luxurious touches like Italian linens, modern art, and Atelier Bloem toiletries, while suites up the ante with floor-to-ceiling windows overlooking the desert.

    Outdoors, guests can gather around the heated pool and hot tub or several crackling fire pits and admire views of Sedona’s iconic Snoopy Rock. There’s also an award-winning spa for when you need respite from all the hiking, plus a signature restaurant, SaltRock, which serves Southwest favorites alongside creative mezcal cocktails. On Monday nights, local astronomy experts lead stargazing sessions to take in Sedona’s dark skies, and daily yoga classes are included in the resort fee. Other amenities include access to top-rated golf courses, a full-service fitness center, complimentary bikes, and a shuttle that ferries guests within a one-mile radius of the property.

    Tahiti Iti, Tahiti‘s smaller sister island that’s connected to the main island at the southeast coast, is home to one of the most famous surfing waves in the Pacific, Teahupoo. This powerful reef break most certainly should not be attempted by anyone but the best surfers—a fall means being dragged by the current across the sharp coral right below the surface. That edge of drama makes for a tense but enjoyable afternoon of observation (from the beach). The left break is best between April and October. The Billabong Pro competition is held here August.

    Inishmaan is one of the Aran Islands of the west coast of Ireland—one of the most unspoiled spots in the country—and Inis Meáin restaurant uses the good things that come from the pure earth and sea around it. The garden and greenhouse grows salads, herbs, and vegetables, while the fish is wild caught from the Atlantic, and meat is homestead reared. The restaurant has large windows overlooking the ocean and island and seats just 16 guests for a four-course dinner. The menu changes nightly, based on what’s available and in season, and each dish prepared by chef and native son Ruairí de Blacam has just two elements, a unique dining experience indeed. Open from April to the end of September.

    Over on Moorea, the Restaurant Te Honu Iti offers you a chance to eat on a deck over the water while watching rays swim around. It’s a bit more affordable than comparable Papeete restaurants, and has well-prepared food. But let’s face it, the crowd’s here for the rays, amazingly soft and velvety, who are drawn by the restaurant’s underwater lights and swim right up to the edge of the deck.

Only-on-Aruba delights include Hot Delight sauces (all-natural flavor enhancers handcrafted on the island) and coecoei liquor (a centuries-old spirit made from agave), while Dutch specialties range from cheese (Edam, Gouda) to chocolate (Verkade, Droste). If you get nothing else, try the stroopwafels, which feature a caramel, syrup-like filling sandwiched between thin-baked dough. Super Food’s café, Jack’s, offers excellent coffee and Dutch dishes throughout the day.

    Located just two miles north of Port Elizabeth, on an 18th-century sugar plantation and working sea salt farm that overlooks Spring Bay, Firefly Bequia has all the sophistication of its sister accommodations on tony Mustique. Scattered along the hillside to maximize ocean views, the four suites and one two-bedroom cottage are outfitted with king-size four-poster beds, indoor-outdoor showers, and rattan ceiling fans that recall the island’s colonial past. Though it’s a five-minute walk to the beach, you’ll spot the remnants of the plantation’s original sugar mill, a croquet lawn and swimming pool, and the hotel’s resident goats along the way. Upon your return, a cocktail in the stone bar, where green bananas hang like chandeliers, is just the thing to ease you into a star-filled night.

    This 4th-century Greek Orthodox monastery clings to a cliff face 1,200 meters above the Altındere Valley National Park. With its admired Rock Church, complete with biblical frescoes inside and out, this rock-hewn historical site is like no other in the country. Visitors should be aware that the 300-meter walk to the entrance is no easy feat: A path of gnarled undergrowth leading to steps may challenge those with limited mobility. While the monastery is closed for renovations until 2017, its exterior is still impressive.

These days, people jump off here in gliders instead, soaking up views of the Waiʻanae coast to the south, Mokuleʻia to the north—and the glorious, denim-blue Pacific stretching from here to eternity. Take a 5.4-mile round-trip hike and check out the albatross sanctuary on Kaʻena’s wild coastal acreage (free to visit). Keep an eye out for monk seals, one of the world’s most endangered species, found only in Hawaii. Watch for their silvery-gray sausage shapes as they lounge on the beach, but give them space. Always retreat if a seal awakes, vocalizes, shies away, or tries to shield a pup.

What to Do: This vacation spot, popular among locals, is often associated with two things: quokkas, the adorable and sociable marsupials that hop all over the island, and beaches that will leave you slack-jawed. Rent a home and eat out often. The island’s restaurants serve lots of rock lobster, which is plentiful in these waters thanks to sustainable fishing practices.   • Birders, hikers, and all manner of nature lovers score big with a visit to this former NASA tracking station and U.S. naval base on the northeast coast of Bermuda. Despite its name, Cooper’s Island is no longer an island, having been connected to St. David’s Island via land reclamation since the 1940s. While the U.S. military has moved on, the wildlife sanctuary is still home to the base of a radar tower that tracked shuttle movements in the early days of the Space Race. Today, the 12-acre reserve is crisscrossed with paths and fringed with pristine beaches. Of particular note is Clearwater Beach, which teems with conch and turtles. Inland, a restored lake and marshland are home to crabs and seabirds. The former radar tower makes an ideal perch for bird-watching.

    Fire Island, in the heart of South Addition, one of Anchorage’s oldest neighborhoods, handcrafts an astonishingly delicious array of baked goods, breads, sandwiches, and savory delights that keep locals lining up for more. The bakery uses as much local produce as it can squeeze into its scones and muffins, offers interesting flavor combos, and serves up a tofu banh mi that is one of the finest tofu sandwiches known to man. If you’re hanging out in Anchorage for more than a day or two, check out the class schedule. You could leave Alaska with some serious sourdough skills. Please note: Fire Island is closed Mondays and Tuesdays, as well as most of January.

    This unassuming trailer in a parking lot opposite a port in Kawaihae serves what may be the best shave ice on Hawaii Island, and possibly in the whole state. Why? First up, the syrups (divided into artificial, creamy, and fruit) really taste of what they are supposed to. This is one shave ice where you need to be careful which flavors you combine, because they don’t just bleed into each other. (Also note that the li hing mui comes with the powder, too, so get ready for that strange salty/sour/sweet hit.) More importantly, however, is the texture, which is smooth and creamy and more like compacted snow than ice. It was so different from anything we’d had before that we asked the staff whether they used a different machine than everyone else. Nope—they just make it using the technique their grandmother passed down to them.
