On the city’s east side, you’ll find one denoted by a tall windmill: Brouwerij ‘t IJ (the IJ Brewery), a small brewery and pub situated in the former Funen bathhouse, next to the De Gooyer windmill. Opened in1985 by former musician Kaspar Peterson, Brouweij ‘t Ij prides itself on a large selection of unfiltered, non-pasteurized beers and seasonal offerings. All are certified organic and made on the premises. Belly up to the bar next to the big mill and order your beer from a chilled tank. Follow the scent of hops onto the large outdoor terrace, where you can enjoy your brew with an order of peanuts, boiled eggs, abbey-made cheese, salami, ossenworst from Slagerij de Wit or Skeapsrond cheese from Dikhoeve Farm. The adjacent pub serves more substantial meals, as well as drinks and snacks. In addition to beer, Brouwerij ‘t Ij’s menu includes wine and non-alcoholic beverages. Guided tours are offered on weekends.

Dishes, meanwhile, run the gamut from traditional classics to Corlou’s “New Hanoi” creations, adding exotic twists to familiar French and Vietnamese staples.

    Stepping into the Limelight’s lobby, you’ll feel as if you’re entering a hip bar and lounge rather than the hotel’s staging zone. During après-ski, local musicians play here, entertaining a relatively young crowd of 20-, 30-, and 40-somethings who gather on sleek banquettes surrounding the central flagstone fireplace. Overhead, an assembly of rustic wood and neon lights turns the ceiling into an art installation. For more art, explore the hotel’s ground floor, where the 23 major artworks were commissioned from such artists as Ed Ruscha and Raymond Pettibon, who riffed on the theme of topography (a fitting subject, given that many of the hotel’s 99 rooms and suites feature views of 9,151-foot Bald Mountain).

    A sprawling, Euro-style breakfast buffet (the yogurt bar alone should win awards) is served in The Lounge, which doubles as the hotel’s main venue for après and dinner. Snack on pizza with the option of gluten-free crust, or follow a kale salad with bison meatballs and house-made ricotta gnudi sauced with wild mushrooms. The on-site ski and bike shop, Four Mountain Sports, lets guests get outfitted without schlepping all over town. Just don’t forget to pack a swimsuit—surrounded by pine-covered peaks, the hotel’s pool and two hot tubs are happening spots after skiing and hiking among the surrounding peaks.

The dishes served up here built this city and continue to do so every lunchtime: comforting bessara (split-pea or broad-bean soup) and harira (a Moroccan staple of chickpeas, lentils, and lamb broth); sardines doused in charmoula and deep-fried until crunchy; hard-boiled eggs dipped in cumin. Come in the evening if you crave bite-sized brochettes of tender lamb and spiced liver.

Mariachis roam among the tables, serenading patrons with a full complement of instruments. Maybe it all sounds gimmicky and touristy, but that’s not the vibe here at all, as the tables full of Mexican businessmen and businesswomen enjoying leisurely late lunches attest. Try the tacos sudados. Though the translation (“sweaty tacos”) may not sound appetizing, these delicious tacos are so-named because they are “sweated” during cooking in clay pots.
